Ambat Batata

Ingredients

5-6 medium sized Potatoes (boiled & peeled)

Serves 4
3 tbsps Oil
1/2 tsp Mustard seeds
1 tsp Cumin seeds
6-7 Curry leaves
3 Green chillies (chopped)
3 medium sized Onions (chopped)
1/2 tsp Turmeric powder
1/2 cup Yogurt
4-5 petals Kokum
1/4 medium bunch Fresh coriander leaves (chopped)
1/4 cup Coconut (scraped)
Salt to taste
2 tsps Lemon juice

Method
Halve each potato and further cut each half into four equal sized pieces. Heat oil in a
pan. Add mustard seeds. When they begin to splutter, add cumin seeds, curry leaves
and green chillies. Add onions and sauté till golden brown in colour. Add turmeric
powder, potato cubes and stir-fry for one to two minutes. Stir in yogurt, kokum, half
the chopped fresh coriander leaves and half the scraped coconut, salt to taste and
lemon juice. Reduce heat and simmer for one to two minutes. Garnish with the
remaining chopped coriander leaves and remaining scraped coconut. Serve hot with
chapati.
