He was born August 15,
1956, at the Fordham Hospital
in Bronx, New York, as a twin,

the U.S. Army in 1975. He
served in South Korea until
1978 and, after finishing his
tour, rejoined the military and
served with the U.S. Navy from
1990 to 1995 as a chef.

ern Pennsylvania Affiliate.
Over $31,000 was presented
to Dolly Woody of the Susan G.
Komen Northeastern Pa. Affili-
ate on Saturday, March 6. Jack
Frost donated $5,070 from ticket
sales and the remainder came
from the generosity of staff and

Dining In itʼs always been my philosophy

Oatmeal is really good for
you—no one questions that. But
not everyone likes oatmeal.
Here are a couple of ideas from
the American Institute of Cancer
Research about ways to make
oatmeal more palatable, and get
it into your diet rotation.
The first is fairly traditional, but
sounds wonderful. Iʼm planning
to try it this weekend. Regarding
the sugar and butter it includes,
that consuming a little bit of
whatʼs bad for you, in order to
convince yourself to eat more of
whatʼs good for you, wonʼt hurt
you and just might help.
In case you think itʼs getting
too warm out for hot cereal, the
second recipe uses the oatmeal
in muffins, and adds carrots and
raising, pineapple and coconut.
They sound almost like minia-
ture bits of carrot cake. I might
make them this weekend, too!
Hearty Baked Oatmeal
Avoid the soupy mess that
often comes with instant oat-
meal and opt for this homemade
recipe thatʼs surprisingly easy.
Featuring thick, hearty oats,
dried fruits and nuts, itʼs a warm
breakfast to get your day started
right. Whole-grain oats are a top
source of fiber, which lowers
cholesterol and the risk of col-
orectal cancer. Although this
recipe makes 4 servings, itʼs
easy to store and reheat. Top
with reduced-fat yogurt for an
after-supper treat.
Baked Oatmeal
1 3/4 cups low-fat
(1 per cent) milk
2 tsp. unsalted butter
1/8 tsp. salt
1 cup old-fashioned
rolled oats
1/4 cup dried apricots
1/4 cup raisins
3 Tbsp. lightly packed
brown sugar, divided
1/2 Golden Delicious
apple, peeled and cored
3 Tbsp. chopped walnuts
Preheat the oven to 350°.
In 2-quart microwaveable,
oven proof casserole, heat milk
and butter until milk steams,
about 1-2 minutes. Mix in salt
and oats and set aside.
Chop apricots. Mix apricots,
raisins and 1 Tbsp. of the sugar
into oats. Shred apple into oats
and mix to combine.
Bake oats, uncovered, for 15
minutes. Stir, then top with re-
maining sugar and nuts. Bake
15 minutes longer, or until oats
are chewy. Divide oatmeal
among four bowls. Serve imme-
diately.
Makes 4 Servings.
Per serving: 280 calories, 8 g
total fat (2 g saturated fat), 45 g
carbohydrate, 9 g protein, 4 g di-
etary fiber, 280 mg sodium.

Last weekʼs beautiful weather
was snow-related. This past week-
end, it was sun-related. Beautiful
sunshine and clear skies brought
temperatures up around 40 de-
grees, which is a nice late winter
warmup.
This coming weekend, an extra
reward for us will be the return of
Daylight Savings Time. While it
gets dark at about 7 p.m., on Sun-
day it will be 8.
Ruth and I were out after supper
on Saturday, and decided to hike
up the closed access road above
the Francis Walter Dam from the
east. Our timing was such that our
walk was toward the sunset, which
left a spectacular orange glow
along the ridge to the west. We
were able to hear the calls of snow
geese, the sounds of a train climb-
ing toward Mountain Top, and the
faint sounds of aircraft beginning
their approaches to the three New
York area airports.

could add more winter than it sub-
tracts. Our area is not out of the
woods yet with winter weather.
From experience, I donʼt feel safe
until mid-April. From memory, I re-

Knoebels Grove, and planning
spring plantings.
I miss the Olympics already. It
was a fun few weeks, and the sto-

Western Pocono Lions have busy season
It is a busy month for the West-
ern Pocono Lions Club. Having
just participated in the Night of
Unity at Pleasant Valley High
School, the club now turns its at-
tention to the Red Cross blood
drive at the American Legion in
Gilbert on Thursday, March 18,
from 2 to 6 p.m. Those wishing to
register are urged to call Helen
Koshensky at 5619-4286.
The next meeting of Western
Pocono is on Wednesday, March
17, at The Hamilton in Saylors-
burg. Social time is from 6:30 to
7 p.m. with dinner served at 7.
The program will be provided by
Betsi Olmstead of Pocono
Lutheran Village in East Strouds-
burg.
On April 9, the club will spon-
sor a jewelry night at The Hamil-
ton in Saylorsburg from 7 to 9
p.m. Reservations for both
events should be made by call-

Lions clubs throughout the

the Haiti relief effort, having al-
ready collected over $2.2 million
to support that nationʼs needs.
