hospitality industry is the best place for you.
Official data shows theres an annual need for
2.03 lakh professionals in the industry. But only
18,000 hospitality graduates pass out, annually.
So theres a huge gap in demand and supply.
Once in the industry, you could shake hands
with Sachin Tendulkar or Katrina Kaif, but
dont forget theres work to be done too. Its
not always a glamorous job, says Kunal Pahwa,
Manager, Bukhara, ITC. Yet students seem keen
on hospitality. According to the IHM faculty,
every year more than 60,000 students appear
for the entrance exam. And the numbers are
going up. Of course, the hospitality industry
has its own charms, says Jay Rathore, General
Manager, The Oberoi. No other industry offers
such refined working environment and dignity.
Hospitality is not a job, its a lifestyle.

he course curriculum gives importance


to even minute details. During the first
year, students learn basics related to the
hospitality industry basic of operations such
as food & beverage production, front office and
housekeeping. Apart from how to serve, a hotel
management student gets to learn minute details
such as measurement of tea cup, plate and cutlery etc. This is what makes him or her different
from an untrained professional, shares Davesh
Rawal, General Management Trainee, Novotel,
Hyderabad Airport Hotel. In the last year, the
students study about finance, business environment, strategic management and so on.
To update students about needs of the dynamic
industry, the institutes give opportunity to students to interact with industry. In the third year,
we were also introduced to the Tourism industry
and Human Resources, says Bharti Chanchlani,

a Bachelors student at Manipal University. The students take up internships


in the third year. Trainings continue on service-related etiquettes, telephone
manners, handling tough customers, security. It also includes upgraded trainings on food, on wine, and a host of other services.

Focus on Practical Learning


Almost all the institutes give importance to learning by practice. Our teaching pedagogy includes industry integration, assignments, classroom interactions, field tours, guest lectures, live projects with industry, role plays, seminars, conferences, workshops, skill-based practical inputs and two industrial
internships of six months each dedicated to skill development, shares Dr.
Ashish Dahiya, Associate Professor, Institute of Hotel & Tourism Management, MDU, Rohtak.

Admission Process
After class 12, you can appear for Joint Entrance Exam (JEE) to get admission into any of the 21 Central Institutes of Hotel Management. 16 State
Government Institutes of Hotel Management, 15 Private Institutes of Hotel
Management affiliated with the National Council of Hotel Management and
Catering Technology also admit students based on the same exam. Typically,
the multiple-choice exam comprises numerical ability, scientific aptitude,
reasoning, deduction, GK, English language and aptitude for service sector.

Tuition Fee
Government-backed IHMs fee of entire course is around Rs. 3.15 lakh,
inclusive of hostel charges. However, private institution charge much more,
anywhere between Rs. 7- 10 lakhs. The total cost, inclusive of hostel is little
above Rs. 8 lakh for four years, says, Aarthi Seshadiri, hotel management
student at Manipal University.

Where Do I Fit in?


Bharti, a student of Manipal University says she joined hotel management as
she wanted a practical course; studies that laid more emphasis on hands-on
training than theory. Unlike popular belief, HM students dont work as waiters, but are supervisors and executioners, says ****the final year student****.
A graduate can choose to work in 4 areas. In Food Production, you learn how
to design and create food. Food & Beverage Service (F&B) is where you look
after a guests needs in a restaurant or in an office cafeteria. It is Front Office
that welcomes a guest and tries to make the stay as hassle-free as possible.
In Housekeeping, it is your duty to make the guest feel at home in a room.
Wellness industry that includes spa and fitness is becoming a popular service
in hospitality.

Front Office, in Demand


Food Production, where chefs work in smoky, steamy rooms was once a big
attraction for many young people wanting to join the industry. But now young
people prefer Front Office jobs and F&B service to Food Production. All
hotels, be it a five star hotel, stand-alone or budget, have a line-up of staff at
the Front Office. From the time a guest walks in, till his or her departure, the
front office department has to work meticulously at each stage of operations.
Usually the staff work in shifts ranging from 10-14 hours a day, says Babar
Khanyari, Front Office Manager, The Imperial, Delhi. Fifty-five percent of
our students went for Front Office jobs, says DD Sharma, Head of Department, Institute of Hotel Management (IHM), Delhi. This tilt towards Front
Office and F&B is because of the ample opportunities that the service sector
presents.

management graduates can be absorbed, he
adds. According to Dahiya, the hospitality industry endeavours to provide impeccable services
to guests at all times, and hence employees are
literally brand ambassadors.

Production can take the Armed Forces Junior
Commissioned Officer (Catering) exam and be
absorbed into the Armed Forces. In the private sector, cruise liners, five-star hotels, airline
catering, hospital and contract catering all hire.
Many also choose to start their own catering
businesses.

There is also a demand for outsourcing managers as most corporates and


hospitals outsource their support services and need a person with management skills and a good understanding of the hospitality industry to manage
Food Production, F&B, Front Office and Housekeeping. These make for
support services in a hospital and it comprises 30 percent of the total staff
strength of a hospital, says Dr. K Prabhakar, Senior Vice-President, Corporate, HR, Apollo Hospitals, Chennai. In fact, hospitality graduates are in
great demand abroad, especially in the Middle East and the UK where Indian
food is very popular.

Job Profiles
A fresh hotel management graduate has an opportunity to either join as a
management trainee and work in all departments one by one, or join a single
domain. One can join Front Office operations, as Front Office Assistant or
Front Office Executive. In F&B services, one can become a steward or join
the F&B production department as a trainee. There are opportunities in
Meeting & Events Operations Management, Restaurant Operations, HR
Management, and Marketing & Sales.

as room service and coffee shop kitchens are open 24 hours, working hours go
up to 18 hours. But KS Srinivasan, Vice-President, HR, Taj, Mumbai, doesnt
see working long hours as a drawback at all. Just look at the experience you
get after working in this industry for two years. You get scrubbed and polished
and after two years you shine!

Earning Potential
Although chefs and general managers are paid in lakhs, a fresh HM graduate
may have to start with a leaner package. In a three- star property, the take
home salary of a trainee per month may start from Rs. 8000, in a four-star
Rs. 12,000 and in a five- star it could be Rs. 20,000 onwards. The overseas
chains which open in India, have high posts usually assigned to foreign
nationals who draw higher salaries, thus pushing the bar for Indians as well,
says a manager of a Delhi-based 5-star chain of hotels. So, if finesse is what
you aspire for, HM is the career for you!

Gurmeet Singh, Area Director of HR India, Maldives of Marriott Intl,


shares that the Marriott, which has 24 properties in India in five brands, hire
for starting positions in functions like Food & Beverage Service, Front Office
& Culinary. Students right after college have basic operational knowledge
but they definitely need further training. At Marriott they are also given more
structured operational training. The main focus is to develop each student
into an hotelier with a pleasing personality, impeccable skills, great attitude
backed up with confidence of operational skills, he shares.

Long Working Hours


Hospitality is a round-the-clock function; its a 24x7, 365 days-a-year job.
In fact, when the whole nation is off on August 15, the hospitality industry is
