No-Bake Avocado Crme Anglaise

(Low carb, delicious and very nutritious) Don't let this delicately delicious dessert deceive you! This dish is exceptionally well-balanced nutrition. It provides excellent high quality protein, very healthy fats in all the main ingredients, and not enough carbs to count. Unlike Crme Brullee, this quick dish does not require baking. What's not to like! Besides the general population, this is wonderful for the elderly and babies who may not chew other high quality proteins well for optimum digestion. Oh, and did we mention the incredible nutrients in the avocado? The book, Eatin' After Eden (see below) has a complete section on this very nutritious fruit so good for weight loss too. You'll want to enjoy this pudding often, breakfast, lunch, or dinner.

Ingredients (may be doubled)


1 large ripe avocado 1 c. whole, non-homogenized milk (goat milk is naturally homogenized) 1 egg, or 4 yolks 2 tsps. vanilla 3-4 tiny scoops of KAL stevia Nutmeg (opt.) 1 1/2 tsp. cocoa powder (opt.) 1/2 c. whipping cream (opt.)

Instructions for preparing


1. Cut avocado in half, remove seed, and scoop meat into a food processor or blender. Add vanilla and stevia. Pulse on and off a few times until just coarsely chopped, or cut in pieces before placing in food processor/mixer. 2. Pour milk into a small heavy saucepan. Bring to a boil over medium heat but do not allow to boil or simmer. 3. Whisk egg in a small bowl. 4. Pour egg into milk, and continue to slowly stir over medium-low heat with the whisk until the sauce thickens but not very thick. Do not allow the mixture to simmer or boil or it will curdle. 5. Add the mixture (plus cocoa powder if preferred) to the avocado in the food processor and process until completely pured. Pour into custard cups, sprinkle nutmeg on top to taste (omit if cocoa powder used). Cover and refrigerate, or enjoy immediately, topped with a dollop of whipped cream just before serving.
