What is wine sediment?


Sediment in wine is usually an indication of an old-vintage. But this bitter tasting but harmless residue is the byproduct of the winemaking process and can also be present even in recent vintages that have undergone little or no filtration. As red wine ages in a bottle sediment is created over time by the breakdown of pigments and tannin within the wine. Small amounts of these phenolic compounds gradually settle at the bottom of the bottle. These phenolic compounds are antioxidants, suggested by some medical research to be the reason for wines various health benefits. It is important to know that sediment is not an indication of a fault in the wine and will not be harmful if consumed. Its even possible for white wine to leave bottle sediment in the form of crystal particles. This sometimes happens if the white wine is exposed to extremely cold conditions. These are tartrate crystals, sometimes found attached to the bottom of corks. To prevent this from occurring in wine destined for long distance shipping and distribution and the inevitable cold environments, a wine processing step called Cold Stabilization is taken that removes these tartrates in advance of filling the bottles, applying the cork closures and shipping out for distribution. For the consumer, the process of decanting a wine will clear the wine of sediment when it is carefully poured into a separate vessel known commonly as a decanter. When preparing to decant an older wine that contains sediment, allow the bottle to stand undisturbed in advance for about 24 hours, if possible, to allow microscopic solids to settle at the bottom of the bottle. Be mindful not to shake or vibrate the bottle before uncorking it. This will stir up the sediment and make decanting more difficult. Then slowly pour the wine into a clean decanter vessel and closely observe the wine passing through the neck of the bottle. As soon as the wine inside the neck shows sediment, stop pouring. Some restaurant wine stewards will place a lit candle under the neck or hold a flashlight against it to make it easier to see the wine the instant it changes clarity. You should end up with a few ounces of wine still in the bottle. The unique shape of a decanter wide glass bottom with a skinny neck--exposes a large surface area of wine to air and starts the release of its fragrant aromas instantly. Let it stand for at least 10 minutes before pouring into glasses.

Santa Ynez Valley Historical Museum Hosts 29th Annual Vaquero Show & Sale Celebration from November 8-10
The public is invited to attend the 29th Annual Vaquero Show and Sale Celebration from Friday, November 8 through Sunday, November 10, honoring the lifestyle, culture and renowned horsemanship of the California Vaquero (cowboy). All proceeds from the Vaquero Show benefit the non-profit Santa Ynez Valley Historical Museum in its mission to collect, preserve and share the rich history of the Santa Ynez Valley. The Vaquero Show is a popular event for visitors and residents, sponsored, in part, by the Santa Ynez Valley Hotel Association (www.VisitTheSantaYnezValley), museum members and area business supporters. Each year a person who exemplifies the Vaquero lifestyle or is actively involved in the preservation of Vaquero heritage is selected as the Honored Vaquero. Ray Ordway of Madera, California, is the 2013 Honored Vaquero. Often called Dean of Vaqueros, Ordway was born in 1924 into California vaquero culture, following in the hoof prints made by his father Ira, uncles and older brothers Kent and Oliver, who all worked long, hard days moving and handling cattle, branding, colt starting and absorbing lessons from old-time masters. Throughout his life, Ray handled cattle and spent time starting horses in the California bridle horse tradition. In recent years, Ray continued to participate in brandings atop his Morgan gelding using a riata. However in 2012, at the age of 88, he felt it best to retire from the saddle. Ordway remarked, Im glad to lend my help and to support the vaquero way where ever I can; its so important to keep the traditions alive and pass them along to younger generations, learning a sense of respect for the horse, livestock and for people. Its all part of true vaquero culture. Known for their legendary equestrian skills, vaqueros developed their unique style of horsemanship while tending the immense mission herds for eighty years before the Texas cowboy appeared on the national scene. Influenced by the Spaniards, Indians, Mexicans, and early Americans, these hard riding pioneer cow hands developed their own unique vaquero culture into a fine art during Californias Mission and Rancho eras. Still today, the vaquero influence can be seen in the techniques used by the cattle industry in California. The vaquero was known for his distinctive apparel, tack, saddles and other riding equipment, which were as unique as his horsemanship skill. The iconic picture of a vaquero includes his low-crowned, wide-brimmed hat held in place by a barbiquejo (chin strap) that extended just below the lower lip. He wore an ample, Colonial shirt with a wide red Spanish sash, button-up short pants and a pair of rough buckskin shoes fitted with a large pair of spurs. It is this vaquero horsemanship, gear, and lifestyle that have remained a part of California heritage and continue to be preserved and celebrated every November at the Vaquero Show.

Microclimates: How Location Impacts, Well, Everything!


Terroir. Its one of those words you hear used all the time, but no one ever really stops to define their usage, and more than sometimes, its used to cover up ignorance via pretense, which drives me nuts. Terroir is easy enough to define: every decision we make about location, varietal, trellising choices, amount of irrigation, when and how we pick, when and how we ferment you get the idea, I hope; thats all terroir. Its simply the total environment and the decisions about that environment, from planting to grapegrowing through to picking and winemaking. And, it all starts with where you decide to grow your wines. What makes a wine valley anyway, right? While its true you can grow grapes just about anywhere you can get water and soil together, that doesnt mean youll end up with wine-quality grapes. Napa was recognized quite early on in its settlement for what makes it so special. Yes, there is good heat from its north-south orientation, but it is also a narrow valley to channel air flow, and it is close to the bay, which is what allows for the forty- and fifty-degree diurnal temperature swings that produce sun-soaked, fruit-laden red wines with retained acidity, produced through cool nights. Equally, consider Carneros and its sand and clay slopes so close to the bay. Cold climate grapes like Chardonnay and Pinot Noir produce scintillating wines precisely because of the locale, needing more cold to show their best. So, that naturally raises questions about location: which is better, you want to know, valley floor, benchland, ocean-exposed or hillsides, right? The answers depend on what you are trying to grow, where you want to do so, and how expensive your end product needs to be for it to sell and pay the bills. Access or best grapes is often a real question addessed by trade-offs in the growers mind. While being on level ground, closer to transport corridors, and with a bountiful supply of grapes sounds ideal; level ground often means drainage issues and the potential to overcrop, car exhaust ends up on grape skins and thus impacts wine flavor, and grape quality varies quite a bit by location and varietal most of the Valley is planted to hardier red grapes for a reason. Even there, though, there are exceptions as To Kalon, perhaps the greatest and most reknowned of American vineyards, breaks most of these rules in terms of location and drainage, accessibility and crop loads. Ultimately, the issue of micro-climate isnt just one of ocean exposure, bay fogs or evening breezes. Its part of a complex dance in the winegrowers mind, balancing creative desire, agricultural possibilities and economic reality. The next time you stop in at a tasting room, ask more Why questions and youll gain more insight into the philosophy behind whats in the glass. Absolutely, that sensory experience is the whole point of everything we do, but how we get there is often many opaque years in the making unless folks go digging beyond the standard taste descriptors. Trust me, you will appreciate what is in your glass even more so enjoy!

Heading to the Tasting Room

Do not be intimidated for any reason. That is rule number one (and there are very few real rules after that). For the most part, going wine tasting is about the easiest thing in the world, especially here in California where wineries and tasting rooms abound. You can find wineries specializing in red wines of all types, those that are famous for their white wines and others who pour sparkling wine. It is a matter of doing a little research and planning your day. Most tasting rooms open around 10 a.m. and close between 4:30 and 6 p.m. Before you start off pack a few essentials: Water (plenty of water) and something to snack on crackers or a baguette. Many wineries have picnic areas and there are plenty of delis and bakeries that can make up a lunch for you, or make your own. Which brings us to eating and drinking, the kind that doesnt directly involve wine. Be sure to nibble during the day and make sure you make time for lunch. Two tips: drink at least twice as much water as you do wine, and remember that you dont have to drink everything poured into your glass. There is a reason tasting bars have dump buckets and a pitcher of water to wash out your glass. That said, here are some tips that have proven to be helpful and are designed to help make the sensory adventure of wine tasting all the more enjoyable. Dont be afraid to ask questions. Time and time again I have heard knowledgeable winery workers say that there is no such thing as a stupid question, and they mean that. You can drink what you want, in the order you want. If you only like reds, say so; if you dont like sweet wines, speak up. But the idea of starting with whites, then going on to reds and then sweet wines is a good guide. Zinfandel is red. I am sure you know that but it never hurts to remind everyone. If there is a particular wine you want to try and it is not on the list, ask. There might be a bottle around that was opened for a trade tasting or by the winemaker. Most tasting rooms are happy to pour a little if you show enthusiasm. If you plan to take wine home with you, either in the car or on a plane, buy a cardboard box with Styrofoam wine inserts. Fill it during the day and this keeps wine from rolling around in the trunk. Check out the smaller wineries. It is a revelation. Take notes on the wines you most enjoyed. Take advantage of tours when the winery offers them, but keep in mind that they take anywhere from 20 minutes to well over an hour, so one a day is plenty. Buy wines that you can only find at the winery. These often

include smaller (375 ml) bottles of limited production Ports or dessert wines. Dont buy a wine you can get at a supermarket back home. Youll pay more, and besides, whats the point? Look for tasting rooms in towns. Many of these are cooperative tasting rooms, where in one place you might find wines from a dozen or more small-to-medium premium producers. They are scattered throughout the area and more are opening all the time. Dont give too much thought to ratings and vintages. Its like art: if you like it, its a good wine. It is as simple as that. Remember that you dont have to do the driving. It takes no more than a phone call to rent anything from a Town Car or restored classic convertible to stretch limos and a 20-passenger bus. All have drivers that will stow your wine for you and the local companies know the area. As to taking that wine home, ten people sharing one of those impossibly long limousines is fine and fun, but if you all plan to buy a couple of cases the trunk which is no bigger than a normal luxury cars is going to fill up fast and youre going to find yourself filling the interior floor with boxes and using cases of Cabernet as footrest. Tell the transportation company what you have in mind and listen to their advice. They know the territory and the people and personalities. Know your limits. If you get close to it let others taste and you can listen. It beats ending the day in a blur, and if need be calling a taxi is cheaper than the alternative. And if at a seated tasting, dont be afraid to leave a gratuity. Its more than worth the five or ten dollars to get wisdom and wine and a great time.

The name Opolo is the name of a ros-style wine found on the Dalmatian Coast on the Eastern side on the Adriatic Sea. That might seem a far cry from Paso Robles, but it is in fact homage to co-owner Rick Quinns Serbian heritage. Opolo came to fruition as a result of a chance meeting between Rick Quinn and David Nichols while the two were living in Camarillo. I stopped and talked to Rick and he told me that he had just bought 70 acres in Paso Robles and that he intended to plant grapes and sell the fruit to local wineries, Nichols says. A friendship was begun that eventually led to the formation of Opolo Vineyards which in 2001. Originally the plan was only to grow and sell the grapes, with a little left over for them to make their own wines on the side. But after several years of too many grapes and not enough buyers, the two decided to open a winery. An old tractor shed was converted into a winery and these days the very unpretentious tasting room has become a constant place of celebrating the good life. Just in time for the fall are some newly released great wines. We just released our Reserve Rhapsody which is a Cabernet Franc, Merlot, Cabernet Sauvignon and Petit Verdot with soft tannins and a bountiful bouquet of fruit, complemented by aging in both French and American oak barrels, says Chance Hochschild, Opolo Vineyards Wine Club Manager. Also just in time is the release of their 2012 Mountain Zinfandel. This is our most popular wine, Chance admits. If you are one of those that believe bigger is better this pomegranate, fig, cranberry and raspberry Zinfandel is just for you Were also selling holiday gift boxes (3 bottles of wine per box) that are a great gift for the holidays, says Chance. Opolo follows a simple formula for success - make wine that people love and make the experience fun. Some of their wines include Tempranillo, Sangiovese, Roussanne, Viognier and more with bottle prices ranging from $12 to $47 with the majority of wines in the $20 range. The tasting room offers cheese and cured meats, so even if youre unprepared for a formal picnic, you can still have a bite to eat. Every Saturday and Sunday they offer gourmet pizzas from their wood burning oven and Opolo's signature Cevapcici (grilled meat) sandwich out on the patio. Though Opolo doesnt host many events, their annual harvest party is one of the biggest and most attended events in all of Paso, and they fly out a group of singers and dancers every year from Pittsburgh just to make some magic happen. Its not one thing, but rather a mixture of everything that makes our harvest festival contagious, Chance says. Every year we taxi people to the partys location and each person is greeted with a glass of wine and three miniature swimming pools filled with grapes. As the band plays and wine flows it doesnt take long for everyone to start stomping grapes with their bare feet. Soon the sun sets over the western hills and the party moves inside. What follows is unlimited food, award winning wines and dancing until the night is over. Opolo is all about, food, family, fine and wine. So stop by and immerse yourself in the Opolo way of life. Avant Tapas & Wine has it all unforgettable food, a wall of wine, live music, and even their own words to describe what visitors can experience upon their arrival: Avantastic and Avantrageous. Beginning November 1st, visitors can add blending their own wine to their list of must-experience at Avant. The new blending bar gives visitors the opportunity to create their own Pinot Noir using four carafes filled with four different Santa Barbara County Pinot Noirs. After creating the perfect blend, they can then create their own label as well, and take their bottle home. Visitors can also enjoy one of the many great wines available from twenty-four wineries, many of whom make their wine at the Terravant Wine Companys custom crush facility, which can be viewed from a large window at one end of the restaurant. Avant is also introducing several new menu items, which include a new rib eye steak, an open-face steak sandwich, and delicious shrimp pasta. These menu items and more can be enjoyed throughout the week during lunch and dinner, in addition to a special happy hour menu from 3:00-5:00 pm, and a $10 Winesday Special every Wednesday night after 5:00 pm. If you are interested in learning more about wine, make sure to sign up for one of Papa Joes Wine Classes, which take place the first Wednesday of every month. For only $30, participants have the opportunity to explore wine regions throughout the world with Avant Proprietor, Joe Padilla, who pairs his knowledge with wine

With the 2013 grapes crushed, fermented, pressed and barreled down for the winter, the team at Robert Hall Winery is ready to celebrate. The end of harvest is in itself a reason to celebrate. According to winemaker, Don Brady, The 2013 harvest began early with the Sauvignon Blanc grapes in mid-August. From that point forward, the fruit kept coming in with an optimum level of ripeness, wonderful color and outstanding flavor. Based on the quality of the grapes, he is predicting that the 2013 vintage will be a great one for Paso Robles. Robert Hall Winery uses 100% Paso Robles grown fruit to deliver the Essence of Paso Robles in each bottle produced. The majority of the grapes are sourced from Robert Halls 300 acres of estate vineyards, planted with twenty-one different grape varietals. Additional fruit to round out the vintage is secured through long term contracts with premium local growers. With a dedication to the environment, all of the estate vineyards have been certified Sustainable In Practice (SIP Certified). Given the wide range of grape varietals that thrive in the Paso Robles vineyards, Robert Hall Winerys offering includes something for every palate. On the light and refreshing side, wine lovers can enjoy Grenache Blanc, Sauvignon Blanc, Viognier and Chardonnay. For those preferring something red in their glass, the winery offers Merlot, Cabernet Sauvignon, Syrah, Zinfandel, a Rhone-style blend known as Cuve de Robles and the signature Meritage, Bordeaux-style blend. Ending on a sweet note, the Robert Hall family of wine includes an Orange Muscat and Vintage Port made from five Portuguese varietals. Paso Robles Inn dining has unique attractions that are designed to provide something for everyone. You can enjoy a meal in the steakhouse, eat a Sunday brunch on the patio and then take a wine tasting and cultural tour of the downtown area, or participate in a Haunted Hotel dinner party. Whichever option you choose, you are sure to have a unique and pleasurable experience. For more than 50 years, the Paso Robles Inn Steakhouse has been a favorite meeting place for guests and locals alike. The items served in the steakhouse reflect the culinary influences of the Paso Robles area. The restaurant serves Certified Angus Beef Steak, features produce from local farms, and offers diners a selection of wines from local wineries. Some of the local products found in the steakhouse include Vivant cheeses, Jardine Ranch almonds and Olea olive oil. Steakhouse visitors can choose to sit in the indoor dining area or eat on the patio next to the newly-installed fireplace and fire pit tables. Another way to enjoy the dining pleasures Paso Robles Inn has to offer is through a Sunday brunch and walking tour. those interested in the paranormal. Tour guests dine in the Paso Inn Steakhouse, and then take a tour of the hotel grounds, stopping at areas said to be haunted. A tour guide takes them through the locations transformation from a busy stagecoach stop in 1864 to the Inns current incarnation. Perfect Pairs
The holidays are right around the corner and this chvre dip pairing will definitely keep your party going. I always have at least one dip with a fresh baked loaf of bread for guests to nosh on throughout the evening and this wine is so versatile that it not only complements this dip but can also endure the cheese or fish course at any gathering. Buttonwood Farm Winery and Vineyard co-owner, Seyburn Zorthian, created this beautiful chvre dip out of necessity. She needed something delicious that would feed lots of people. Seyburn loves the tanginess of fresh goat cheese and wanted to create something that featured Buttonwoods herbs. Seyburn knew that the Greek Oregano that grows prolifically in their on-site herb garden would blend beautifully with the chvre and voila, this dip was created! Of the three Buttonwood Sauvignon Blanc wines, Zingy is the perfect partner. Zingy is intended and designed to showcase the pure essence of Sauvignon Blanc at Buttonwood Farm. This 2012 release is a beautiful wine, with aromatics leaping from the glass and a pale, steely color. A veritable bouquet of tuberose is joined by heady tropical fruit aromas. A sip reminds of why this wine is named Zingy, as notes of grapefruit and just-ripe pineapple meld with citrusy mandarin orange. Yet, for all its zingyness, the wine struts an opulence that envelopes the taste buds with honeydew melon, guava and a lingering minerality. The crisp Zingy is the perfect complement to the tangy chvre. Chvre is not for everyone, but this wine definitely is! Arriving at any party with a bottle of Zingy and this dip recipe attached would make the ideal hostess gift.

DIRECTIONS Reserve a few oregano leaves. Blend the rest of the oregano, 1 chopped clove of garlic, the chevre, lemon juice and 1/2 cup of olive oil in a food processor until ground and integrated. Taste, blend in the rest of the olive oil and more garlic if desired. Spread the mixture out on a plate and garnish with the sprinkling of fresh oregano leaves. Depending on the amount of olive oil used in the spread, a little extra drizzled on top is a pretty addition.

Christian Roguenant was born in Burgundy growing up among the vineyards. He studied enology and winemaking at the University of Dijon and went on to make wine on five continents. So it seemed unlikely that he would make a name for himself on the California Central Coast, but thats exactly what he did. When the Niven family, owners of Baileyana Winery in San Luis Obispo, built their new winery Roguenant had a blank slate. He could ferment red wines in the classic Burgundian method of small open-top fermenters, keep each lot separate by clone, vineyard block and yeast trial. He has three individually climate-controlled barrel cellars for completing fermentation and for aging. But it still begs the question, why is a Frenchman making wine here? The weather is more consistent on the Central Coast than in Burgundy, explains Roguenant. This favorable weather pattern facilitates the creation of a house style for each wine. We dont have the opportunity in San Luis Obispo to make wines from 60 to 90 year-old-vines like in Burgundy, but we are fine-tuning grape growing for each specific varietal as well as slowly identifying better and better sites for Pinot Noir and Chardonnay. But Roguenant makes much more than Pinot Noir and Chardonnay. There is Pinot Gris, Albario, Grner Veltliner, Riesling and Syrah. Additionally Roguenant would like to make world-class dessert wines. This summer we bottled two different styles from the great 2012 harvest; the Sauternes style late harvest wine made from Sauvignon Blanc with botrytized berries should be very special. All this has resulted in Roguenant receiving many gold medals at wine competitions. But beyond the hardware there is something more enduring. After 27 years of winemaking in San Luis Obispo, I have helped many co-workers who eventually became winemakers themselves and are now in charge of very successful wineries. It reinforces a great friendship and is truly rewarding to feel that you have helped someone to realize their wine aspirations. Does Roguenant see the Central Coast becoming a truly viable world-class wine destination? It already is. ROTTA Winery is a pleasing mixture of the old and the new. As one of the first wineries established in the Paso Robles area, it has a long history, but its wines combine a celebration of tradition and innovation. In ROTTAs tasting room, youll find a 2012 Zinfandel Ros, alongside the SIOT, a wine produced in honor of Adolf Siot, the winerys original owner. The winery and vineyard was founded in 1856 by Siot. But it got its name from the next owners. In 1908, Siot sold the property to Joe Rotta, who then sold it to his brother Clement Rotta. Clement made a name for the ROTTA label with Zinfandels, and the family tradition of winemaking didnt end there. One of Rottas grandsons, Mike Giubbini, has revived the ROTTA label, focusing on the production of Zinfandels. At this time, ROTTAs vineyard has 15 acres dedicated to Zinfadels and five to Cabernet Sauvignon. Even the tasting room itself reflects a melding of the old and the new. In 2008, a new tasting room was made from the wood of the old one. The wood from the original winery, and the 7,000 gallon barrel that was used as the entrance to the old tasting room, were used to construct Rottas new facility. However, not all the elements were refashioned. You can still ring Mama Rottas bell, displayed prominently in the tasting room. A visit to ROTTAs tasting room is meant to be a pleasant and comfortable experience. Visitors to the tasting room frequently mention the knowledgeable and friendly service they receive. When you are visiting ROTTA, you can choose to settle in to the cozy indoor area, or relax outside on the patio.

Its perhaps ironic that Paso Robles is being hailed as the next Napa by major wine writers, since Cellar 360 has offerings from both of these wine regions at their gorgeous Paso Robles facility. But such is the comprehensiveness of the concept of Cellar 360 that many great wine regions are represented in one place. Think of it as one-sip shopping. This is perhaps the most unusual tasting room in the region, a blend of local, California and international wines all housed under one roof. Cellar 360 operates several different tasting rooms throughout California, but none really match this 500-acre estate. It is a beautiful property up on the hilltop where its serene. Its a great place to picnic by the old oak trees, to bring a first date, or even have a proposal, says Meredith Hayes of Cellar 360. There are a lot of beautiful tasting rooms in Paso Robles, but none that are this secluded. You wouldnt know that from the highway, but once you turn up the lengthy driveway you begin to realize this wont be the same old, same old. The driveway is flanked by grapevines guiding you to a small hill where the tasting room and patio sits, tucked behind 200-year-old blue oak trees, crape myrtle, Manzanita, lemon verbena, French lavender and autumn sage. Its almost like a small botanical garden. But this is part of the allure of Cellar 360; the natural stone building, the plethora of plants and flowers, the quietness of the estate and the thorough presentation of the wines. We say Cellar 360 is where Paso meets Napa, to help explain to people that we have great Paso wines but we also have some great Napa wines and its the ideal place to discover two great wine regions, Hayes admits. To that end there are four different and unique tasting menus, an allencompassing approach for every level of wine lover, from newbie to hard core collector. With tasting fees at a mere $5 its impossible to go wrong. The Fresh and Flirty menu is just that fruit-centered wines on the sweet side from peach bellini to sangria. This is an ideal tasting menu for people who are new to wine, or just starting out on their wine journey, says Hayes. Indeed it is an uncomplicated introduction to the wine world. Most wines in this tasting retail for just $10 per bottle. The Best of Paso Robles is for those who just want to focus exclusively on Paso Robles wines and all these wines are made onsite including world renown golfer Greg Normans Syrah and Beringer Founders Estate wines. Bright and Bubbly is, as the name suggests, sparkling wines which included an Australian Greg Norman sparking wine and California sparkling wine. And since there are only four tasting rooms in Paso pouring bubbles currently, Cellar 360 provides a greater breadth of bubbles. The Reserve Menu ($15) will change due to availability of these highly sought after reserve wines from Sonoma and Napa. You can also include a cheese pairing for any of these flights for just $10 extra though you need to call ahead. We are the ones who actually pioneered cheese pairings many years ago, Hayes says. There are also private tastings for a group, or even just two of you for a more customized experience at a mere $15. Family carries a lot of meaning to Tackitt Family Vineyards. When Leon Tackitt inherited his grandfathers San Miguel vineyard of 29 Gewrztraminer vines in 1998, he saw promise and got right to work. More than a brand, it is truly a family operation, and their guests are important to them. Leon or Cindy or myself are who you will find in the tasting room, says Sean Walter, who serves as Tasting Room Manager and Assistant Winemaker. Were friendly, knowledgeable and love what we do. We treat people with respect and theres no arrogance in this place. Visitors to the tasting room should pay special attention to their flagship, the 2012 Gewrztraminer, the award winning 2010 Swiss Collina Zinfandel and the 2012 Grenache Ros, aged for at least two years. Tackitts white wines are aged at least six to eight months. Our Zinfandel is an old vine Zin of head-trained grapes planted in the 80s. Its low-production and highly-flavored through two to three fruit pickings, says Sean. Our Port is rich and complex. Its made in the Solera-style and aged ten years in the barrel, utilizing heavy toast American oak. The kitchen table of this family operation is the barrel room, where laughter and stories are shared along with the wine. By years end or early 2014, construction of a new 800-square-foot tasting room should also be complete. Imprinted into the floor is a very special insignia, an Explosive Ordnance Disposal Badge. Issued by all branches of the US Armed Services the crab symbolizes those military members who are specially trained explosive ordnance disposal (EOD) technicians at the Master level. Prior to winemaking, Leon served nearly three decades in the US Navy, specializing in Explosive Ordnance Disposal. Tackitt produces two labels: EOD Cellars and Tackitt Family Vineyards. Net proceeds of all EOD Cellars wines directly benefit the EOD Warrior Foundation. Most of the wine grapes are grown on the property (75 percent), including Cabernet Sauvignon, Merlot, Petite Verdot, Syrah and Zinfandel grapes, says Sean. Tempranillo and Grenache grapes are sourced across the street and within a five-toten-mile radius. Wine tastes are complimentary and visitors have an opportunity to chat directly with the winemakers. Perfect Pairs
Everyone needs that one decadent chocolate dessert for the upcoming holiday season and Vina Robles Winery Chef Thomas Drahos has created a delicious after dinner treat! Now, if the thought of making a ganache overwhelms you, have no fear as this recipe is easy to follow and put together and also saves precious time as it can be made in advance. I made it in a Chef Thomas Drahos terrine as suggested since I was taking it to a dinner party. To add to the presentation, I tinted some marzipan in fall colors and rolled out leaves and acorns to adorn the top so that it was perfectly presented after dinner. This dish is the ideal complement to the full-bodied Vina Robles 2009 Syre. The deep ruby color opened up aromas of ripe dark fruit with notes of anise and mocha. While the ganache is silky, smooth and rich, the textured tannins broke through and rounded out every bite. The possibilities are endless with this wine because it is hearty enough to pair with dinner as well as a delicate dessert. Syre is derived from Syrah and cuve (blend). The grapes for their Syre are selected from two highly regarded vineyards; Syrah from Ryan Road and Petite Sirah from Creston Valley, both in southeastern Paso Robles. Located at an elevation of 1,500 feet, Ryan Road features calcareous soils, while Creston Valley Vineyard is a well exposed hillside with warm growing conditions, sandy soil and small amounts of limestone. Chocolate Ganache with Salted Caramel Sauce

Ingredients - Terrine Canola oil 12 oz. Dark chocolate (70%) 1 cup Butter, unsalted 4 Eggs, large, separated 8 Egg yolks, large 1 cup Confectioners sugar, sifted 1/3 cup Cocoa powder, unsweetened 1/2 cup Heavy cream 2 tsp Granulated sugar

Ingredients - Salted Caramel Sauce 2 cups Sugar 1 cup Water 1 tbsp Salt 1/2 cup Heavy whipping cream

Directions - Terrine 1. Lightly oil a six cup terrine mold or loaf pan. Line mold with plastic wrap. 2. Melt chocolate and butter in a double boiler over barely simmering water, stirring occasionally. Remove from heat and cool slightly. 3. Add egg yolks to cooled chocolate mixture, stirring to combine. Sift together confectioners sugar and cocoa and stir into the chocolate mixture. 4. Beat cream in bowl of electric mixer until soft peaks form. Transfer to another bowl and refrigerate until use. 5. Beat egg whites with sugar in clean bowl of electric mixer until soft peaks form. Fold into chocolate mixture, then fold in whipped cream. 6. Pour into terrine mold and cover with plastic wrap. Refrigerate for 12 hours (terrine may be prepared up to three days in advance). Directions - Salted Caramel Sauce 1. Combine sugar and water in a small sauce pot and bring to a boil over high heat. Cook until all water has evaporated and caramel color is achieved. 2. Working quickly, add cream while whisking the mixture. Once the cream is completely incorporated, add salt and bring back to a boil. 3. Remove from heat and cool down (do not refrigerate!). Use when ready to serve. 4. Serve terrine with sauce and garnish with chopped almonds.

Liquid Farm, Producers of Old World-Style Santa Barbara County Chardonnays and Ros, Move into Newly-Established Buellton
Nikki and Jeff Nelson, owners of Liquid Farm, the small production wine project focused on Sta. Rita Hills Chardonnay and Happy Canyon AVA Ros, plowed through this years wine harvest in a boutique winery space within the newly-established, local co-op facility, the Buellton Wine Center, with the help of friend and winemaker, James Sparks. Located just half of a mile north of Firestone Walker Brewing Company and Taproom Restaurant, Liquid Farm joined seven other Santa Barbara County wine producers in the Coop, including Bonaccorsi Wine Company, Larner Winery, Casa Dumetz Wines and Municipal Winemakers. Michael Larner, the visionary behind the new Coop, transformed two adjacent industrial buildings into private, individually walled-off wine production spaces outfitted with communal harvest equipment and resources, and cooperative common areas. Since we moved in on September 1st and our first pick was September 4th, the wine has been our sole focus. As this fast and furious harvest has calmed down, were looking forward to putting some finishing touches on the new spaceputting our personalities into it and making it a place Liquid Farm can call home, says Nikki Nelson, one half of Liquid Farms proprietor team. Liquid Farm was previously sharing winery production space and needs with Dragonette Cellars, who had been heading up Liquid Farms winemaking operations. Dragonette Cellars continued to consult on Liquid Farms wines during the 2013 harvest, in addition to the Nelsons and James Sparks efforts. Liquid Farm started life as four 2009 barrels of Chardonnay, and introduced a dry Ros in 2011. Liquid Farms 2012 Chardonnay production reached 2,400 cases and the labels expansion plans part of the driving force behind the new winery space are targeted at an eventual production in the range of 5,000 cases. James Sparks, a Solvang resident and previously assistant winemaker for Dragonette Cellars, entered the Liquid Farm equation at its inception in 2009, when he landed in the Santa Ynez Valley taking up winemaking work alongside his brother-in-law, Brandon Sparks-Gillis, one of three of Dragonette Cellars owners/winemakers. Over the course of the following four or so years, and with three talented, full-time winemakers helming Dragonette Cellars, James had reached capacity in his assistant winemaker role. Meanwhile, the Nelsons long-term plan to progressively become more hands-on in the cellar and more rooted on the Central Coast, provided an organic next step to have a dedicated space for Liquid Farm. are earth- and mineral driven, with little or no use of new oak, shining a spotlight on the representation of the soil in which the vines producing their wines, have grown. Liquid Farms grapes are pulled from a carefully-curated selection of vineyards, and their sustainably-produced wines face minimal contact in the winery, yielding modest alcohol levels and preserved natural acidity. Liquid Farm is all about Liquid from Farming. All about place, says Jeff Nelson, the other half of Liquid Farms proprietor team. In the October issue of Wine & Spirits Magazine, Liquid Farms Chardonnay was named in the nations Top 20 of 2013, out of more than 500 wines the publication blind-tasted throughout the year. Liquid Farms 2011 White Hill Chardonnay took second place in a blind tasting conducted by The New York Times Eric Asimov, and was chosen as Wine of the Week by S. Irene Virbila of the Los Angeles Times. Virbila also placed Liquid Farm in her listing of seven of the top up-and-coming California wine producers, and Liquid Farms 2011 Ros (Vogelzang Vineyard), was bestowed an "editor's choice" title and a 90-point score by Wine Enthusiast. Liquid Farms care and attention to detail extends beyond their winemaking mantras and practices, to the fashion in which they introduce their limited production wines to the public. Due to the high demand, small supply and lack of a tasting room by design Liquid Farm created a thriving and involved wine club community. Liquid Farm has worked on building what Nikki refers to as the

Anti-Wine-Club Wine Club, which affords them a personal connection to their club members, and allows them to have differing methods than most traditional wine clubs. Outside of the Liquid Farm wine club, their wines can be found in some of Southern and Northern Californias best restaurants, and in a handful of New Yorks finest dining establishments. Liquid Farm has also infiltrated wine menus at top restaurants in Georgia, Texas and Nantucket, giving the label a truly coast-to-coast presence. Ballard Canyon: Santa Barbara Countys new AVA


The regions fifth AVA recognizes 7,800 acres
The Santa Barbara County Vintners Association (SBCVA) is pleased to announce that Ballard Canyon has been designated by the TTB (Alcohol and Tobacco Tax and Trade Bureau) as Santa Barbara Countys fifth official American viticultural area (AVA) became effective October 30. Ballard Canyon joins the existing AVAs of the region including Santa Ynez Valley, Sta. Rita Hills, Happy Canyon of Santa Barbara, Santa Maria Valley and the broader Santa Barbara County. According to the TTBs press release on September 30, rule T.D. TTB-116, creates the establishment of the Ballard Canyon Viticultural Area. This final rule establishes the 7,800 acre Ballard Canyon viticultural area in Santa Barbara County, California. The new viticultural area, codified at 27 CFR 9.230, is entirely within the existing Santa Ynez Valley and Central Coast viticultural areas. Ballard Canyon, encompassing 7,800, is the second AVA in the Santa Ynez Valley along with Sta. Rita Hills. The region is an integral part of the diversity within the Central Coast and Santa Barbara County designations. Varietal plantings are shared, a preponderance of Rhone varietals can be appreciated, yet Ballard is a specific and distinct sub-region producing authentic terroir and unique wines. According to Michael Larner, president of the Ballard Canyon Winegrowers Alliance, The 16 vintners in the Ballard Canyon AVA have always recognized the unique potential of this site. We see it each year in the high quality of fruit we pick and in the fine wines we craft. We have always known that we occupy a special space at the heart of the Santa Ynez Valley and Santa Barbara County. Our efforts have now been officially recognized. The Ballard Canyon AVA represents uniquely territory-driven wines from one of the most beautiful spots in California. The fact that this good news comes in the middle of harvest, makes this a vintage we will never forget.

Solvangs Monthly Third Wednesday Beckons Holiday Shoppers and Scarecrows


The November edition of Solvang's monthly "Third Wednesday", to be held on Wednesday, November 20, 2013, will not only offer ample opportunity for pre-Black Friday holiday shoppers to take advantage of deals and discounts all over town, but will also serve as the stage for the reveal of the winner of this years Santa Ynez Valleywide Scarecrow Fest. Scarecrow Fest winners will be announced, and the contests trophy handed over, at 2:30 PM on November 20, at Solvangs Wildling Art Museum (Mission Drive and Fifth Street). Novembers Third Wednesday will provide savvy deal-seekers and scarecrow enthusiasts with a little bit of something for everyone, with regular Third Wednesday discounts at local merchants and restaurants, the weekly Santa Barbara Certified Farmers Market, the popular Wine & Beer Walk and deals at Solvang hotels, as well as another Third Wednesday Cash Mob. The 2013 rendition of the Annual Scarecrow Fest, which began in Solvang, was for the first time, expanded to include the four additional Santa Ynez Valley towns of Buellton, Los Alamos, Los Olivos and Santa Ynez. During the month-long event, which runs October 11 through November 11, Valley businesses will participate in the contest by featuring a scarecrow of their own creation, posted at their location. During Solvangs contest run, locals, tourists and other area merchants will vote via ballot boxes scattered about the city, for popular-vote scarecrow winners in eight different categories: Most Danish, Best Action Scarecrow, Best Use of Natural Materials, Best Traditional Scarecrow, Spookiest, Best Use of Business Theme, Most Humorous, and Best Use of Recycled Materials. Ballots are available at the Solvang Visitors Center and at participating businesses, and feature maps to direct voters to each of the contests scarecrows. Winners from each of the eight popular-vote categories will be announced at the November 20 ceremony. markets and a commitment to making the best wines in Santa Barbara County. The Firestone name is probably familiar to most people; they were the family that created Firestone tires. Today winemaker Paul Warson, who came on board at Firestone after 14 years making wine in the Napa Valley, is putting his own stamp on Firestones aromatic white wines and their traditional Bordeaux reds. Warson oversees over 400 acres of grapevines which translates to about 100,000 cases of wine each year, making them a major player in Santa Barbara County. Its been a whirlwind three-and-a-half years since I took over the winemaking here at Firestone Vineyards, Warson says. It seems that we need to move faster and faster to stay in the same place, or keep up with the latest accomplishments for that matter. We have received some terrific accolades from the media and press in the last year which has gone a long way in expanding Firestone into new markets. And Firestone is also one of the few wineries in the area who offer complimentary public tours daily at 11:15 a.m., 1:15 p.m. and 3:15 p.m. After the 30-minute in-depth tour you can picnic outside on the verdant lawns and see for yourself the vineyards which have been planted on a series of mesas, which have gravelly sub-soils, perfect for keeping the vines healthy and well-drained. The vineyards sites are ideally oriented to capture the sun and breezes for perfect exposure to maximize the grape flavors. At the winery things are busier than ever, says Warson. Last year saw the inaugural release of Proximity 26, our flagship red wine. In the next few weeks Paul says he will be bottling the 2010 vintage of Proximity 26, and a new addition to the Firestone family, Proximity 26 Cabernet Sauvignon. As usual our wine club releases continue to highlight our tasting room only wines, notably our Reserve Chardonnay, Clone 174 Syrah and our Cabernet Franc, Warson adds.

The concerts run from 6 p.m. to 9 p.m. and are free to attend and all the current releases of Firestone wine are available for purchase throughout the event. Big Toms BBQ is on hand with tri-tip sandwiches, pulled pork sandwiches, burritos, tacos and more so you wont go hungry. But all the busyness isnt reserved for the winery only. We are currently redeveloping 16 acres of Cabernet Sauvignon and a little bit of Malbec, says Warson. This holds promise for the next time you visit. Santa Barbaras Iconic Zaca Mesa Winery Reaches the Four Decade Mark
Zaca Mesa Winery & Vineyard Celebrates 40th Anniversary
With the current booming Santa Barbara wine country scene its hard to imagine that 40 years ago tasting rooms and vineyards were not part of the landscape. In 1973, there were only a few wineries around and one of the first was Zaca Mesa Winery. The property is named after the Chumash word for peaceful and its elevated terraces that define the unique terroir. The estate was originally purchased by a group of friends, headed by Marshall Reams and John Cushman. The Cushman family remains in sole ownership. Owner John Cushman recalls, We were wildcats, with no real wine industry experience, but a lot of excitement and passion. Head winemaker Eric Mohseni believes, it was without a doubt their pioneering spirit which helped launch Santa Barbaras formative years, setting the tone for the region and demonstrating the high-quality wines that could be made here from the very beginning. With 40 years of history Zaca Mesa Winery has had quite an influence on Santa Barbaras wine industry. Often nicknamed Zaca University, Zaca Mesa Winery has been a hub for much of the top winemaking talent found throughout the region. From their first winemaker Ken Brown to current winemaker Eric Mohseni, there is a lineage of talent that has built Zaca Mesa up to what it is today. Zaca Mesa GM Paul Pease explains, Weve been fortunate to have talented winemakers like Daniel Gehrs, who made our 1993 Estate Syrah, which broke into Wine Spectators Top 100 at #6 in 1995. Past winemaker Clay Brock hit another home run with the 2006 Estate Syrah at #29 in Wine Spectators Top 100 in 2010 and this year winemaker Eric Mohseni and associate winemaker Kristin Bryden had 12 wines that scored 90 points or above. Each and every winemaker has left their mark at Zaca Mesa and gone on to do some pretty big things for Santa Barbara Countys wine industry. Other notable names include Jim Clendenen (Au Bon Climat), Bob Lindquist (Qupe), Lane Tanner (Sierra Madre Vineyard), Adam Tolmach (The Ojai Vineyard), and Benjamin Silver (Silver Wines). While the Santa Barbara wine country landscape has certainly changed, many things still remain the same Zaca Mesas dedication to its wines, customers, employees, and community. The winery celebrated the momentous occasion back in May, hosting a memorable party for over 400 loyal customers and past employees. Associate winemaker Kristin Bryden sums it up as, When you learn about the history of Zaca Mesa, and the pioneers in this industry that have shaped the spirit and culture of this place, you cant help but feel fortunate to work at Zaca Mesa. Here we could plant and grow a superb vineyard utilizing low-yields and sustainable vineyard care. After working at several wineries in Napa Valley, the Santa Cruz Mountains and Santa Barbara, including consulting jobs in New Zealand, Germany, France, Spain and Portugal, Phillips decided it was time to apply his global winemaking techniques to their small family endeavor. Rancho Olivos is one of Santa Ynez Valleys first local olive oil producers, having planted their Tuscan and Spanish varietals in 2000. These trees are producing well now, and additional acreage has been planted with Italian and Mission olive trees. Rancho Olivos is proud to announce that both the Italian blend and Garlic olive oils won silver medals at the Los Angeles International Extra Virgin Olive Oil Competition, where they competed with many California grown olive oils. Currently Rancho Olivos is offering their 2013 Italian, Arbequina, Garlic and Meyer lemon oils. Visitors to their farm get exposed to the unique taste of fresh estate olive oil. These olive oils have a flavor totally different from store bought olive oil. Much of the imported oil is diluted with seed or hazelnut oil, states Casey. Or it is made with refined olive oil, which is why it has very little flavor. Customers return again and again for that unique flavor of fresh olive oil. Casey states: we are fortunate that we live in a climate that allows for such diverse farming. Olives do not like humidity, so they cant be grown in the south. And they cant grow where the ground freezes. The evergreen beauty of the olive trees contributes to much of their charm. Casey is very happy to see the trees thrive in this region. The fruit has set on the trees and those who have not seen a fruiting olive tree can now see how the olives are grown. Depending on the weather, harvest will be late this month or early December. In addition to the fresh olive oil, Rancho Olivos also has a large selection of organic tomatoes, peppers, cucumbers, watermelon and apples for sale. Samples of the tomatoes with the olive oil are available for tasting. Pumpkins will be available in the fall. After 20 years of revolutionary viticultural experimentation, Stolpman Winery continues to lead the way in Syrah, Sangiovese, and Roussanne production. Their 100% estate grown wines are organically crafted on the limestone hills of Ballard Canyon in Santa Barbara County. The soils help create acidity and structure for these intense wines. To ensure optimal freshness, the grapes are picked in the cool of the night and gently pressed. The Stolpmans' focus is Syrah, the premier grape of their estate. Other wines offered include Grenache, Petite Sirah, Sauvignon Blanc, and Viognier. Robust and flavorful estate olive oil can be tasted and purchased as well. The Stolpman tasting room, a quaint red cottage, was originally a private residence built in the late 1800s. The building has undergone major revisions with two tasting bars to comfortably accommodate guests. They also a have a covered deck and a shady patio where guests are invited to relax and enjoy the service of the passionate and knowledgeable staff. Conway Family Wines Deep Sea Tasting Room


The Conway family is actively involved in their winery business. With two different labels covering the best of the California Central Coast, Conway Family Wines might just become your familys wines. They offer two labels to choose from including Deep Sea wines which are made from grapes grown in Californias moderate coastal climates including offerings of Chardonnay, Viognier and Sauvignon Blanc to Syrah and Pinot Noir. Vineyards along Californias coastline are cooled by fog and ocean breezes which translate to distinctively different grapes from those grown in warmer interior areas. Its the job of the Conway winemaker to preserve these differences so the wines reflect their oceanic terroir. Conway purchases fruit from noteworthy vineyards in Santa Barbara, San Luis Obispo, Monterey and the Napa Valley, contracting specific blocks, actively managing individual vines and working with growers to formulate viticultural practices so that the grapevines are farmed to Conways exacting specifications. Their Rancho Arroyo Grande wines are made from grapes grown at their estate vineyards in San Luis Obispo County including Mourvdre and Zinfandel from this 1880s era property. These are limited production wines, small lots, for the fine wine connoisseur who wants something uncommon. The ethereal fog-like wave on the Deep Sea label represents the influence of the Pacific Ocean and thats exactly where you can taste their wines; on historic Sterns Wharf in Santa Barbara as the Pacific laps below the second story tasting room. A Sit Down Tasting usually requires an appointment, and there may be a slightly higher fee than a wine bar fee. Seated in an elegant room, you are poured several wines by your winery host. Expect your host to describe the unique characteristics of each wine and how it was made.

    

       

  

Walk Around Tasting


A Walk Around Tasting is a combination of a tour and a tasting. Your host brings along several bottles of wine on your tour, and may take you to a garden area of the winery to pour the first round. Then you move to another place within the winery to sample the next wine. This experience continues until all the wines are tasted.

 

    

 

  

Barrel Tasting
         
Another popular tasting experience that can be part of a tour or a Walk Around is a Barrel Tasting. Your guide takes a wine thief, a special siphon placed into a hole in the top of a barrel to extract tasting samples of a maturing wine. The sample allows you to taste what the wine is like in the middle of developing its full potential.

Some wineries are so small that they need to know when you are coming so someone will be there to greet you. Others have sit-down tastings that start and end at specific times. Its always a good idea to schedule your appointments well in advance.
