FUNERAL POTATOES

Ingredients: 7-8 potatoes, parboiled and grated or 10 -12 c frozen, grated potatoes 1 pint carton sour cream 1 cans cream of chicken soup 1 cube butter or margarine 2 c grated sharp cheese 3 sliced green onions or 1 med diced onion Topping: 1 c crushed corn flakes 2 T butter Directions: Melt cube of butter and mix with soup, sour cream and grated cheese. Add onions and potatoes. Put into greased 9X13 in. baking dish. Bake at 350 degrees for 45 min. Top with crushed corn flakes mixed with 2 T melted butter for the last 15 minutes. Number Of Servings: 12-14

1 Large bag of frozen shredded hash brown potatoes (not already browned, raw) 2 cans of cream of chicken soup 1 pint of sour cream 1 small bunch of green onions (just the green part cut really fine, I just use scissors!) GOBS of grated cheese, I use cheddar/jack combination but any is fine. (what is a GOB? Oh about 2 large handfuls, but more is good too.) Mix all ingredients in a large bowl, plop in a 9x13 pan and cook at 350 degrees for about hour.

Recipe For Yummy Cheese Potatoes * 10 medium potatoes * 1/2 cup melted butter * 1 can cream of chicken soup * 1/2 cup chicken broth

* 1 - 1/2 pint sour cream * 1 tsp. salt * 1/2 tsp. pepper * 1/3 cup chopped green onions * 2 - 3 cups shredded sharp cheddar cheese (reserve 1/2 cup cheese) 1. Cook potatoes until tender; cool to touch and then peel by hand. You may grate or chop potatoes in small bite size pieces, your preference. Place in large bowl, and set aside. (I also place a bay leave and one T salt in water when boiling potatoes.) 2. Combine in very large mixing bowl; cream of chicken soup, melted butter and stir well. 3. Stir in sour cream, chopped green onions, salt, pepper, basil - and continue to mix by hand until well blended. 4. Fold in cooked and prepared grated or chopped potatoes... when well cooled. 5. Fold in 2 - 2-1/2 cups grated sharp cheese. Mix all ingredients very well... yet gently. 6. Transfer Yummy Cheese Potatoes into a deep 13X9 casserole dish. Cover tightly with aluminum foil and bake @ 350 degrees for one hour and fifteen minutes. 7. Remove foil, add 1/2 cup grated sharp cheddar cheese over top of Yummy Cheese Potatoes and bake for another 15 minutes.

Use a mixer to beat together a big tub of sour cream, two cans of cream of mushroom soup, and a brick of cream cheese. Stir in several big hand-fulls of grated cheddar cheese and two bags of OBrian Diced (not shreddedtoo mushy) Hashbrowns. Dump into a large cake pan. Sprinkle some more cheese then a bunch of crushed Corn Flakes for the top. (Special K will work in a pinch, its a proven fact.) Bake at 350 until it starts to smell really good and the middle is hot.
