Cheese cake

BASE
200g digestive biscuits
75g butter (melted)
CHEESECAKE
300g low fat soft cream cheese
200ml cream (whipping crme fraiche, fromais frais)
100g white chocolate
Other ingredient aerobubbles , oreos broken or raspberries/ soft fruit
1. Break biscuits into crumbs usually with rolling pin or something heavy in a bag.
2. Melt butter and mix with crumbs using hands
3. Grease loose -bottomed cake tin and pour base mix and press flat
4. Put cheese in bowl, (if using whipping cream, whip separately til stiff other creams are thick,) pour
into bowl - gently whisk together
5. Melt chocolate in bowl over water and then add to mix. Fold in other ingredient e.g. broken aero
bubbles or raspberries.
6. Pour mixture on base and put in fridge to set.

As low fat soft cheese tends to be difficult to help set either use flour or more chocolate.
