Introduction

With the focus on high speed and high yield,

it is inevitable to look at a production facility as a
fully interconnected production chain. High speed is
considered to be 13.000 to 15.000 bph. To achieve
these high speeds, adjustments to all the production
steps, from start to finish, need to be incorporated.
Note that high speed lines are limited by external
quality control standards as seen in the EU and US.

The machine focus era 1960ies to 1990ies

Another development that came with the introduction of high speed lines is the use of camera systems and automation (Machine Execution systems ERP
integration) to shorten lead times and further decrease
the labor contingent in the whole production process
(both on production as well as on management level).

This period is characterized by smart technological

innovations with the goal to increase production capacity and yield. The focus in this era was on minimizing
labor participation through mechanization and later
on automation. Reducing labor cost was the most
economic force driving the increase in mechanization.

Besides the integrated wall-to-wall solutions

much more attention is needed for customer specifications. The role of retailers has become much more
dominant and processors are inclined to follow the
demands of their customers.

Processing 1.0

The focus was on developments on machine i.e.

mechanical level. The innovations increased the capacity of processing plants, increased efficiency and
yield. The end product typically was the griller ready to cook. The process to process a live bird to
a griller is nowadays known as primary processing.
Typical solutions that were developed are machines for scalding, plucking and evisceration. These
solutions have now reached the highest level of development with respect to speed and yield.

Integrated solutions with high consumer

focus 1990ies to present

For us, as solutions provider, we need to deliver flexible solutions, next to integrated, high speed
and high yield solutions. Multiple consumer products need to be processed within the production
facility. Grillers in the morning, drums in the afternoon and deboned whole leg meat in the evening.
All this with extremely short lead times.
Also the management of the complete product-life-cylce is of growing importance: Looking at total cost of ownership is essential and even leasing a
total production facility might be a viable option in
the near future.

Processing 3.0
Responsibility focus the coming decades

Han Defauwes

For the coming period we anticipate two mayor

trends:
Growing insufficiency of food, water and
energy on a global scale
Growing consumer power to demand for
responsibly manufactured products with a
minimum of carbon footprint, highest animal
welfare and international legislation that will
ensure food and manufacturing safety
