Baglioni Hotels is about to land in the Maldives with the opening of Baglioni Resort Maldives.
Located on the island of Maagau, in the Dhaalu Atoll, this exclusive resort of 96 villas surrounded
by turquoise water, velvet white sand and the tropical nature of one of the most spectacular

The property is schedule to open in 2017 and we are now hiring:

Executive Chef (Italian)


He/She must be experienced in Italian Cuisine ; with a good knowledge of Japanese food
preparation ; managing and training the kitchen brigade to deliver an excellent Guest Service.
Executive Chef would also be required to manage food cost controls. Specifically, He/She will be
responsible for performing the following tasks to the highest standards:

DUTIES AND RESPONSIBILITIES:


Responsibilities and duties for this position shall include, but not limited to the following areas and
activities. At management discretion, direction may be given for tasks outside the scope of work.

Menu creation Italian & Japanese cuisine)


Manage and train the kitchen brigade effectively to ensure a well-organized and motivated
team
Ensure consistency in quality of dishes at all times
Manage customer relations when necessary, in the absence of the Chef
Conduct training for the team
Manage food cost controls to contribute to F&B revenue
Ensure compliance with food hygiene and Health and Safety standards Checking all assigned
food outlets (restaurants, buffets, action stations, and food displays) for creativity, quality,
cleanliness and food safety

Requirements and Skills:

The Ideal Candidate must be an Executive Chef for last 6-8 years and has a background in 5 star
resorts and signature fine-dining outlets.
Experience with Italian cuisine is a must
Possess good knowledge of overall F&B operations
Prior remote island/Indian ocean experience a plus but not a pre-requisite
Japanese food preparation is appreciated
Must be strong on managing the costs
Able to prepare buffets for breakfast and conferencing
Should be highly creative and introduce new menus as well as promotions
Must be a team player
Strong experience working within multi-cultural environment
Pushing the boundaries of excellence in production, cost management and service delivery
Excellent grooming standards Excellent planning and organizing skills
Relevant qualifications for role Ability to work a variety of shifts
Approaches food in a creative way Strong supervisory skills
Positive attitude Good communication skills Committed to delivering a high level of customer
service.
