M
ore than 1.8 million unique living species have been identified on our planet, from
the elegantly simple, single-celled amoeba to the marvelously complex human being.
Among all this rich variety exist an abundance of species which are sources of intensely
nutrient-rich foods. Some of these foods have held significant, even divine status in
the histories of Earths cultures. It may sound unbelievable, but at least one of these foods
was even used by some as currency, just over one hundred years ago.

More recently, a number of these exceptional foods have been given a somewhat
commercialized but not inappropriate new name: Superfoods.

Today we are privileged to enjoy abundant opportunities in the natural world around us.
Thanks to current knowledge and technologies, we can reap the benefits of the natures
most nutrient-rich ingredients from the wildest Amazon jungles, to the remote Tibetan
highlands.

How do you like the idea of having a meal, right at your own table, made up of the finest

A short history of cacao:
Money does grow on trees
Peruvian mythology includes a plenty of stories relating to cacao.
According to one, the god of storm, Khuno, destroyed a village with
heavy rain to punish villagers who had burned acres of lush jungle,
seeking to increase their crop lands. When the terrible storm had
passed, all that was left was a solitary cacao tree, standing alone amid
the devastation. The event taught the villagers a vital lesson about
living in harmony with nature.

It is believed that cacao use may have begun as early as 15,000 years
ago. The earliest clear archeological evidence shows cacao use in
the area of modern Honduras, at about 2,000 years BC. The first
known cacao-using civilization was the Olmecs, who lived in an area
of what is now Mexico.

The Olmecs are best known historically for the huge stone sculptures
they quarried and carved, and for originating the word cacao.
After the Olmecs, the Mayans were known to use vast amounts of
cacao. Mayan history even tells of several gods connected with the
substance Chac, Hobnil and Ek Chuah.

Mayan shamans utilized cacao for various purposes, including a


variety of rituals. Once the Maya culture collapsed, the Aztecs
adopted the old Mayan cacao traditions. The Aztecs generally
linked cacao with prosperity, quality and nobility. The modern word
chocolate comes from the Aztec chocoatl, which meant bitter drink
or bitter water.

European explorers were introduced to cacao when Columbus first


traded with the Aztecs. Columbuss crew at first mistook cacao beans
for almonds, and wondered greatly at the Aztecs fervor in gathering
up fallen pods. What the explorers did not realize was that cacao

An interesting and radical twist in cacaos history occurred in 1519,


when Hernan Cortes landed in what is now Mexican territory. Cortes
kidnapped famed Aztec chieftain Montezuma, ruler of the city of
Tenochtitlan in the vicinity of our modern Mexico City. Montezuma
is known to have had a severe chocolate addiction. Tales recount
his habit of imbibing an incredible 50 cups of hot chocolate before
visits to his harem!

Cacaos value among the Aztecs might best be illustrated by accounts


of Spanish raids on Montezumas treasure chambers. There they
found neither gold nor silver, but rather vast stores of cacao beans,
estimated at some 960 million pieces! In fact, cacao beans were
honored as valid currency in the Mexico City region until as recently
as 1887.

When Cortes returned to Spain in 1528, he was probably the first


to bring cacao beans to Europe. The event had many far-reaching
consequences that Cortes never could have imagined.

Europeans were the first to come up with the idea of mixing white
sugar with cacao. American Indians had traditionally favored bitter
cacao and chocolate, though. And today we know how white sugar
