Holiday Food Safety Tips

(StatePoint) Great food is the centerpiece of any holiday celebration, and practicing safe food handling in the kitchen is an important part of holiday meal preparation. There are certain steps you can take to keep friends and family safe from food poisoning. The kitchen can be chaotic and it can be challenging to keep food safety top of mind when dealing with a whole holiday meal, from turkey to trimmings, cautions Shelley Feist, Executive Director of the non-profit Partnership for Food Safety Education. According to the U.S. Centers for Disease Control and Prevention, one in six Americans will get sick from dangerous foodborne bacteria this year. But these crucial safety tips can help you create a safe and tasty holiday celebration: Clean: Prevent the spread of bacteria by keeping a clean kitchen and washing hands. Cutting boards, dishes, utensils and counter tops should be washed with hot water and soap after preparing each food item, and before going on to the next. Keep plenty of clean cloth towels or paper towels handy for cleaning surfaces and drying hands. Enforce a strict hand washing policy for all holiday kitchen helpers. Use warm water and soap for 20 seconds before and after handling food. Rinse fresh fruits and vegetables under running tap water just before eating or preparing. Rub firm-skinned produce under running tap water or scrub with a clean vegetable brush while rinsing with running tap water. Separate: Cross-contamination is how bacteria spread. Keep raw meat, poultry, seafood and eggs and their juices away from ready-to-eat foods, like salad ingredients. Using separate cutting boards is one way to reduce opportunities for cross-contamination. Cook: Temperature matters! Bacteria can survive if foods arent cooked to a safe internal temperature. Even an experienced cook can`t tell if food is cooked safely by how it looks, so use a food thermometer to ensure youre cooking turkeys, ham, egg dishes and other foods to a safe internal temperature. Download a temperature chart at www.holidayfoodsafety.org. Chill: The holiday celebration is great -- and even better if you have delicious leftovers. Just remember to enjoy them within four days. Bacteria spread fastest at temperatures between 40 and 140 degrees Fahrenheit, so chill food promptly -- within two hours -at a refrigerator temperature of 40 degrees or below. Appliance thermometers are inexpensive and can help you monitor your refrigerators temperature. Bring on the Bird: Learning how to cook a turkey safely may be one of the biggest holiday meal challenges. Never thaw your turkey on the counter. Turkeys are best thawed in the fridge. So allot plenty of real estate to your turkey before your celebration. If youre going to stuff your turkey, stuff safely. Cook stuffing to a minimum temperature of 165 degrees, whether inside or outside of the bird. Visit www.Holidayfoodsafety.org, for a complete guide to the safe handling, preparation, serving, and leftover storage of your holiday turkey. Youll also find guidelines on turkey size, how to thaw a turkey and cooking times. By taking precautions to prepare food safely, you can ensure that bacteria wont be guests at your holiday celebration.

A Sweet Christmas Tradition: Building Gingerbread Houses

By Melissa Frasier (aka The Busy Mom)
One of my own familys favorite Christmas traditions has been the building and decorating of gingerbread houses. We started this tradition when my oldest son was about ve years old and have been making one every year since. The best part of the gingerbread house is the nished product, a cheery and whimsical house that looks great on the mantel. So where do you start? There are some basic choices you must make before getting started. Depending on the age of your children, you may decide to make it an easy year and buy a prepackaged kit at your local store. This is a great option for when your children are small and your main goal is to just throw something together. The kit comes with the gingerbread pre-made; icing packets prepped and even some candies inside. It really is like building a house, erecting the walls rst and raising the roof. We have used this option when our baby was small, and I didnt have much energy to devote to baking! Another quick and easy choice is to use graham crackers instead of actual gingerbread. We have tried this option also, and it can be a little bit tricky. The graham crackers are sometimes brittle and may crack when you are trying to build with them. But it does work, and once you seal it up with the frosting, it holds quite nicely. There are many sites on the web that show how to build using graham crackers; you just need to Google it. I am still trying to decide if I am going to use this option this year or actually make the gingerbread! Interestingly enough, making gingerbread houses became popular in Germany after the Grimm fairytale of Hansel and Gretel in the 19th century. In Germany, some villages would reconstruct themselves out of gingerbread by having each person who lived there bring a replica of their home. Around New Years Day, they would celebrate the new year by eating the gingerbread homes. German settlers brought this tradition with them to America. According to the Guinness Book of World Records, the record holder for the largest gingerbread house is held by Roger Pelcher in Bloomington, Minnesota. Back in 2006, he constructed the largest gingerbread house in the Mall of America in Minnesota. It measured 67 feet tall, was 1,496 square feet and took nine days to build. That is bigger than most homes that the average family lives in. He used 14,250 pounds of gingerbread, 4,750 pounds of icing, 1,800 Hersheys chocolate bars, and 100 pounds of Tootsie Rolls. Since you will be making your gingerbread house on a much smaller scale, let the kids pick out the fun embellishments. Check out your cupboards rst and see if you have any stale food items that you could use for decorating. Some good choices include old cereal (fruit loops, shredded wheat), stale marshmallows, pretzel sticks or old cookies. Once you take inventory at home, head out to the local dollar store and see what you can come up with. Some great looking items for your house include gum drops, M&Ms, dots, Red Hots, and of course candy canes. Get creative, which is half the fun. The other half is eating the candy while you are decorating! Whatever you decide, you can keep your costs down on your creation, and still provide and fun holiday experience for your children. For my family, building gingerbread houses has become a sweet, Christmas tradition that brings fun to our holiday season every year. Maybe it will do the same for your family.
