Collect all ingredients and equipment
























1. Fill the saucepan with water halfway
2. Bring to boil
3. Once water is boiled, gently lower the chicken into the
water
4. Turn up the heat to slow simmer and salt water
5. Once simmering, turn the heat down and leave chicken
in for approximately 15 minutes

1. Remove root of the spring onion
2. Finely chop the spring onion

1. Drain oil from tuna using form
2. Squish the tuna with fork to drain
3. Mash cream cheese and tuna together with a fork
4. Pour half the amount of lemon juice in the mixture
5. Put chopped spring onion into the mixture (make own
judgement to see if it is enough)

1. Scrape away oxidised surface of the avocado with a spoon
2. Scoop the avocado into a bowl
3. Pass the avocado through a sieve
3. Add the rest of the lemon juice
4. Season with salt and pepper

1. Cut away the crust
2. Use rolling pin to flatten the bread
3. Spread the mixture of tuna, cream cheese and spring
onion onto the bread
4. Spread avocado onto bread
5. Tightly roll the bread so the cross-section looks like a
spiral
6. Scrape away any fillings that has oozed out
7. Tightly roll the bread into cling wrap like a bon-bon
8. Place the bread into a fridge and let it cool
9. Once cooled, cut the ends off and cut into pieces (5cm
width or bite size)

1. Once the chicken is cooked, let the chicken rest and cool
2. Break the chicken down finely with a knife (no big chunks)


1. Finely chop chives
2. Place chives in a bowl
3. Place 1T of mayo into the bowl of chives
4. Put the finely chopped chicken into the bowl and season
with salt and pepper (taste test)
5. Mix left over spring onion


1. Evenly spread chicken mixture onto one slice of white
bread (Don't squash the bread)
2. Match up the second slice of bread and place it on top
3. Gently saw the crust off
4. Gently slice sandwich into 3 even pieces (same width, all
even spread)


1. Grate carrot with the biggest grater

1. Spread 1t of mayonnaise onto half side of the Lebanese
bread (half a circle)
2. Spread cranberry onto the same half of the bread that has
mayonnaise spread
3. Place 2 slices of turkey onto the same half of the bread
4. Sprinkle left over shallots/spring onion onto the turkey
Sprinkle grated carrots evenly on the turkey
5. Place rocket onto the carrot
6. Roll the Lebanese bread (spiral cross-section)
7. Wrap the rolled bread with cling wrap like a bon-bon
8. Cut the wrap in half diagonally
