Fried Rice

Ingredients :
2 cups enriched white rice
4 cups water
2/3 cup chopped baby carrots
1/2 cup frozen green peas
2 tablespoons vegetable oil
2 eggs
soy sauce to taste
sesame oil, to taste (optional)

Instructions :

In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20
minutes.
In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and
drain.
Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack
in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce,
and toss rice to coat. Drizzle with sesame oil, and toss again.

Ingredients :
1 kilogram beef shank (Indonesian: dagingsengkel)
500 gram beef tripe (Indonesian: babatsapi)
5 stalk lemon grass, bruised and knotted
3 bay leaf
1 liter fresh milk
1 liter water
500 ml thick coconut milk
1 tablespoon salt
Grind the following into spice paste
5 shallot
4 cloves garlic
1 inch ginger
2 inch galangal
5 candlenut (Indonesian: kemiri)
Garnishes and accompaniments
2 tomato, cut into small pieces
2 potatoes, cubed and fried
2 scallion, thinly sliced
2 tablespoon fried shallot (Indonesian: bawanggoreng)
emping (a.k.a. melinjo crackers)
10 kaffir lime
sweet soy sauce (Indonesian: kecapmanis)
steamed white rice

Instructions :
In a stock/soup pot, add beef shank, beef tripe, lemon grass, bay leaf, spice paste, and milk.
Bring to a boil, reduce heat and let simmer for 1 hour, or until the meat and tripe are tender.
Remove the meat and tripe from the pot. Let cool and cut to small bite size pieces.
Return the pieces of meat and tripe into the pot, add water, coconut milk, and salt and bring to a
boil. Reduce heat and simmer for another 30 minutes.
Serve sotobetawi in bowls. Garnish each bowl with slices of tomatoes, fried potatoes, scallions,
fried shallot, and emping. Squeeze 1 kaffir lime and drizzle some sweet soy sauce into each
bowl. Soto betawi is great accompanied with a plate of steaming white rice and a side dish of
acar.
