papers turned
in for spring
elections
Three seats on the Village board
and one on the school board will
be up for grabs in the spring elec-
tion.
Voters will choose from four
candidates to fill three Village
Board seats. All three incumbents
and one newcomer turned in their
nomination papers by the January
7 deadline. Incumbents include
Brett Edgerle, Susan Jaberg, and
John Pethan. (Susan Jaberg was
appointed to replace John Renzel-
mann who moved out of the Vil-
lage). Newcomer Michael C.
Zimermann has thrown his hat into
the ring hoping to displace one of
the incumbents.
For the school board, Christina
Koberstein is the only one to sub-
mit a declaration of candidacy for
the seat that will be vacated by
Laura Kohler, who is not running
for reelection.

Raspberry Chocolate Hearts

Once again, Kohler Original Recipe Choco-
lates celebrates the season of love with beautiful
hand-painted Raspberry Champagne Hearts.
Each artfully crafted dark chocolate heart-
shaped shell is filled with smooth ganache fla-
vored with robust notes of raspberry,
champagne, and cognac.
I had a chance to try a couple of the hearts as
I sat down with Anette Righi DeFendi, head
chocolatier at Kohler Original Recipe Choco-
lates. We met at the Craverie Chocolatier Caf,
home of Kohler Original Recipe Chocolates, lo-
cated in The Shops at Woodlake.
DeFendi said the chocolate hearts are one of
the more popular seasonal items. Though she
wasnt the original creator of the pieces, they
proved to be so popular that there was no reason
to discontinue them.
I was reluctant to bite into my sample hearts.
I dont think Ive ever seen a piece of chocolate
that shiny. I wanted to wear them as jewelry or
display them on a knickknack shelf for a while.
They taste as delectable as they look.

The Holiday Trio, which de-
buted this past November, was
Defendis creation, as well as
some upcoming candy bars, in-
cluding a new peanut butter vari-
ety.
Defendi said the chocolate pro-
duction is cutting edge just like all
of Kohlers ventures. All chocolates are hand-
made at the Forbes Five-Star The American
Club resort, and personally approved by the
Chairman/CEO of the Kohler Co., Herbert V.
Kohler himself before they are made available
for purchase.
I ended our interview by posing a few ques-
tions posted by visitors to The Kohler Villager
Facebook page:
Describe the process of developing new
chocolates or flavors. What is the most
challenging aspect?
Its really fun, actually. Its a really creative
process, Defendi said. She draws from tradi-
tional and popular flavors, but also
likes to experiment with flavors
that she thinks might make for a
unique pairing. Part of my plan is
to create items that arent out there
or put a spin on the classics, De-
fendi said. It involves a lot of trial
and error. Its frustrating some-
times, but its really rewarding
when you come up with a piece
that people love and enjoy. Thats
really satisfying for me and makes
me happy that Im able to make
other people happy and enjoy the
chocolate.

Defendi also considers personal favorites
when developing a new line. The inspiration be-
hind the cranberry clove chocolates that were
part of the Holiday Trio was a spiced cider that
her mother would make for the holidays when
she was growing up. It was cranberry and or-
ange juice with cloves and cinnamon . . . and I
was thinking about the holiday line and I
thought Gosh, what reminds me of Christmas?
and its always that spiced cider. So Defendi
wondered if she could make a ganache with
spiced cider, and she did. The Cranberry Clove
joined The Caramel Apple and Mint Leaf to
make up the Holiday Trio.
When will their clean line be available?
Defendi said most of their products are
clean, meaning all natural ingredients with no
preservatives. The ones she could think of off-
hand were the Terrapins, toffee bark, trail mix,
dark chocolate and milk chocolate bars, and all
candy bars. There are also gluten free choco-
lates available. People seeking clean chocolates
are encouraged to call the Craverie for more in-
formation.
Do you plan to offer chocolate covered
strawberries?
Defendi said they wont be offering chocolate
covered strawberries, because their goal is to
produce items that can be sold online and
shipped. Their chocolates have a three-month
shelf life, something that cant be achieved with
chocolate covered strawberries.

Kohler Foundation continues the
tradition of bringing the highest-
quality musical theater to the area
with the high-energy revue Five
Guys Named Moe on Friday, Feb-
ruary 14. Tickets to the 8:00 p.m.
show are just $35 for adults and
$18 for students. Special dining
and lodging offers in the Village of
Kohler are available to ticket hold-
ers during the special weekend.
Five Guys Named Moe debuted
in Londons West End in 1990 and
won two Laurence Olivier Awards
before making the journey across
the pond to Broadway in 1992. The
musical, which was also nomi-
nated for two Tony Awards, tells
the story of down-on-his-luck
Nomax and the eponymous Five
Guys Named Moe who jump right
out of his 1930s-style radio one
night. They cajole,
wheedle, and comfort
him with the whimsical
hit songs of Louis Jor-
dan, one of the most
beloved songwriting tal-
ents of the twentieth cen-
tury.
With more than fifty
top ten singles on the
rhythm and blues charts, Louis Jor-
dan was a great composer, band-
leader and saxophonist who
brought a popular new slant to
jazz, paved the way for the rock-
and-roll of the 1950s, and collab-
orated with the likes of Louis
Armstrong and Ella Fitzgerald. His
music creates a toe-tapping and
hand-clapping soundtrack to the
hilarious, heart-warming story
written by Clarke Peters.
The final performance
of the Distinguished
Guest Series 70th Sea-
son on April 5 will be
world-renowned violin-
ist Itzhak Perlman in
concert with Rohan De-
Silva on piano.

Winter one-acts ready to hit Kohler stage
Kohler High thespians will show
off their acting talents on February
1 and 2 in a production of The
High School Diaries. The one-act
plays and monologues will focus
on the comedies and dramas inher-
ent in the lives of high school stu-
dents. This Is A Test by Stephen
Gregg is a hilarious look at taking
an exam, told through the mind of
a very nervous high school boy.
The second half of the program
features selections from The Bully
Plays, a thought-provoking collec-
tion of short plays about bullying.

A group of Kohler friends led more than
200 Sheboygan Polar Bear Club members
into the frozen waters of Lake Michigan on
New Years Day for the 44th annual Polar
Bear Plunge at Deland Park in Sheboygan.
Air temperature that day was about 8 degrees,
with the wind chill hitting -6. Water temper-
ature was near freezing.
Per tradition, participants turn out in cre-
ative swimwear chanting Its not cold
enough! before charging into the water.

The Crusaders shield of armor
was too hard to break through for
a victory January 4, as the
Bombers lost on the road to She-
boygan Lutheran 61-48.
Lutheran jumped out to an easy
first quarter lead but the Bombers
jousted their host in a dueling bat-
tle in the second quarter to pull
ahead at halftime for a 21-20 lead.
The Crusaders rode in and re-
stored order in the third quarter to
take a 22 point advantage and kept
building from there, proving to be
too much for the Blue Bombers to
handle.
We got off to a slow start in the
first quarter but came back strong
in the second to take the lead by
one at the half, said guard Eric
Bauer. Unfortunately, our defense
couldnt shut down Jake Jurss
from beyond the three point line in
the second half to pull off the win.
Brennan Ladwig had a double-
double along with the team high of
13 points in Kohlers road loss,
while Jake Jurss led the Crusaders
with 30 points.
Like Lutheran, we also share in
the journey of a crusade. Ours may
not be a holy endeavor, but a cru-
sade neverthelessas our boys
continue to push forward for a vic-
tory!

The Friends of the Marsh
formed in 2005 to help protect and
promote the Marsh. The Friends
set their sights, literally, skyward.
In 2006, soon after formally be-
coming an entity, the Friends
started to raise money to construct
the State of Wisconsins tallest
wooden observation tower.
Fundraising started by collecting
spare change in buckets at local
events and progressed when many
both large and small donations
from local citizens, foundations,
and employers started accumulat-
ing. Their vision became reality in
2009 when Sheboygan County
was blessed with another great
amenity, the Sheboygan Marsh
Tower.
The Friends have not lost their
drive and determination to make
the Sheboygan Marsh an even bet-
ter resource for the County. Using
their knowledge and success from
the Tower project, they are now
embarking on a new mission to de-
velop an environmentally friendly
multi-purpose educational and
meeting facility. The new facility
would sit where the existing ex-
tremely dilapidated storage
garages are currently located. The
primary function of the facility
would be to house Camp Y-Kodas
ever-growing environmental edu-
cational classes along with other
environmental stewardship activi-
ties. The facility would also be
used for meetings and gatherings
when classroom activities are not
taking place. The tired, worn-out
campground showers, now housed
in the old Marsh Lodge, would be
replaced and housed in the new fa-
cility as well. The goal is to make
the building as environmentally re-
sponsible as budget will allow.
Initial estimates place the price tag
at roughly $660,000, including
contingency. While no formal
fundraising has taken place, the
Friends have already raised over
$40,000 in seed money.
The Friends encourage people to
take a special look at the hidden
jewel which is the Sheboygan
Marsh. It is the largest restored
wetland complex in the Lake
Michigan basin providing habitat
for many species of birds, wildlife
and other critters. Step back, step
up, and enjoy the wonder of the
14,000 acre Broughton Marsh
from the observation tower; see
what boaters, hunters, fisherman
and snowmobilers have enjoyed
for years. From the towers
panoramic view, you will experi-
ence a breathtaking landscape,
hidden treasures, massive water-
ways, abundant wildlife and recre-
ational opportunities. Then, once
you have taken in the beauty,
imagine a beautiful new, purpose-
ful, building housing the classes of
the next generation of scientists to
protect, manage, and preserve
magnificent resources such as the
Sheboygan Marsh.
The Friends encourage people
of all ages to participate in this
monumental effort that will benefit
many generations to come.

Demonstration Kitchen Schedule
The Chefs at The American Club resort host Saturday sessions to
showcase culinary tips while guests indulge in food and beverage tastings
The 2014 schedule is set for the highly
anticipated Demonstration Kitchen Series at
The American Club resort, and promises
some of the most diverse tastes and topics
yet. The interactive, educational experience
is hosted by Chefs from the five-star, five-
diamond resort and offers tips and recipes
to create a memorable dining experience at
home. The Demonstration Kitchen Series
runs each Saturday, Jan. 4-April 26, with
two sessions at 11am and 2pm.
The culinary classroom boasts a
functional kitchen and seating for up to 40,
offering guests an interactive experience to
not only taste dishes being cooked during
the demonstration, but also the opportunity
to ask questions throughout the demo,
learning culinary tricks of the trade from
seasoned Chefs. The hour-long presentation
includes food and beverage tastings and is
offered for $35 per person.
Overseen by Executive Chef of The
American Club Resort Rick Boyer, weekly
Demonstration Kitchen sessions have been
planned thoughtfully to showcase a variety
of topics. Some of the new topics added
speak to the growing popularity of healthy
eating and doing so with local fare. The
