elcome to the Offcial Guide to GABS 2014, now proudly part of
Melbournes Good Beer Week.
The Great Australasian Beer SpecTAPular (GABS) was frst held at our
speciality beer venues, The Local Taphouses, in 2011 when we cheekily
asked a few Australian breweries to brew something special and ended
up with 20 amazing beers. The events great success encouraged us to
create a major craft beer festival unlike any other.
Since 2012, GABS has been held at the magnifcent Royal Exhibition
Building as a 3-day celebration of craft beer with almost 23,000 people
attending. This year were thrilled to feature over 250 beers from 150 of
the best breweries from Australia and around the world. Almost 120 of
these beers are brewed especially for the event. The Dan Murphys Market
Place showcases over 30 breweries and businesses with many hosting a
fantastic schedule of mini-events. Weve also added a Cask Bar pouring
local Real Ales from traditional hand pumps and there will be a carefully
selected variety of food stalls selling everything from cheese, beer ice
cream to American-style BBQ.

The new VIP Food & Beer Experience on Friday evening is supported by Mildura Brewery and the 2 hat Stefanos Restaurant and will feature renowned guest
brewers. Fun educational seminars are returning to Coopers Craft Beer College and weve got a great line up of entertainment and games including Paddle Art.
The Friday afternoon session is now called P.O.E.T.S Friday (Google it) and Silly Hat Sunday encourages you to join us in wearing fancy dress or a silly hat.

The Dan Murphys Market Place has been reconfgured to provide better access to
the stalls and create a more market-like environment. Be sure to visit as many as
you can and enjoy some of the cool mini-events some of the stands have organised.

This year as many as 120 breweries from around Australia and overseas have
brewed special beers just for GABS 2014. The tasting notes in this Guide are
informative and we have introduced colour coding to help you decide.
mX PEOPLES CHOICE
BEST FESTIVAL BEER OF GABS
Vote for your favourite Festival Beer of GABS 2014 and one random voter will win
$1,000 worth of craft beer. You can vote on the GABS apps or at gabsfestival.com.au/
awards. The Peoples Choice Best Festival Beer of GABS will be announced at the end
of the last session on Sunday as well as on social media.
VIP FOOD EXPERIENCE
Presented by Stefanos and Mildura Brewery, the VIP Food & Beer Experience takes
place during the Friday evening session. It will feature outstanding guest brewers
and food from the renowned two hat restaurant paired with their beers.
COOPERS CRAFT BEER COLLEGE
This year, we have a great lineup of educational seminars including the popular beer
& cheese matching, Q & Ales - where brewers talk about their Festival Beers - and
much more. Hosted by the charismatic Pete Mitcham, CCBC is a must.
FUN & GAMES
There will be plenty of fun and games including Morris Men, roving entertainers,
table tennis, corn-hole, paddle races and other fun stuff so be sure to get involved!
PADDLE ART
Why not build something fun out of Tasting Paddles (in the designated areas) or
use the chalk provided to get creative with your Paddle. Take a photo, post on social
media with the hashtags #paddleart and #gabs2014, and you could win a cool prize.

ENTRY PROCEDURES
The entrance to GABS is via the main entrance to the Royal Exhibition Building at the
Nicholson Street end. As this is a licenced event, ensure you can provide photo ID on request. The
event organisers also reserve the right to check bags or refuse entry.
TASTING PADDLES
Sampling is the name of the game at GABS. 85ml individual tasters are available to
purchase for just 1 token ($2), and Tasting Paddles allow you to carry up to 5 tasters.
Please mark beer numbers on the paddle with the chalk provided before reaching the bar.
We suggest you start with lighter, more subtle tasting beers before sampling stronger and
more challenging avoured beers.
MATILDA BAY FESTIVAL GLASS
At some point during a session, you will certainly nd a favourite beer. Rinse your
Matilda Bay GABS glass and order a ll at any of the main bars or the Dan Murphy
Market Place stands. Please hang on to your glass as you will only receive one. Re-
placement glasses can be purchased from the Merchandise Stalls for 2 tokens ($4).
OTHER DRINKS
Wine, cider and non alcoholic drinks will be sold at some exhibitor and food stands. Free water
is available at hydration stations located by Containers A and B.
GABS FOOD VENDORS
There will be an exciting and wide variety of food stands in the festival hall including many new
additions. All food purchases are by GABS tokens only.
MERCHANDISE
GABS and some other brewery merchandise will be available at the Merchandise Stand.
Cash, card or tokens are all accepted.
TOKENS
All drink and food purchases at GABS can only be made using offcial GABS tokens. Each token
is worth $2. Additional tokens are available for sale from the Token Booths (with cash or card)
or from Token Sellers roaming the festival hall (cash only). Surplus tokens are not refundable.
Ross Kenrick from Brisbanes Bacchus Brewing returns to GABS
this year with the added pressure of defending his title of Peoples
Choice Best Festival Beer at GABS 2013. His White Chocolate
and Raspberry Pilsner delighted taste buds throughout the Royal
Exhibition Building and took out the title against tasty competition.
Bacchuss White Chocolate and Raspberry Pilsner is Rosss natural
evolution of an existing brew. One of our most popular and unique
beers is our White Chocolate Pilsner and my favourite ice cream is white
chocolate and raspberry so when we were invited to enter GABS it was
a natural choice for me to try and take our Pilsner to the next level.
As a craft beer drinker Ross is impressed at the array of beers on offer at
GABS. Where else can you sample such a range of creativity over one
weekend? The quality and diversity of avours on offer is incredible.
When youve been once you wont ever want to miss it again.
2014 will see Bacchus roll out another dessert inspired beer - Sex, Drugs &
Rocky Road. Weve tried to put a Darrell Lea Rocky Road into a glass. The
beer has a purple hue of Turkish Delight and is layered with avours of
chocolate, peanuts, marshmallow, cherries, Turkish Delight and hazelnut.
It represents another unique beer on the long list of Bacchuss beers that
even the most seasoned Untappd user would struggle to keep up with.

EAT
This will not only replenish your system, it will help absorb the alcohol so
you dont get too tipsy too quickly. No wants to witness a weak, depleted
an drunk beer drinker in action.
TOLERANCE
Get to know your limits and dont exceed them. If you feel that moment of
absolute cheer, take a break, grab some water and eat some food.
LEARN SOMETHING
Sometimes theres more to beer than just drinking it. Ask questions.
Engage in discussion with mates and strangers. Read the tasting
notes. Talk about what you do and dont like. Think about what youre
drinking. Try new styles. Get educated. If all you end up with from gabs is
a hangover, youve truly missed out.
MODERATION
GABS is about appreciating the best beers on offer and not how much
can be consumed. Drink for favour, not just for impact. Anyone wishing
to treat this festival as a drinking game should have stayed at home.
TIME TO GO
When a GABS staff member or some 7 foot security guy is kindly
suggesting youve had your limit... Realise that its time to go home and
just leave. Any other course of action just gets sloppy.

1. MILLING
& MASHING
Grain is crushed and mixed with hot water to make
a porridge where starches are converted to sweet
fermentable sugars that the yeast can eat later in
fermentation. The liquid is fltered to end up as a bright
sweet liquid called wort.
3. FERMENTING
Now we have a liquid that has a malt character
balanced with bitterness. But a crucial element is still
missing: Alcohol. Yeast, the agent of fermentation and
producer of alcohol, is pitched and allowed to ferment.
Yeast and trub are removed from Ales and then sent
to bright beer tanks with fresh yeast and liquid sugar.
Lagers are stored at -1C for numerous days, forced
carbonated with CO2 awaiting packaging.
2. BOILING
A rolling boil is carried out to sterilise the wort. Hops
are added to the kettle/copper for bitterness and favour
then sent to the whirlpool where aroma hops may be
added and the wort spun to remove solid material (hop
debris and other bits called trub). Finally, its chilled on
the way to the fermenting vessels.
4. PACKAGING
Beers are then either bottled, canned or kegged,
checked for quality and released for sale.
Unlike most beers, Coopers Ales are packaged
then stored for at least 10 days while a secondary
fermentation occurs and the bulk of the carbonation
takes place. They are then checked that they have
come up to condition before being released.

HOW TO TASTE BEER
When tasting a beer, theres so much more than swilling it down, burping and saying
its great or not for me. Even though tasting is very subjective, there are a few steps
which, if followed, will allow you to get more out of your tasting experience. Heres how
Matilda Bay recommends you go about tasting beer:
LOOK
Take a moment to look at your beer before you taste it. Raise the glass toward, but not
directly at, the light as this can dilute its true colour. Consider its colour, clarity, head
and consistency.
AGITATE
Swirl your beer gently in the glass to allow aromas and volatiles to loosen and escape
and also stimulate carbonation and test head retention.
SMELL
Around 75% of what you experience is through your sense of smell. Breathe through your
nose only, then with your mouth open, then through your mouth only (nose and mouth
are connected in the experience). Take in and enjoy its bouquet. What does the aroma
remind you of?
TASTE
Many beers beneft from being sampled at temperatures higher than commonly
dispensed. We encourage you to warm the beer in your hands prior to tasting and note
the difference. Now sip the beer. Resist swallowing immediately. Let it cover your whole
palate and listen to your taste buds. Think about the mouthfeel, the consistency of the
liquids body. Think about all the favours in terms of sweetness, salt, tartness and
general bitterness. Think about what they are, or what they are similar to. Why not have a
go at describing each beer you taste? Here are some helpful descriptors below.
WHAT IS BEER?
The basic ingredients of beer are water, a fermentable sugar source (grains such as malted
barley or wheat), hops and yeast. All beers can be broadly classifed into 3 main categories:
Ales, Lagers and Hybrids.
The key distinction of Ales is that they are brewed using top-fermenting yeast, at warmer
temperatures and with more rapid fermentation. They usually include more complex favoured
beers, are fruitier than lagers and include hoppy (bitter) beers and are best served less chilled
to allow their full favour and aroma to come out.
Lagers are brewed with bottom-fermenting yeast which ferments more slowly and at colder
temperatures. They usually include lighter tasting beers that tend to be more carbonated or
crisp and are often smooth and mellow. They can also be hoppy and bitter but often tend to
be more subtle and clean. Lagers are usually served more chilled than ales
Hybrid beers are those that dont ft neatly into either the Ale or Lager category.
HOW TO DESCRIBE BEER
When describing beer, its helpful to think about the different ingredients
that go into beer and what they might bring to the favour. Here are some
useful beer tasting descriptors often associated with each ingredient:
MALT
COLOUR: pale, straw, golden, amber, caramel, deep red, brown, black
FLAVOUR: honey, bready, caramel, biscuity burnt toffee,
coffee, chocolate, toasty, roasty
BODY: thin, medium, full, thick, chewy
HOP
FLAVOUR & AROMA: pine needle, citrus, summer fruit, passion
fruit, gooseberry, peach, apricot, pineapple, resinous, woody,
aromatic, bitter, delicate, foral, juicy, dry, fowery, grassy, green
YEAST
FLAVOUR & AROMA: spicy, dry, sour, tart, earthy, barnyard, wet
hay, clovey, peppercorn, cinnamon, banana, orange, mandarin,
bubblegum, vanilla, fruity, estery, phenolic

The reigning AIBA Australian Champion Breweries CUB (Large Brewery), Feral Brewing Company
(Medium Brewery) and 2 Brothers Brewery (Small Brewery) collaborated on this unfltered lager brewed
with whole hop fowers from Victoria and single origin West Australian malt.
The brewers have taken Koji rice and, with classic Pilsner brewing techniques, produced this
startlingly pale beer with distinct wine-like sake characters and a strong savoury undertone from the
high levels of umami in the Koji rice. Made in collaboration with Go-Shu sake brewers based in Sydney.
A luxurious take on a traditional Porter using Fuggles hops, vanilla beans and roasted organic coconut.
Expect a luscious deep brown colour with a rich tan head, a nose of roasted coconut and a silky smooth
chocolaty vanilla fnish. This is, quite simply, a tropical daydream.

Wailing noble hop varieties answer the Viking call with precision and balance. Fresh chilli adds a heroic

These brewers soaked French oak chips in dark rum then cold conditioned this hoppy ale on the oak.

A tribute to chocolate orange Jaffas, this has favours of chocolate and orange combine for a smooth
rich mouthfeel with a dry fnish that mimics the crisp outer shell of the original movie treat. Theres
nothing left to do but sip back, relax and enjoy the show.
With a generous infusion of South African rooibos tea and rye malt, this Rye Ale is a smooth, sweet
malty beer with a citrus twist of orange peel and hints of spice and nut.
The enormous hop schedule of this beer is balanced by a rich, roast malt character with rummy
undertones. The oiliness of the hops coats the mouth with a huge lingering bitterness while the malts

This is a blend of wild yeast beer that has been aging on oak for around 14 or 15 months and has had
plums added for colour, favour and a bit more fermentation. With that much contact time this should
be very interesting!
Based on the highest quality bread you might have found around the Roman Forum, the brewers
focused on wheat, rye, dried fg and fennel seed as the key ingredients for this massively hoppy and
bitter Imperial IPA ft for an Emperor.
Traditional sour Berliner Weisse aged in Chardonnay barrels with red Sapphire plums.
A Red Ale brewed with Galaxy and Hallertau Hersbrucker hops to provide aromas of stone fruit and paw
paw. Specialty malts balance this hop character by providing elements of biscuit and toffee.
The smell of tart citrus fowers and warm toasted cereal, biscuits and bread. Hops are both delicate
and expressive, in the nose and the mouth. Caramel nuts, and a faint hint of smoke; sweet favour
lingers, like a big piece of toast.

An American hopped India Pale Ale (IPA) made using a variety of American hops with multiple late
stage favour additions to the boil.
This is a super-charged extension of Temples popular Scarlet Sour. It has an earthy dry acidity and the
fruity cranberry tartness is balanced by foral characteristics. It is mouth puckeringly delicious.
This European-style Farmhouse Ale has been fermented with multiple strains of brettanomyces and
loaded with Simcoe, Centennial, and Columbus hops.
A collaboration between Tokyo-born master cocktail alchemist Yoshi Kurasawa and TRB. Infused with
Japanese botanicals, this combines European complexity and fnesse with the four traditional Japanese
favour essentials of Konbu, Shiso, Yuzu and Ume.
Inspired by the apricot-based-sly-grog peddling delinquents of the early colony, this apricot-spiked
brew will steal your wallet, leaving nothing behind but the tartness of wheat malt and slug of apricot
favour.
This is brewed with zesty hints of orange, grapefruit and lemon giving a spectacular pungent aromatic
favour which will jolt your taste buds to whimsical limits.

A Shameless favourite made more complex and delicious through the oak aging process.
A complex, sour, red wine-like oak aged Belgian-style ale. Deceivingly light and crisp on the palate
although a somewhat sweet fnish, medium astringency (like a well-aged red wine) and a prickly
acidity.
A rich, malty Extra Special Bitter (ESB) made with the UKs fnest malts and Organic Pacifc Gem hops
from New Zealand.
This oak-aged Doppelbock sounds innocent enough, maybe even a bit silly, luring you in with
promises of velvety smooth, smokey cacao layered over a rich dark malt backbone balanced by tart sour
cherry and notes of vanilla from the bourbon infused oak. But dont let it sneak up on you.
A zippy citrus Belgian style Witbier spiced with a traditional Sri Lankan curry blend, coriander, cumin,
chilli, coconut and lime rind.
Lots of hops, Belgian yeast, open ferment, maybe some spices and plenty of malty goodness from this
Healesville brewery.
This is the smaller twin of the well hopped American Pale Ale (think Danny DeVito to Arnold
Schwarzenegger). Rich, full bodied and loud enough to demand your attention. A full fruity herbacious
APA nose and at 2.9% you may just stay awake past 7pm.
A copper-coloured, sweet Scottish Ale with a slight smoky favour from the traditional Scottish yeast
and a dry fnish from roasted barley. CASK BEER
Brewer Jayne Lewis actually wrote the recipe and brewed this beer in a dream and now theyve turned it
into reality! It is inspired from Sesame Snaps so exhibits honey and caramel notes with a healthy does

year they are encouraging us to dive naked into this dark and sexy steamy south-east Asian Barbecue.
