45 miles southeast of Sacramento. The ranch offers day
or weekend experiences that
include riding thoroughbred
horses and typical camp adventures, designed to help kids
learn to love themselves.

Bayside Church. We took kids
on holiday light tours, we take
them to the Red Barn events,
and we hope to start taking
kids to Destiny Ranch every
weekend, Dean said.

utfitted in black leggings and a


dri-fit tech shirt in one of many
brilliant colors, if you work out at
Johnson Ranch Racquet Club youre sure
to have seen Mae Nakajima getting her
early morning workout in. Nakajima is
petite and fit. She has glossy black hair,
a sweet smile and sinewy arms that have
obviously seen years of repetition with
mini dumb bells. She rarely misses a day
at the gym, which begins with 30 minutes
on a treadmill and then a yoga or On-theBall class with one of her favorite instructors, Pat Lee.
Oh. And Mae Nakajima is 87 years old.
The octogenarian is a legend at the club,
having worked out there for 20 years. She
has inspired hundreds of peers - women a
quarter her age. And she also has inspired
her instructors, who often use Maes perfect form in holding a plank or performing a sit-up on a giant bouncy ball, as the
demonstration for how to do it right.
Everybody knows Mae, Pat Lee said.
Many of the women in my 8 a.m. class
have been coming for 20 years, and they
all know and admire her. When doing a
plank, Mae has the best form every time.
I point her out to the class, and she just inspires everyone. I tell my class, look, the
standard here is this 87 year old woman.
Though Nakajima shies from attention
(she only agreed to be the subject of a story if Pat Lee was highlighted, as well), she
wouldnt dream of not starting her day
with a workout. She said that getting her
exercise in first thing in the morning gives
her energy to accomplish errands and activities throughout the day. When she is
travelling with her husband, Mitch, she

tries to find a gym where she can exercise,
no matter where they are.
Nakajima was raised in Loomis and
Penryn on land that was confiscated
from the family when they were sent to
Tule Lake internment camp during World
War II. Today, the Granite Bay resident
laments the loss of some of her familys
treasured Japanese dish wear and other
special heirlooms that were lost.
But Nakajima is not one for sitting and
reflecting. Shes always on the move,
which is one of her secrets to a healthy
body for nearly ninety years.
I never sit down. Even as a kid, my sister would sit and play dolls. I couldnt
stand that. I had to go outside and move,
she said. Ive read a lot of health books
over the years, but I find that I need to listen to my body and to eat what makes me
feel good, not necessarily what the health
books say that I should eat.
Lee said that her star student always
comes in talking about delicious sounding recipes.
Whats the best diet for one person

isnt right for everyone, Nakajima said.


If I dont eat or do whats right for me, my
body talks to me.
She tries to keep a proper balance of
acidic and alkaline foods in her diet, and
to slip in a little dark chocolate. Nakajima lived on the East Coast for a number
of years, and she and a friend used to grab
a sandwich on the go while visiting the
White House or sightseeing during their
work lunch breaks.
I loved being near
all the history,
Nakajima said.
In addition to
eating right and
exercising nearly
every day, it might be
her natural curiosity and good
humor that keep her lively
and young. Nakajimas biggest fight
is giving up her
per fec t ion i st
tendenc ie s,
which can be

frustrating if a task takes her longer than


it used to.
Lee encourages her students to modify
exercises if needed, and Nakajima knows
how to back off if shes feeling especially
challenged.
JRRC club members and instructors held
a birthday party to celebrate Nakajimas
85th, and they look forward to another bash
when she turns 90.

Brussels Sprouts, Bacon and Bleu Cheese Salad Serves 8


Ive never been a fan of Brussels Sprouts and didnt understand what all the fuss was
about how good-tasting these bitter greens can be. There is a reason. Some people
actually have a gene that causes them to be more sensitive to bitter foods, including
sprouts, radishes, turnips, and others. I must have that gene. But for those of you who
dont have it, this recipe is for you. I actually like this dish Im sure it is the bacon
because as we know everything tastes better with bacon. Enjoy.

Ingredients:

1 and pounds of Brussels Sprouts, thinly shredded (about 8


cups)
8 slices of thick bacon
cup of thick, sweet Balsamic vinegar (I like Calolea brand)
cup of cheese, either Bleu, Gorgonzola, or Parmesan
Salt and Pepper to taste

Instructions:

1. Cook the bacon in a large saut pan until crispy. Remove from pan
and chop into bite-size pieces. Set aside.
2. Remove some of the excess bacon grease and add about cup of olive oil to the saut pan. Over high heat, add the sliced sprouts and saut for about a minute. Dont overcook them they taste better crunchy.
Transfer sprouts to a serving bowl. Sprinkle with salt and pepper.
3. Toss sprouts with bacon, then add the cheese and mix in slowly.
Drizzle with balsamic vinegar. Eat either warm or cold.

sessions for triathlon training, including swimming. We

of 70 women who will run or
run-walk the Shamrock Half
Marathon in March. Were
the only all women multisport training program in the
Sacramento area. We also do
paddle boarding, hiking and
trail running.

the health resolutions
have been set. Whether your resolution is to reduce
your risk for illness through
weight loss, or to reclaim your
youthful physique, you are
ready for the challenge to look
better, feel better and live a
healthier life. If there is one
pearl of wisdom I can offer to
you this New Year, it is just
say no to sugar.
Sounds simple. Just cut out
the obvious sugary foods from
your diet such as desserts, candies, sugary drinks, right? Unfortunately in todays world
sugar has found its way into
almost everything we eat. It is
lurking in foods like ketchup,
breads and salad dressings. It
is hiding in healthy foods like
organic granola bars and fruitfilled yogurts. It is disguising
itself as evaporated cane syrup or fructose sweetener. Why
does sugar need to be in ketchup or bread? Because it makes
food taste better. It is also very
addicting, so the more you eat
it the more you want it. It is a vicious cycle. And just when you
thought you were eating right.
Dont give up. You just need
to arm yourself with knowledge about sugars and what too
much of it can do to your body.
Allow me to to shed some light
on some important information you need to know about
this simple carbohydrate and
why it can be so dangerous.
In basic terms, when you eat
sugar, it is absorped into your
blood stream and the insulin
in your body converts it to en-

ergy, but only a small amount.


The rest of it is stored as good
ol body fat. Yes, that is the major role of insulin to store
excess sugar in the body as fat.
Ugh. Excess sugar intake also causes blood sugar spikes,

he restaurateur who
landed a big catch in
Folsom has done it
again, but this time
at the Roseville Galleria.
Land Ocean opened its new
South Placer hub Sept. 1 of last
year, and what was meant to
be a soft opening turned out
to be something closer to a tidal wave an instant success
from day one.
Owner Mark Platt had been
involved as a partner in area restaurants, but decided to
strike out on his own, opening
Land Ocean in Folsom, as well
as Sienna in El Dorado Hills.
Rosevilles Land Ocean is his
newest creation.
Ive spent a lot of time in
this community, and I love
Roseville, Platt said.
I took my foodie friend, Nancy Silva Sutton, on a dining adventure that began with a trio
of cocktails the Jalapeno
Martini, a bestseller created by

infusing vodka with fresh jalapeno and lime. Drink number


two was the New Fashioned,
Land Oceans take on the Old
Fashioned a bullet of rye
poured over a frozen sphere of
orange wedges, cherries, soda
water and bitters. The drink is
a hit, especially with the gentlemen. The final drink was
the Special K Martini, a pomegranate concoction that goes
down like candy.
The establishment serves
generous portions that range
from pub-style food to upscale, like the beef Wellington
appetizer and a nut-encrusted
sea bass, both of which we enjoyed immensely.
Especially surprising was
the Wellingtons tender bits of
beef suspended in a decadent
sauce and surrounded by delectable flakey pastry. The dish
is served with a dash of brandy
peppercorn sauce and barnaise sauce, as well.

Entrees come with a starch


and vegetable rather than
a-la-carte, like many area
restaurants.
The sea bass was heavily
crusted for a honeyed macadamia flavor and was served
with a generous portion of coconut flavored rice and cruciferous veggies. Between the
appetizer and entre we sampled the Caprese salad with rotisserie chicken, an oversized
salad that includes traditional tomatoes topped with fresh
mozzarella, plenty of greens,
asparagus, bacon, onions and
croutons, and a large portion
of chicken. The salad alone
was plenty of food for two, and
even made a delicious lunch
the following day.
In addition to artful entrees, there are burger options at Land Ocean, and any
beef burger can be substituted with buffalo, a lean alternative to beef.

or every 100 boys who enter
Boy Scouts, 30 will drop out
during the first year. And of
those 70 remaining, only four will
ever reach the rank of Eagle Scout. So
its a monumental accomplishment
when one family churns out not one,
but three Eagle Scouts three successful young men who have spent
hundreds of hours in meetings,
training sessions, on camping trips
and ultimately a Court of Honor to
earn Scoutings highest rank.
The Smith family has a long history with scouting, from dad, Davids
father and grandfather, who were
Scouts, to David, who was a Scout
as a kid, and has been an assistant
Scout Master for several years.
Members of Troop 121, led by
John Hooten, the Smith boys, Craig,
23, Justin, 20, and Daniel, a senior at
Granite Bay High enjoyed nearly everything that Scouting had to offer,
especially the camping trips. The
boys are part of the Troops Unicycle Brigade, and they and their dad
have ridden their machines in numerous parades over the years.
Daniel, who will attend his Court
of Honor this month, enjoyed being
in a Patrol with his brother, Justin. His Eagle Scout Service Project
included partnering with Cycles 4
Hope, collecting donated bikes, refurbishing them, and even attending
events where Scouts helped Loaves
and Fishes clients obtain reconditioned bikes, or to repair or replace
parts on existing bikes.
We used Cycles 4 Hopes tools
to repair the bikes at Loaves and
Fishes, and we refurbished a
lot of spare parts to complete
the clients bikes, then we sent
them on their way, Daniel said.
David said that the event was obviously meaningful to the Loaves
and Fishes clients.

At six in the morning there was


a line of 70 people who needed to
get a bike, or hoped to get their bike
fixed, he said.
The Eagle Project is merely the
last step. The beginning steps start
around age 10 and continue until the
required Merit Badges are earned.
And earning many Badges isnt as
easy as a two-hour meeting or class.
For a single Badge, the requirements can take months, David said.
David and the boys mom, Sue,
knew their oldest son, Craig, would
make Eagle, because Craig and his
friends were very serious about
Scouting. But seeing the other two
boys achieve the rank was a surprise
that would make any parent proud.
Its hard to get three kids to something similar when there are so many
diverse interests, David said.
John Hooten has been exceptionally successful with Granite Bays
Boy Scout Program, and has seen
some 200 boys achieve Eagle during
his leadership.
Sue was thrilled to see each boy prepare and implement an Eagle project.

Troop121expects
an Eagle Project to involve at least 100 volunteer hours, she said.
In addition,
Merit Badges that
must be earned
along the way include life skills such
as cooking, first aid,
and water rescue. Scouts
are also required to earn a
Citizenship in the Nation
Merit Badge that involves a
test on the U.S. Constitution, as well
as a test on our nations government.
The Citizenship Badge required a
visit to an area judges chambers and
letters to the City Council.
The January Court of Honor where
two boys will receive the rank of Eagle, will include an official ceremony at which brother, Craig, will be
the Master of Ceremonies. Distinguished guests will include Supervisor Kirk Uhler, and Sheriff Bohner, as
well as other local dignitaries, family
and friends, and Scouts.

4. Is that Laminate? Laminate is one

this week as Scotty Henrichs
and Sam Cusano were named to the
National Football Foundation & College Hall of Fame Sacramento Valley Chapters All-Sac-Joaquin Section
football team.
The duo led the Grizzlies to a pair of
playoff wins in 2015 including an incredible 18-point comeback over topranked Grant in the second round of
the postseason. For their efforts, the
conference awarded each of them
with an honorable mention nod.
Both of those guys are very deserving, Granite Bays coach Jeff Evans said. We were hoping they would
rank a little higher, especially Sam,
but there are a lot of great players in
this area so its great for them to be
recognized.
The elite teams, which include players from all divisions section-wide
from Merced in the south to Yuba City
in the north, were selected by a committee of high school football coaches
representing both the north and south
regions of the section.
In his final year, Henrichs, who
played receiver for the Grizzlies, tallied 58 receptions for 949 yards (16.4
per catch) and eight touchdowns all
team-high marks. On top of his honorable mention All-Section award, Henrichs was a unanimous All-SFL First
Team selection and was named the
teams offensive MVP.
Surprisingly, his senior season almost never happened after he came
down with a rare disease midway
through his junior year.
Honestly, we are just happy hes

alive, Evans admitted. With everything that hes been through, were
happy he pulled through and hes able
to go to school because there was a
time where he wasnt. He completed a
lot of his schoolwork and took his tests
while he was in the hospital.
His return has brought about a resurgence on the gridiron he set a
team record in receptions and in
the classroom as he earned a 3.5 GPA
this past fall.
Any superlatives that we use for
him isnt enough, Evans confessed.
We cant say enough about him. He
comes from a great family and it was
a grind for them to watch that happen to him, and it was a grind for us as
well. But to have him be ready for week
one, and hardly step off the field this
season, is just incredible.
Henrichs is a three-sport athlete
who could sign at the collegiate level
in either baseball or football. On top of
his receiving duties, he was the teams
kicker and he set a new team record
with a perfect point-after-touchdown
percentage this year (36-for-36).
Another member of the Grizzlies
was part of the honorable mention list
this year. Cusano,who played safety for the Grizzlies and often saw carries as the teams reserve running
back, earned All-Section honorable
mention on defense. En route to AllLeague First Team honors and the
teams defensive MVP award as a safety, Cusano registered 116 total tackles,
6.5 tackles for a loss, three forced fumbles, three fumble recoveries and added a pair of interceptions.
Athletically, he has all the tools to
be a big-time collegiate athlete, Evans confessed. But unfortunately, he
hasnt gotten some of the attention he
deserves because hes not 6-foot-1. If

Sam Cusano joined his teammate on the All-CIF Sac Joaquin Section Football
team honorable mention list this week after an impressive senior season at
Granite Bay High.
he was, they wouldnt even be able to
touch him he would have his choice
to go anywhere in the country.
On top of his role as a defensive stalwart, Cusano saw his workload increase on offense as the year grew old.
He finished his senior season with
the teams top average at 5.84 yards
per carry as hecarried the ball 62
times for 362 yards and scored three
touchdowns.
It meant a lot to me because Ive been
working so hard to get to this level, and
I know it meant a lot to Scott with everything that hes been through, Cusano explained. I was really excited
when I heard we were both honored.
Cusano, whos also a multi-sport
athlete,was a standout in the classroom as well as heaveraged above a 4.0
during the football season and owns a
cumulative 4.0 GPA.
Hes an ivy-league type of kid
hes special, Evans added. Hell be
going to a great four-year university no
matter what, but its just a question of

where. Because hes not 6-foot-1, hes


been overlooked as a Division I athlete
in football and hes getting a little anxious, but the process usually doesnt
wrap up until February.
Cusano has interest from Sac State,
Wyoming and UC Davis among others
to join their football programs, but because of his successful rugby career,
hes gained significant attention from
Cal Berkeley and could sign with a Division I program to continue his career
on the pitch next year.
Luckily for him, because hes
worked so hard in both sports, hell
have his choice of where he wants to
go, Evans added.
Player of the Year honors went to Ryan Robards of Elk Grove as he led the
Thundering Herd to the CIF-SJS Division I title game. The 2015 back of the
year was Ian Book of Oak Ridge with
Folsoms Jonah Williams earning Lineman of the Year honors.

he Meyer lemon is out to change everything you thought you


knew about lemons, particularly when it comes to taste. With a
thinner peel, less acid and a more floral scent than other lemon
varieties, Meyer lemons are the perfect sweet addition to any winter recipe. Typically in season from November until March, they are
now available at local stores and year-round PlacerGROWN farmers
markets.
Even sweeter than their flavor, however, are the many health benefits available for those who select this delicious treat. Lemons are
known for containing vitamin C, a water soluble vitamin/antioxidant found in many fruits and vegetables, which means they help
protect against inflammatory diseases such as Rheumatoid Arthritis and some cancers.
A hybrid between a conventional lemon and a mandarin orange,
there are many diverse ways to incorporate the Meyer lemon into
your diet including cocktails, fruit salads, lemonade, marmalades,
sorbets or granitas, with fish, and of course combined with other locally sourced PlacerGROWN ingredients. You can also try this sweet
fruit in the Meyer Lemon Shaum Torte recipe provided by local chefs
Joanne Neft and Laura Kenny in their book, The Art of Real Food.
Selection and Storage:
When selecting a Meyer lemon, be sure to ask your local farmer
for a heavier fruit as opposed to a lighter one, as its weight indicates
a higher juice content. Store the fruits in a plastic storage bag to prevent them from losing moisture. Place the lemons in a crisper to store
them for up to four weeks as the cold from the refrigerator slows the
enzyme reactions that cause ripening.

Shaum Torte
Serves 8. Recipe courtesy of The
Art of Real Food by Joanne Neft
and Laura Kenny
Ingredients:
4 large farm-fresh eggs,
separated
teaspoon cream of tartar
1 cups sugar
1/3 cup Meyer lemon juice
1 tablespoon Meyer lemon zest
1 cup whipping cream
Preheat oven to 275 degrees F.
Make a meringue by beating
egg whites until bubbly; add
cream of tartar. Continue
to beat until slightly firm.
Gradually add 1 cup sugar. Beat
until stiff and glossy. Spread
meringue in a well buttered
nine-inch glass pie pan. Bake 20
minutes. Increase temperature
to 300 degrees F. and bake 40
minutes. Set aside to cool.
To make filling, beat egg yolks
until lemon colored. Add
remaining cup sugar, lemon
juice and zest. Cook in a double
boiler until thick, stirring
constantly. Cool slightly.
Whip cream until firm. Fold
egg yolk mixture gently into
cream. Spread over cooled
meringue. Best refrigerated
24 hours before serving. Top
each piece of torte with a
heaping teaspoon of raspberry
or blackberry sauce or candied
lemon rind.

Diet and excercise trends for 2016

aving spent 30 years in


the fitness and weight
loss industries, I always
get a kick out of the revolution of resolutions that happen
when January rolls around.
Owning a weight loss center, I
know well get swarmed with
people wholl be dying to clean
and cleanse and drop the extra five to 15 pounds the season brings, not to mention they
weight they already had on.
The problem with those New
Year resolution diets are that
most people will do what they
know has worked for them in
the past. Sounds like a good
thing in theory, but as many
of us know, it doesnt always
work a second or third time
around. The reasons are many, but mainly, just like people
change, so do diet and exercise trends. An expert will tell
you that whats worked in the
past may actually make your
problem worse in the long run.
A perfect example is the USDA food pyramid that fell to
the wayside in 2010 because,
well quite frankly, it was making us all fat, there is new exercise and nutrition information
coming out all the time. Thus
the reason to seek out a qualified coach, nutritionist or personal trainer whos knowledgeable and up to date in diet, exercise, food and behavioral science, (yes behavior, because it
starts with our thoughts.)
As with any expert, its our
job to research the latest information and make sure youre
on the right track!
As I see it, here are some of

Alternative Proteins
The growing types and
sources of proteins on the market will allow you to pick your
proteins depending on your
bodies wants and needs. Understanding the difference between whey, soy, rice and pea
protein will be key in determining what youll want to use. The
big hit for 2016 will be pea protein, which is already a staple in
many health food stores.

Our concerns about drought,
food waste and other natural
phenomena will influence our
food preparation and produc-

tion more. I see more individuals growing gardens more than


ever before and with new items
like the Garden Tower, (a plant

apartments to grow herbs and
garden vegetables more easily.

acquainted with sports nutrition types of products like protein bars, drinks and supplements. 2016 will be the year we
start looking at sports supplements as another way to lose or
gain body fat & muscle.

Were more and more interested in the stories we see on
face book of our friends and
families results than ever before. The old adage still holds
true, if it worked for them, it
may work for me! Were also
watching those whove gained
it back, realizing we may not
want to jump on the same wagon as our quick fix friends
have done so many times and
not succeeded. Well look for
people to follow who are REAL
and genuine and in it for the
long haul.

Less Genetically
Modified Foods
Education will increase
three fold when it comes to genetically modified foods and
well start considering what
were putting in our bodies in
the way of modified genetic organisms. This will help us look
for more non modified sources and get back to the basics of
eating more natural sources of
meat, dairy and grains.

Cooking in and
eating out less
The rise of food-centric media has sparked new interest in
cooking, not only for the sake
of nourishment, but for the
purposes of sharing ones creations via social media. The
price of fast food is on the rise
and as the dollar value meals
are becoming less available
parents are realizing that their
not only hurting their child
(with junk food,) but its also
making a bigger dent in their
pocketbooks. The grocery
stores have caught onto this
and are now adding more and
more options for healthy frozen dinners and side dishes.

top exercise trends for 2016!
Wearable Technology. Includes nutrition and fitness
trackers, smart watches, heart
rate monitors and GPS tracking devices.
Body Weight Training. Uses
minimal equipment, making
it more affordable. Not limited
to just push-ups and pull-ups,
this trend allows people to get
back to the basics with fitness.
High-Intensity Interval Training. Short bursts of activity

followed by a short period


of rest or recovery. These
exercise programs are usually
performed in less than 30
minutes.
Strength Training. Paired
with aerobic exercise and
flexibility, this is an essential
part of a complete exercise
program for all physical
activity levels and genders

because someone says they
are an expert or has won their
own weight loss battle, doesnt
mean they are qualified to
help you!.

ts been said that no two


snow flakes are alike. That
in itself blows the scientific mind, but wouldnt it be
nice if we could say that about
all snow based equipment
companies? I mean across the
board in sales, knowledgable
service, availability of product and price? Let me do the
footwork for you, and spotlight
one very, very different snowflake . Nestled in a nondescript strip mall located at 212
Harding Blvd. in our fair city
of Roseville, sits Clarks Snow
Sports. Dont blink twice, because you might miss it. But I
found this family business of
26 years quite by accident. Im
always looking for cool, off the
path places that need their story told so in I go and meet self
described snow farmer Steve
Clark.
I have to ask, whats a snow
farmer? Steve explains.Well,
we are just like food farmers because we depend on the
weather for a good season. No

rain, no food, no snow, no business. Makes sense. On to the


history. Steve is the youngest
of seven kids growing up in a
Southern California beach area where skateboarding, surfing and snow skiing go hand
in hand. This is way before
the snowboarding era. Steves
Granddad had early roots with
White Stag and Dad with P.F.
McMullin Company, both
snow skiing apparel companies. Steves Fathers advice to
him was if you want do something fun and make money,
go into the snow business.
Right at this same time a revolution in snow sports was
happening. A group of surfers
and skateboarders got the idea
of making a board that would
be like a surf board but smaller and a skate board but bigger
with no wheels which would
be able to snow surf! Eureka! A new sport was born and
Steve was on the cutting edge.
Fast forward to 1989 when
Steve took his fathers advice

and moved his young family to Sacramento to get away


from the LA rat race and closer
to where the really good snow
in California was located, the
Sierra Nevadas. He opened a
little snowboard shop on Sunrise Blvd. to cater to the new
kids on the slopes - the snowboarders. At first this group of
winter rouges were considered
a danger to the established skiers at the resorts. They didnt
know or care about ski etiquette, they talked funny with
slang that was carried over
from surfing or skateboarding
and they dressed the way they
wanted, sometimes in cut off
jeans with no regard to the elements. In other words Steves
customer base.
On the ground floor of this
new snow sport revolution,
Clarks listened and learned
what their clientele needed.
