hot dogs? Americans will eat about 150 million hot dogs this Independence Day, many of

July is also furniture month in our warehouses. On page 50, Anita Thompson offers
tips on using accent pieces such as rugs, mirrors, side chairs and console tables to define

IN OUR FOOD coverage in this month’s Connection
you’ll find a story on great toppings for hot dogs, chosen
of course to give you good ideas for the Fourth of July
and summer meals. But the simple hot dog also holds a
unique connection to Costco.
While I’m sure that nobody here set out to propose
the hot dog as a symbol for this company, we have

Connection. reasons for this fame are twofold: The buck-fifty meal
consistently gets top mention in various “great bargain
meal” polls, and it’s a modern wonder of sorts how Costco can still offer it at the same
price as when it first appeared in 1985.
Here’s the answer: efficiency, a touch of genius and a strong dose of motivation—
nobody in the food department wants to be the person who couldn’t maintain that $1.50
price. Our Kirkland Signature™ hot dogs, for sale in the Food Courts and in our cooler
cases, are produced in an expansive processing facility in Tracy, California. Opened three
years ago, the 200,000-square-foot building is a clean, efficient, no-nonsense, state-of-the-
art hot-dog- and hamburger-producing machine. This year the plant will make some 300
million (yes, million) hot dogs for Costcos in the U.S. and Canada. At this time of the
year—busy hot dog season—the plant is running 24/7: two shifts of production and one
shift of sanitation. Even so, we expect that Costco will have to add another hot dog plant
somewhere in the U.S. in the coming years.
Around the world, from the UK to Australia, members enjoy Kirkland Signature hot
dogs in every Costco. They’re as popular in Japan as they are in the U.S.—same basic hot
dog, about the same bargain price.

public health achievements of the 20th cen-
tury. Today, many Americans face barriers to

on both oral and systemic health are signifi-
cant, and can even include death. In light of
these facts, to eliminate water fluoridation
would be reckless and only hurt the most
vulnerable in our society.

Trail Race, I heavily utilize and rely upon my
local Mayfield Heights, Ohio, Costco for fresh
food and event supplies. It is always exciting to
see fresh and organic products, vegetarian

CROWDFUNDING ONLINE IS a popular way for
entrepreneurs to raise money for projects and com-
panies. It can be a way to make dreams come true,
start a new business or raise money for a cause.
Whether you’re thinking of investing in a project or
launching one, here are some points to consider
before getting involved.
How it works
During an online crowdfunding campaign,
money is contributed by a number of individuals or
investors in order to support the financing of a proj-
ect or company. There are different types of crowd-
funding—the types of crowdfunding this article
focuses on are reward-based and investment-based.
In reward-based crowdfunding, supporters get a
reward in exchange for their contributions. Rewards
vary and can range from a thank-you tweet to a pre-
ordered product to a role in a TV or film project.
In investment-based crowdfunding, accredited
investors who fund a business have a potential for
financial return or ownership stake in the company.
Since crowdfunding is relatively new, the laws
governing it are still taking shape. The Securities
and Exchange Commission is hammering out the
details of the Jumpstart Our Businesses Startups
(JOBS) Act, which gives small businesses and start-
ups greater access to capital.

Canceling credit card

What is the best way to cancel my credit
card, which charges a fee? I hate paying the
fee, but I understand canceling credit cards
hurts your FICO score. I do have a very good
credit score. Also, should I open a card that
has no fee?

YOU ARE CORRECT that canceling the card can
hurt your FICO score. But there is a work-around.
Thirty percent of your FICO credit score is based on
amounts owed. A key part of that looks at how much
of your total credit card limit on all your cards you are
using. The lower the better. It is best to aim for a
credit utilization of 30 percent or lower.
So let’s say you have two cards, each with a $5,000
credit limit, for a total credit limit of $10,000. You use
only one of the cards, and the balance is $3,000. That
means you are utilizing 30 percent of your total credit.
If you cancel the card you don’t use, your total credit
limit will decrease to $5,000, so with the same $3,000
balance your utilization ratio has shot up to 60 per-
cent. That can hurt your FICO score.
Before you cancel a card, apply for a new no-fee
card with the same credit limit. Then, when you can-
cel the fee card, your credit utilization ratio will not
change. Or, you can ask that the credit limit on any
card you are keeping be raised to offset the impact of
the lost credit limit on your canceled card.
We are senior citizens, still working. We have
no debt (houses and cars are paid off). Most
of our money is in an IRA or 401(k). There are
some regular savings and CDs.
Should we put everything in our revo-
cable living trust? (We have a separate trust
account.) I heard that IRAs and 401(k)s are
trusts already; can they be put in the revo-
cable living trust? Should we just put our
houses and savings and CD in the trust? If
something happens to us, can our children
get the money from our revocable living
trust easily, as if they are not in the trust?

WITH A REVOCABLE living trust you have com-
plete control over how the assets inside the trust are
used. You can sell them, spend them or just leave
them be. It is not at all difficult accessing money in
a revocable living trust.
The advantage of funding the trust with certain
assets is twofold. First, if you become incapacitated
and need someone you have appointed to step in and
handle your estate, it can be seamless with a trust.

incapacity clause.) Second, when you die, a trust will
make life so much easier for your beneficiaries. As
you note, if you have just a will it is likely the estate
would first have to go through the probate court pro-
cess. There’s no probate with a revocable living trust.
I think it is smart to have your trust be the owner
of your home. Retirement accounts, such as 401(k)s
and IRAs, can’t be owned by the trust, but the trust
can be the beneficiary of those accounts. Because
you are married, you each should be the primary
beneficiary for your retirement accounts. But you
can make the trust the secondary beneficiary. For
readers who are single: Go ahead and make your
trust the primary beneficiary of your retirement
accounts, and place your non-retirement invest-
ments inside your trust as well.
A company my husband worked for five
years ago gave him and other employees a
company credit card; the company went un-
der and everyone was let go. However, for a
couple of years we were pestered by collec-
tion agencies trying to get us to pay the bal-
ance on the card account. My husband did
not sign for the card personally and the col-
lection companies would never send us veri-
fication showing how he was responsible
for this debt. [The collection efforts] finally
ended, but it still is affecting his credit score.

MOST LARGE CORPORATIONS assume 100
percent liability for charges on a business card, but it
is important to realize that businesses can also
choose a corporate card where liability is shared
between the corporation and the individual using
the card. It sounds like your husband unwittingly
fell into the latter category. That should be a wake-
up call to all readers with a corporate card: Check
what your liability is. Your business office should be
able to get you a copy of the card agreement (or
point you to where to find it online).
At this point, time is your best help. Negative
information on a credit report is never permanent.
With each passing month and year from the time a
negative event enters your file, its impact fades. So
the impact should already be receding as a factor in
your husband’s credit score. As unfair as this is,
focus on what you can do to help his score rebound
even faster. Not carrying credit card balances always
boosts a score, so if you have some unpaid balances,
get that under control right now. And pay every bill,
not just your credit cards, on time every month. C

about which tech tools are best for taking notes, writ-

percent of people have allergies to animals.
Some allergy sufferers have severe reactions,
particularly with asthmatic attacks. Often pas-
sengers with animal-induced asthma don’t
anticipate an animal on a plane and may have
packed their medications in their checked lug-
gage rather than having them on hand.
There have been cases of severe asthmatic
attacks occurring in such situations. Likewise,
flight attendants with animal allergies often
don’t know when they might be exposed to
pets on planes and could become incapacitated
in such situations, making it dangerous to all
the passengers on the plane.
It has been argued that seating passengers
with allergies away from those with pets is a
viable solution, but this is not necessarily true.
There is evidence that the air circulation in an
airplane would allow cat dander to be spread
throughout the entire ventilation system.
Putting a buffer zone between allergic passen-
gers and cats on the plane is likely to be ineffec-

lem is not banning pets from passenger cabins
on airplanes. While the safety of passengers is
paramount in any situation, pets are not safe
traveling in the cargo holds of planes, and pet
owners deserve as many options as possible.
Cargo holds are dark, noisy, hot or cold,
poorly pressurized spaces where pets receive no
comfort or supervision during flight. These
stresses, added to the risk of mishandling by
overburdened airline employees, can quickly
push a pet to dangerous levels of stress. A quick
review of incidents detailed by the United States
Department of Transportation shows that
nearly every week pets are lost, injured or killed
in transit and that the vast majority of these pets
are in cargo holds.
Restricting pets to cargo holds places an
unnecessary burden on families whose pets are

CELEBRITY NAIL STYLIST Jenna Hipp
doesn’t believe in the old adage “Beauty is
pain.” So when she figured out that the prod-
ucts she used caused her to have severe nose-
bleeds, dizziness, headaches and rashes while
working on a client for Teen Vogue in 2006,
she made a vow.
“I leaned over to get a better view, only to
have my nose gush blood all over her hands. I
was traumatized, as I’m sure, so was she. It was
obvious the cause was the polish; I had been
breathing in the fumes for most of the day
with back-to-back clients,” says Hipp, who at
the time declared, “This is not OK! I’m not
going to fill the body with toxins to make
myself or anyone else feel more beautiful.”
Hipp set out on a huge undertaking: to
create awareness of the need for a safer prod-
uct so that nail polish companies would start
changing the formulations.
“As soon as I began my research, I started
realizing how bad some of these nail products
and ingredients actually were,” she tells The
Connection from her home outside Hollywood.
“I had no problem publicly saying, ‘Hey, these
chemicals are bad for you. Don’t use them!’ ”
Hipp’s commitment to this cause
earned her the trust of celebrity clients,
such as Lea Michele, Emily Blunt,
Kirsten Dunst, Jennifer Garner and
Jessica Alba, and the respect of the
nail industry. Her eponymous prod-
uct line, which includes “five-free”
nail polish collections (free of five
chemicals: dibutyl phthalate, form-
aldehyde, formaldehyde resin, tolu-
ene and camphor), launched
through her partnership with
HATCHBEAUTY and Costco’s
Beauty’s Most Wanted campaign.
Life’s a beach
The nosebleed episode was not 32-year-
old Hipp’s first eye-opening moment regard-
ing the importance of a healthy lifestyle. When
she was a child, her parents taught her to con-
serve and respect nature and natural elements.
After her parents divorced when she was 3
years old, her early childhood with her mother
in West Virginia was filled with camp-
ing, fishing and get-togethers sur-
rounded by family, including her
three older sisters.
“I’ve always been a daddy’s
girl, though, and would have
traveled anywhere to be near
him,” she says about her father, who
was a missionary. “Fortunately for
me, that anywhere was Paia, Maui, a
cool, laid-back beach town on the North
Shore. It was perfect.”
Hipp moved in with her father at about 8
years old to a home that was a 7-by-13-foot
room with a bunk bed and an outside shower.
She recalls her father spearfishing for their din-
ners, and passing fields of sugar cane as he
walked her to her elementary school class. “I
was really lucky to have such an amazing child-
hood and be so close to the beach,” she says.
Hipp was home-schooled most of high
school in a one-room schoolhouse for five
hours a day with no breaks, which she enjoyed
because it gave her time to get out in the water
to surf before other children arrived home
from public school.
“School wasn’t really my thing, though,”
she says. “I couldn’t wait for it to be over so I
could get to work in the real world.”
In addition to introducing her to a
healthy lifestyle, the island opened up other
opportunities. Hipp began modeling at age 15
and knew that she wanted to pursue a career
in the beauty industry. When it came to mod-
eling, she realized she might not measure up,
so she began her quest to find a career that
would keep her in this field.
“Let’s be realistic here. I’m never going to
be [5 feet 11 inches] and I’m not Kate Moss,”

says Hipp, who is a little over 5 feet 5 inches.
“The little bit of modeling I did as a teenager
was a great introduction into the industry, but
it was obvious the career was never really
going to go anywhere. I set out to discover
other areas in the field because I knew right
away fashion was the world I wanted to be in.”
Living the dream
In 2000, at age 18, Hipp moved from Maui
to larger Oahu to pursue her dream of becom-
ing a makeup artist. She waited tables and
applied makeup for Estée Lauder to pay her
rent. Her experience of being on photo sets
while modeling made her aware of creating the
perfect photo shoot, so she began working with

“The great thing about Hawaii is
that there are always productions going
on, whether a magazine shoot or TV
show,” she says. “There’s not near as many
hair, makeup [and] nail artists as there are in
Los Angeles, so there’s not the harsh compe-
tition. If you have any ambition ... you have a
good chance of a very successful career.”
But Hipp’s goal of becoming a makeup
artist led to another opportunity. Her experi-
ences in the beauty industry, and her drive
and determination, pushed her to want to be
the boss. Two years later, she started Hipp
Artist Management, a small production com-
pany that organized print photo shoots and
represented beauty industry clientele, such as
models, photographers, makeup artists, hair-
stylists and wardrobe stylists.
“When I started working as a makeup art-
ist on set, I realized my attention was pulled in
so many other directions,” she says. “I was
beyond curious about everyone else’s job and
how it worked. Being a makeup artist let me
be a fly on the wall and act as an observer. I
was fascinated with the production side of

things, was in awe of photographers and felt
sorry for models who had been taken advan-
tage of. Opening an agency that encompassed
all of these things just made sense.”
Hipp loved the rush of scouting new talent
and shopping clients around to top agencies in
New York and Los Angeles. On her first visit to
Los Angeles she had no intention of moving
there, but when she arrived it was clear to her
that’s where the company needed to be.
“It was just something I knew internally;
I just knew it was meant to be for me,” she
says. “I just knew I needed to be here.”
Hipp went home to Hawaii, packed up her
belongings and moved to Hollywood two
months later with her cat, $2,000 to her name
and the knowledge that she would have to
make it on her own, which gave her the moti-
vation to succeed. In LA, she began represent-
ing mostly celebrity, beauty and fashion
photographers; threw herself into a world of
contracts and negotiating; and landed interna-
tional campaigns and magazine editorials for
her photographers.
A new direction
Wanting to know the industry, Hipp went
undercover with an alias and began working
for other agencies as a makeup artist assistant,
where she saw another expanding market:
nails. After finding a mentor, she made the
difficult decision to let her management com-
pany go a year after bringing it to Hollywood,
so she could pursue being a nail stylist.
“My dad always taught me to work
smarter, not harder,” she says. “So upon dis-
covering that nails was virtually an untapped
market, I made it my mission to make the
position not only an essential part of a pro-
fessional photo shoot, but I wanted the
manicurist position to be seen as elevated

and respected.”
In 2006, Hipp started out strong in the
nail industry with her first job on the set of
Vogue magazine, and then spent several years
building a name for herself as a nail stylist
among celebrities, for high-end fashion mag-
azines and in the beauty industry.
“Hopefully my clients would say I’ve
raised the bar regarding the quality of prod-
ucts, created new and higher expectations for
performance and have established a prece-
dent for excellence,” Hipp says.
A polished act
In 2009, Hipp partnered with RGB
Cosmetics to create HIPPxRGB, a five-free
nail polish collection with various shades of
nude to match all skin tones. The collection
was wildly successful and earned several
awards in 2012, including the Genius Award
from Elle magazine and best in beauty awards
from Nylon and Essence magazines.
“HIPPxRGB was created out of sheer
necessity,” says Hipp, who explains that the nail
trend at the time was very basic. “Even five
years ago, you would never find nail art … on
a cover of a magazine. The standard was sheer
pink or classic red, no matter what.”
In 2013, Hipp partnered with Costco
and became part of the Beauty’s Most Wanted
campaign, launching her five-free What’s Hot
Now Nail Collections in the warehouses. The
latest additions to the collections are The New
Brights and The New Moderns. “I’m so
excited to be able to offer a product of this
caliber at this price—it’s just unbelievable to
me,” says Hipp, who feels privileged to have
her name alongside Costco’s.
Family support
Hipp says her husband, David Muller,
who is a professional photographer, keeps her
calm, cool and collected while she continues
to pursue her dreams. Along with their
9-month-old son, Max, they live in Toluca
Woods, where they share their goals, careers
and future.
“[David] is constantly encouraging me
and listening to my crazy ideas. I honestly
don’t know how he handles it, but thank God
he does,” she says. “We have an exciting life
together, and seeing him as a father has com-
pletely taken our relationship to the next level.
He’s an incredible dad.”
Hipp says becoming a parent changed
her as well, and although it may sound like a
cliché, becoming a mother was the most
amazing thing that has ever happened to her.
“[It’s] just another reason I’m so picky about
my products and the ingredient lists,” she
says. “It’s beyond important that I create
products safe for kids, moms, even women
who [are] pregnant and breastfeeding.”
Nailing Hollywood
Today, Hipp and her business partner,
Vanessa Gualy, are the creators of Nailing
Hollywood (www.nailinghollywood.com), the
world’s first agency to represent the industry’s
top talent among nail stylists specializing in
celebrities, editorial fashion, advertising and
product development. The pair created the
company two years ago when they noticed an
increase in demand for nail stylists in the beauty
industry and realized that nail stylist represen-
tation was an underdeveloped area compared
with hair, makeup and wardrobe stylists, who
had agent representation.
“Right off the bat, our artists were on
the set of every major magazine creating
custom, stylized nail art looks, which con-
tinue to trend around the world,” Hipp says.
“Our artists each have their own unique
style, which lands repeat clients like Miley
Cyrus, Lady Gaga, Kesha, Michele Williams,
Demi Lovato, Drew Barrymore and Jennifer
Garner. You can see our work on advertising
campaigns for Saint Laurent, Louboutin,
Kiehl’s, L’Oréal and Nordstrom.”
Hipp says the combined experiences she
gained running her own production com-
pany and her seven years as a nail stylist have
proved invaluable as she continues to use all
that she has learned.
“As a management company ... we person-
ally invest in the artist and strategize their career
to ensure long-term success,” she says. “The
agency is a dream come true. Nothing, and I
mean nothing, is more gratifying than seeing
true talent come to fruition and helping estab-
lish successful, lifelong careers.” C

Yin y ga: A fascia-nating practice

TWO YEARS AGO, after suffering a sports injury to
my hip, I found myself at a hot yoga studio, searching
for an activity that would aid my recovery. I was
surprised when the studio’s owner suggested I
attend not the heart-pumping, sweat-dripping
heated sessions, but her yin yoga classes: a
much slower yoga practice conducted at
room temperature.
While there are many styles of yoga,
two of the most popular styles in the U.S.
are hatha and vinyasa. Hatha yoga is
characterized by a series of poses that
involve standing, sitting and lying down.
The poses may be independent of each
other, and they’re held for several seconds. Vinyasa
yoga is a series of poses that are linked together through
transitional movements. This tends to be much faster
paced than hatha, but both types can be found in heated
or non-heated studios. Yoga has many facets, but from a
physical standpoint, these athletic versions focus on mus-
cle strength, which is why they are considered yang yoga.
In contrast, yin poses are usually done seated or lying
down, and they are held three to 10 minutes. What further

differentiates yin is that students are asked to relax their

muscles in a pose, which, ultimately, can increase mobility
and flexibility. For example, a yang-style seated forward
fold has you reaching for your toes, grabbing them if
you can and then pulling to bend deeper. In yin yoga, you
reach for your toes and then release the tension in your
muscles; your back rounds and your arms fall to the side.
This can result in appearing to be slumped over, depend-
ing on your flexibility (see Caterpillar). You stay this
way, allowing time and grav-
ity to draw your body
deeper. Not fidgeting
once you’ve found your
depth is also key to
this practice.

Why yin?
Yin yoga will not make you break a
sweat, but it is working some very necessary
areas of your body: the fascia, also called
connective tissues. “The fascia is the muscu-
lar fibrous connective tissue that’s envelop-
ing every muscle, but also every organ in the
human body,” says Dr. Robert Schleip, who
leads the Fascia Research Group at Ulm
University in Munich. He explains that this
web-like structure holds muscles and organs
in place, and also makes up tendons, liga-
ments and joint capsules. The fascia is cen-
tral to mobility.
“When you get older, literally, your joints
are stiffer, and your movement is more
restricted because the fascia that wraps
around and forms the joints, the fascia that
holds your bones together, that’s literally
becoming stiffer and less elastic,” says Paul
Grilley, an author and sought-after yoga and
anatomy teacher. “That is the aging process.”
Grilley, who is often credited with popular-
izing yin yoga in the U.S., tells The Connection
that this process occurs in arteries and even
vital organs throughout the body because the
fascia weaves through it all.
Schleip says that the action of releasing
the muscles in yin yoga poses allows gentle
tension to be placed on the fascia.
“[This stress] rebuilds the tissue, which
can help to reestablish your normal range of
motion, but also make the tissue stronger,
more resistant to breakage and damage as we

This is why yin yoga is often recom-
mended to complement other athletic activi-
ties, prevent or heal sports injuries and stave
off natural tightening with age.
Clark also explains that certain poses can
benefit internal organs by compressing and
massaging them, which can help improve
their overall function.
The yin yoga experience
Yin poses can feel intense after a period
of time, even to a seasoned yogi. A pose may
feel entirely different at the 30-second mark
than it does after five minutes.
“If you want to loosen up fascia, you can-
not do it aggressively, and you cannot do it
quickly,” says Grilley. “And you’ve got to be
patient to allow the tissues within your body
to adapt without injury to the gentle strain
you’re placing upon them.”
Yoga blocks, blankets and stuffed bolsters
are sometimes used to make a pose more
comfortable. Every body’s different, and peo-
ple may not appear or feel the same in a par-
ticular pose. Pain should never be a sensation
felt during practice.
“People going into fascia-oriented yoga,
they should leave any kind of performance or
achievement or ambition outside the door,
and first start with a body-friendly attitude,”
says Schleip.

ties that can help people relax and feel less
tense. Teachers may encourage students to
focus on their breath and calm wandering
thoughts (see more on meditation on page
35). Grilley says, “Just because you’re healthy
and you don’t particularly need to be more
flexible, doesn’t mean that mentally and
energetically and emotionally you might
not benefit from an occasional quiet, intro-
spective practice.”
On the rise
Clark and Grilley agree that while yin
poses have been around since the beginning
of yoga, this style has only recently caught on
in the U.S. Grilley attributes this to the rising

It’s been around for centuries and is integral to
the practice of Buddhism, yet, until recently, medi-
tation was often regarded as some strange, New
Age-y, Eastern mind-body thing. No more.
“If there is a medical magic bullet, other than
exercise, to help people over 50, it is meditation,”
says Costco member Dr. Jon Lieff, a geriatric psy-
chiatrist whose website, www.searchingforthe
mind.com, explains the science behind the prac-
tice. “Meditation increases memory and immune
function; decreases stress, anxiety, depression,
pain, inflammation; and is effective with cardiac
disorders.” The American Heart Association main-
tains that meditation can lower blood pressure,
reducing the risk of heart attack and stroke.
In our 24/7 digital world, rife with worry and

responsibilities, meditation has become a
popular refuge to promote healthy living
and healthy aging. It’s multipurpose, used
to reduce menopausal symptoms, help
prisoners with anger issues, treat post-
traumatic stress disorder, boost the con-
centration of Olympic athletes and lower
stress for breast cancer patients, dementia
caregivers and anyone else.
Dr. Josephine Briggs, director of the
federal government’s National Center for
Complementary and Alternative Medicine
(NCCAM), says that preliminary evi-
dence from a 2014 systematic review of
studies suggests that meditation may off-

set age-related cognitive decline.
In addition, results of a recent study
co-funded by NCCAM show that one day
of intense mindfulness by experienced
meditators may lead to biological changes in genes
that play a role in inflammation and pain. (Anti-
inflammatory and pain-relieving drugs, it turns out,
have similar effects on these genes.) Other neurosci-
ence data indicates that during meditation there
are measurable biological changes in the auto-
nomic nervous system and the electrical function of
the brain.
There are many types, but the two most common
are mindfulness meditation and Transcendental
Meditation (TM). The first focuses on the flow of
breath in and out of the body, concentrating on
what the person is experiencing without reacting or
judging. Mindfulness Based Stress Reduction
(MBSR) is a variation on the theme.
With TM, there’s a mantra—which can be one
word or a set of words—or an object to look at to
keep practitioners in the moment. Regardless of the
style, it usually involves a comfortable posture with
a straight back and attention through breathing,
with the goal of focusing and training the mind so
one feels calm, peaceful and even insightful.
Five years ago, Lori Keenan decided to take an
MBSR course at a local yoga studio. “I joined the
class thinking it would help with migraines and
pain management, but in the end the training was
transformational for my entire life,” says Keenan, an
Evanston, Illinois, public relations executive. “In
mindfulness meditation, there are three basic tenets:
Observe, accept and let go. Through the practice,
I’ve learned that I always have a choice. Rather than
simply react, I can respond thoughtfully. It’s not
foolproof, especially with three teenagers, but for
the most part meditation has made a huge differ-
ence in how I parent and live my life in general.”

BIPOLAR DISORDER is a mental illness
characterized by extreme mood swings,
from the lowest lows of depression to the
ecstatic highs of mania. It is often referred
to as manic depression.
According to the National Institute of
Mental Health, bipolar disorder affects
about 5.7 million American adults, with 25
years the median age of onset. Men and
women are affected equally.
The cause of bipolar disorder is
unknown, but frequently it occurs in rela-
tives of people with the disorder. There
is no clear cause for the episodes of mania
or depression.
The manic phase of bipolar disorder
may last from days to months, and those
affected may exhibit these symptoms:
• Easily distracted
• Little need for sleep
• Poor judgment
• Poor temper control
• Reckless behavior and lack of self-
control (substance abuse, sexual
promiscuity, spending sprees)
A depressive episode may include
these symptoms:
• Low mood or sadness
• Difficulty concentrating, remem-
bering or making decisions
• Eating problems
• Fatigue, lack of energy
• Pulling away from friends
• Thoughts of death or suicide
When depression and mania symp-
toms occur together, it is called a mixed
state. When symptoms occur right after
each other, it is called rapid cycling.
Episodes of depression are usually more
common than episodes of mania. The pat-
tern is not the same in all people with bipo-
lar disorder.
Bipolar disorder can be effectively
managed with a combination of medica-
tion and psychotherapy. If you think you or
someone in your life may have bipolar dis-
order, seek medical treatment right away.
Treating symptoms early may prevent the
disorder from worsening.

FEELING LESS THIRSTY these days? Subtle
changes to the body sneak up on us as we age.
For example, without even realizing it at first,
we may begin to cut down on our intake of
water at the very time we should be drinking
more. It’s important to be mindful of our
nutrition, especially during our later years.
“As we get older, our bodies get worse at
communicating to us our own essential
needs, like thirst and hunger,” explains per-
sonal trainer Jameson Skillings. So, even if
you don’t feel like it, you should be drinking
eight glasses of water every day.”
Fitness expert Moira Lanier recommends
eating well over the course of the day. She also
advises that it’s best to control portion sizes
and to not let yourself get too hungry, “which
can set the stage for poor choices and out-of-
control eating.”
Says Skillings, “For each meal, women
should have one palm-size [serving] of pro-
tein, one fist-size [serving] of vegetable, one
cupped-hand [serving] of carbohydrate,
whole grain or fruit, and one thumb-size
portion of healthy fat, while men should have
two servings of each.”

Broccoli and cauliflower are ideal choices
for veggies because they contain protein;
potassium; fiber; vitamins A, B6 and C; iron;
and magnesium, says Skillings.
Coffee alert!
Coffee, caffeinated teas and diuretics like
cranberry juice are considered “negative
water,” which means that for every 10 ounces
you drink, you actually lose about 20 ounces
of water from your body, Skillings says.
“These drinks don’t hydrate you—they dehy-
drate you,” he reports. “So, for every cup of
coffee or tea you drink, add an extra glass of
water to your day to make up for the loss.”
Satisfying your sweet tooth
Skillings says cacao nibs are a healthy
choice for dessert for older adults who crave a
sweet treat: They’re rich chocolate pieces that
are “high in fiber and are packed with antioxi-
dants, which help lower LDL [low-density
lipoprotein], decrease blood pressure, improve
platelet function and reduce the risk of heart
disease.” They’re also delicious; no wonder the
botanical name for cacao, Theobroma cacao,
means “food of the gods”! C

Avid grillers can be extremely opinion-
ated when it comes to the best way to season.
Dry rubs, mixtures of herbs and spices, are
sprinkled or “rubbed” into meat before it hits
the heat, and are usually associated with slow
smoking. Wet rubs, mixtures of dry spices
and sauces, are commonly used for open-
flame cooking. A marinade is a zesty liquid
mixture that both tenderizes and adds flavor.
It’s really just a matter of taste.
When mixing your own rubs and mari-
nades, check the “Best by” dates and use the
freshest herbs and spices you can purchase.
You may even decide to invest in a spice
grinder. Dry rubs keep well in dark, tightly
closed containers, so they’re easy to mix
ahead of time. Fans of wet rubs and mari-
nades generally mix their ingredients as Spice up your

MANY AMERICANS AGREE that July is not
complete without the classic hot dog. In fact,
on Independence Day Americans will enjoy
approximately 150 million of them, and during
hot dog season, which stretches from Memorial
Day to Labor Day, Americans typically con-
sume 7 billion (approximately 818 hot dogs per
second), according to the National Hot Dog &
Sausage Council website (hot-dog.org).
But when it comes to a discussion of
which toppings are best for those frankfurt-
ers, you may just start a civil war. Regional
preferences for hot dog toppings range from
plain to peculiar.
The Connection spoke with two hot dog
restaurant owners and Costco members—
Doug Sohn, co-author of Hot Doug’s: The
Book (Midway, 2013; not available at Costco)
and owner of Hot Doug’s in Chicago; and
Matt Jones, owner of Matt’s Hot Dog in
Seattle—who shared these six classic
American hot dog recipes.
Chicago-style hot dog. In the Windy
City, an all-beef steamed or chargrilled frank-
furter is set on a steamed poppy seed bun;
topped with yellow mustard, chopped white
onions, neon green relish, a dill pickle spear,
sport peppers and tomatoes; and sprinkled
with celery salt.
Coney Island hot dog. Also known as
the Coney dog, from Detroit, Michigan (not
to be confused with Coney Island in New
York), this steamed or grilled frankfurter is
topped with an all-meat, beanless chili, yellow
mustard and chopped white onions.
Sonoran hot dog. This Southwest hot
dog from Arizona, with origins from Sonora,
Mexico, is a frankfurter wrapped in bacon
and griddled or deep-fried, then placed on an

THE BED FRAME is a utilitarian product
that plays a modest supporting role in every
bed. But bed frames play a starring role at the
Hollywood Bed Frame Company, and mem-
bers of the Harrow family, who have led the
company for three generations, are passionate
about producing the best ones on the market.
Founded by Irving Harrow in 1945,
Hollywood Bed Frame Company actually
traces its history back almost 90 years, to
1925, when Los Angeles Bedsprings was
founded. Harrow purchased Los Angeles
Bedsprings to increase his holdings in equip-
ment and expand the existing Hollywood Bed
Frame Company product line.
Today, Irving’s son, chairman and CEO
Larry Harrow, and his grandson, company
president Jason Harrow, lead the company he
built. It enjoys a reputation as one of the most
respected businesses in the furniture, hospi-
tality and contract industries (e.g., dormito-
ries, government, etc.), and maintains a
commitment to quality, innovation and cus-
tomer service that is unwavering. Simply
stated, Larry and Jason Harrow are deeply
committed to doing well by doing good.
For starters, the Harrows work constantly
to make sure they’re producing the finest bed
frames they can make. All Hollywood bed

buy from you?’ ” Larry recalls. “And I always
responded, ‘Because our bed frames are
exceptional!’ We are constantly looking at our
products and saying, ‘If it’s good, it’s not good
enough, and when it’s outstanding, it needs to
be improved upon.’ ”
The Harrows are also dedicated to being
good stewards of the environment and went
green long before green was cool. For decades,
they have used high-carbon, recycled railroad
tracks gathered from around the world to
manufacture the angle steel that forms their
bed frames. Even the Pennsylvania mill that
makes the steel is environmentally friendly,

phy is just one of many reasons that Hollywood

styles and colors that support your look. If
you’re not sure where to start, Lloyd suggests
looking at decorating websites or magazines
for ideas, then seeing if a theme emerges.

It’s a
Great telly from across the pond
Doctor Who and Sherlock
ARGUABLY, TWO of the best TV series to
come out of the UK are Doctor Who and
Sherlock. Doctor Who first aired from 1963 to
1989, then returned in a new version in 2005.
It has become an international sensation.
Steven Moffat, lead writer and executive
producer, describes it this way: “It’s a story of
a man who can travel anywhere in time and
space in a box that’s bigger on the inside than
the out. He has adventures, and he fights
monsters.” But that may be too modest.
The show works on two levels: simple
stories for children, but with deeper layering
for adults to enjoy. It also has a neat little con-
trivance for changing lead actors when nec-
essary: The Doctor simply “regenerates.” The
Doctor has a regular earthling companion,
who also changes from time to time, but
without regeneration. He or she just moves
on and a new companion is found.
Moffat says he believes the show is “here
for good.”
“Obviously there will be times—not in
the near future, because it’s doing so well—
but maybe it drops off the air for a while,” he
adds. “But somebody will always bring it
back. And because it’s got all the right car-
pentry for immortality, you can switch the
leads, you can switch everything. I think
people always want stories of Doctor Who,
and every generation of kids will want their
Doctor, the one that was built for just them.”
As for Sherlock, Moffat, along with Mark
Gatiss, created the series. Old friends, they
were both working on Doctor Who and
often took the train together.
“We quickly realized we
couldn’t talk about Doctor

Who; otherwise, everyone would
start listening to us,” Moffat recalls. “So
we talked about our other great joint obses-
sion, which was Sherlock Holmes.”
Although they discussed the idea for years,
it didn’t come to fruition until Moffat’s wife, TV
producer Sue Vertue (who produces Sherlock), made
them sit in a room and develop the proposal. Sherlock
and Watson would now live in contemporary Great
Britain. The BBC quickly said yes.
When they cast the show, only one actor read for
Sherlock. Benedict Cumberbatch was not well known
to the public then at all, according to Moffat, yet “he
was very well known within the industry, a hugely
respected actor,” he says. “And a lot of people thought
he was going to be a star if he found the right vehicle.”
More actors auditioned for Watson, including
Matt Smith. He didn’t get that role but later
became the eleventh doctor on Doctor
Who. The role went to Martin Freeman,
who was also not as well known then as
he is now.
“But when we put Martin and Sherlock
Benedict together,” recalls Moffat,
“it was just so obvious that that was

the show—that was the show right
there in front of us.”
With the strong chemistry be-
tween the two leads, and the intel-
ligent, witty scripts by Moffat and
Gatiss—who also plays Mycroft,
Sherlock’s older brother—as well as
Steve Thompson, who wrote a few,

Agatha Christie’s Poirot
HERCULE POIROT, the odd little retired
Belgian police detective created by Agatha
Christie, has been portrayed by many actors,
including Peter Ustinov and Albert Finney.
But perhaps the most indelible portrayal
comes from classically trained actor David
Suchet, who played the sleuth on British tele-
vision from 1989 to 2013, covering 33 novels
and dozens of short stories.
“When I was offered the role, I looked at
it carefully,” says Suchet, by phone, from his

Blue Murder
BLUE MURDER follows Detective Chief
Inspector Janine Lewis, a single mother of
four and head of a team of detectives, as she
negotiates her home and work life. The
Connection spoke with Caroline Quentin,
who plays Lewis, by phone from London.
“What was wonderful about her was
that you met her kind of on a real high,
the day she gets her big promotion,” she
says. “And almost immediately she has a
massive low … her husband leaving her.”
Quentin adds, “It’s about seeing a
woman come to terms with having power in
her career and her working life, and yet feeling
quite disempowered in her private life. Then
looking to her colleagues to help her out and
realizing that they have their own stuff to deal
with, so they don’t always have time.”

Morse is a different kind of detective,
highly intelligent with high-class tastes, more
cerebral than physical. He attended Oxford
but never graduated, loves music (especially
opera), puzzles, beer and the mysteries he is
assigned to solve; not so much the attendant
blood and gore.
Shaun Evans, 34, plays the young Morse
and admits, “I wasn’t a fan. It wasn’t in my
sort of orbit.” He turned to the books for the
character, more than the original series. “If we
can take the character that he is in the books
and see what made him that way, we can sort
of play with that now in his late 20s, and
[that’s] an interesting thing to do.” C

True to his vision
Creator-writer Nic Pizzolatto
weaves an addictive mystery

WHEN TRUE DETECTIVE pre-
miered on HBO, critics lauded
the show for its riveting drama,
stellar acting (especially from
stars Matthew McConaughey and
Woody Harrelson) and breathtak-
ing direction by Cary Fukunaga.
To many, however, the writing
was the actual star.
Tim Goodman, in The Holly-
wood Reporter, said, “The writing Nic Pizzolatto
and the concept, by series creator
and novelist Nic Pizzolatto, undulates from
effectively brash soliloquies to penetratingly
nuanced moments carried by sparse prose.”
Pizzolatto wrote all eight episodes of the
premiere season. This in itself was an incredi-
ble achievement; that he was allowed to do so
with little television writing experience was
perhaps even more of a coup.
“Once you actually sell it, your day-to-day
performance is what determines your value,”
Pizzolatto tells The Connection by phone from
his home in Los Angeles. “And if, at any point,
I hadn’t been essential, I don’t think they
would have minded moving me out.”
But he was essential. The vision was his.
He knew his characters, he knew his premise
and he knew how to keep it going through the
entire season. Most television shows have a
staff of writers, but Pizzolatto saw no need.
“Coming from a novelist background, my
ambition was to make something very per-
sonal and, for better or worse, layer it with the
sort of singular vision that one finds in novels,”
he says. “When I got started writing it, I had to
work toward a deadline so that we could move
into preproduction before we had

these actors available, and I was so
deep into it so fast I couldn’t figure
out how somebody else could help
me.” Perhaps no help was needed
in the writing, but Pizzolatto
acknowledges that having star
power attached certainly helped
get the series made.
“If this strange vision didn’t
have Matthew McConaughey and
Woody Harrelson attached to it,”
he says, “I think it would probably be much
less palatable to the powers that be.”
Pizzolatto’s “strange vision” is, in a way, an
homage to the old True Detective magazine in
the sense that it’s an anthology and “has ele-
ments that hearken back to the old pulp detec-
tive stories, but updated and deconstructed as
far as character goes.” He adds, “I also like the
implications of the adjective ‘true,’ beyond its
historical use in this famous detective anthol-
ogy. True can also mean authentic, possessed
of great integrity, or a reality that might be a
fictional reality but carries more truth than
something reportorial.”
Season 1 follows two polar-opposite
Louisiana State Police detectives, Rust Cohle
(McConaughey) and Martin Hart (Harrelson),
and their 17-year roller-coaster relationship as
they track a serial killer. The show jumps back
and forth in time, the subject matter is dark—
despite some exquisite location shooting—
and the series unfolds slowly, picking up steam
as the story progresses. Cohle, in particular,
has several long monologues that, while beau-
tifully written, may leave some viewers

scratching their heads. (Those musings, as
well as the rest of the show, inspired intense
online debate about what it all means.)
“The hope is that it works on a visceral
level, too,” says Pizzolatto. “You don’t always
have to be able to follow the philosophical
implications of what’s going on.”
Indeed, Pizzolatto had to fight to keep his
vision intact, to make sure True Detective
“came out the way it was supposed to be and
didn’t end up some atmospheric version of
Law & Order.”
As for a second season of the show,
Pizzolatto says, “I’ve got two scripts and ... we’re
going to try to move ahead with casting within
the next couple months.”

worth watching more than once, check out
True Detective. There’s enough there to keep
you guessing over and over. C

Cruise lines create more varied
dining options

TWO DECADES AGO, dining aboard a
cruise ship was a straightforward affair:
Dinners were either early seating (served at
around 5:30 p.m.) or late seating (at around 8
p.m.). Tables were set, and you dined with the
same guests and enjoyed the same waitstaff
for the duration of your voyage.
Today, the dining landscape aboard
cruise ships differs vastly from the days of old.
Cruise ships can—and often do—feature doz-
ens of specialty restaurants, ranging in style
from Brazilian churrascaria (grilled meats) to
Japanese sashimi. Even the tried-and-true
hamburger has taken on a new twist. It’s
either gone gourmet, with burger recipes by
chef Guy Fieri, or stayed classic, like those
served with creamy milkshakes at Johnny
Rockets on Royal Caribbean.
With all the variety on ships today, you
can open your mind and your mouth to new
cuisines at some of the most innovative dining
venues at sea. Always wanted to dine at a tep-
panyaki restaurant, where the food is cooked
on an iron griddle? Prefer the formality of a
French-inspired dinner? Have a taste for tacos?
The choices are sure to please your palate.
Royal Caribbean is testing a completely
new style of dining aboard the forthcoming
Quantum of the Seas. Instead of main dining
CELEBRITY CRUISES
rooms, the ship will feature 18 different din-
ing venues, seven of which carry no sur-
charge. Four of the seven will be full service,
while the other three are being pitched as
casual eateries. Guests will use an onboard
reservation system to decide when, where
and with whom they’d like to dine.
Gone are the traditional early- or late-seat-
ing dinners and the soaring, multistory main
dining rooms found on the line’s other vessels.
Royal Caribbean’s new approach to din-
ing has a new name: Dynamic Dining. And
part of Dynamic Dining is choice, from
Michael’s Genuine Pub to Devinly Decadence
at Solarium Bistro. (It’s not a spelling mistake,
but rather a play on words: Devinly will be
headed up by Costco member Devin
Alexander, of The Biggest Loser cookbook
fame.) Wonderland promises to be an “elabo-
rate feast for the senses” run by chefs who
“twist their culinary kaleidoscopes to invent a
dreamscape of never-before-seen fare.” I’m not
entirely sure what that means, but it’s not hot
dogs: Wiener duty goes to the SeaPlex Dog
House, an honest-to-gosh food truck at sea
serving up gourmet hot dogs. Johnny Rockets
will also be aboard Quantum of the Seas.
Cruise lines have been pushing the
boundaries when it comes to dining. Celebrity
travel
connection

dining exclusively for AquaClass guests.
Cruises’ newest vessels feature Qsine, playful
foods ordered via iPads; choices include
Painter’s Mignon, Persian Kebob and Meatball
Trilogy. There’s also Tuscan Grille, an Italian
steakhouse with a nouveau twist, and Blu, an
exclusive restaurant for guests booked in
AquaClass accommodations. Blu serves up
healthful spa-inspired dishes that Celebrity
refers to as “clean cuisine.”
Princess Cruises has its Crown Grill, a
steakhouse experience, and Sabatini’s, which
places special emphasis on Italian and
Mediterranean dishes, with a focus on sea-
food. If you plan to eat dinner in the latter, you
may want to skip lunch; the portions are huge.
Crystal Cruises features Prego and Silk
Road on its two ships. Prego offers Italian cui-
sine coupled with a seasonally changing
menu that features signature dishes such as
scaloppine di vitello servite con capelli d’angelo
(veal scaloppine with angel-hair pasta) and
linguine con aragosta e zucchini (linguine with
lobster and zucchini). Meals are paired with
the same exquisite wines that are served at
chef Piero Selvaggio’s revered Valentino res-
taurants in Los Angeles and Las Vegas.
At Silk Road, world-renowned master
chef Nobuyuki “Nobu” Matsuhisa works his
magic. Well regarded for his innovative
approach to sushi, Matsuhisa blends classic
Japanese foods with distinct Peruvian and
European influences. While The Sushi Bar
offers an assortment of Matsuhisa’s inventive
sushi and sashimi, including salmon tartar,
tiradito Nobu-style and yellowtail sashimi
with jalapeño, Silk Road presents celebrated
dishes such as lobster with truffle-yuzu sauce,
grilled wagyu beef rib-eye with wasabi pepper
sauce, and his signature dessert, a bento box
filled with chocolate soufflé cake with shiso
syrup and sesame ice cream.
Cruise lines have come a long way since
the days of two-seating traditional dining,
and cruisers today have more choice than
ever about how they want to dine.
Sadly, one tradition may have been lost in
the quest for more varied cuisine: the Baked
Alaska parade once offered by many cruise
lines. However, cruisers have many new dining
options with which to console themselves. C

Recently, Costco Optical made the eyeglass-
wearing experience even more enjoyable for those
who wear progressive lenses with the introduction
of the new, state-of-the-art Kirkland Signature
high-definition (HD) progressive lenses.

What are HD lenses?
HD lenses, also called free-form lenses, are cre-
ated through a process called digital surfacing. With
digital surfacing, a computer program enables the
lens-cutting machine to more precisely cut the pre-
scription onto each lens as it spins in the generator.
“You do see a difference with our new Kirkland
Signature HD progressive lenses; there is clearer
vision when you transition from the distance-vision
to the near-vision area within the lens,” says Art
Salas, assistant vice president of Costco Optical.
The change in the technology itself isn’t neces-

hype,” he says. “The Kirkland Signature HD pro-

Significant investment
“The optical industry hasn’t had this type of
technology upgrade for progressive lenses in more
than 30 years,” says Frank Hoffman, Costco Optical
buyer. “Costco had to make a significant financial
investment to modernize the labs with new equip-
ment. To successfully execute a project of this mag-
nitude, without disrupting our workflow, was a
tremendous feat. We went into this project with a
goal to deliver the best digital technology in pro-
gressive lenses without raising our prices. I am
happy to report we did just that.”

Following the company’s mission, to continually
provide its members with quality goods and services
at the lowest possible prices, the Costco Optical team
took a reverse-engineering approach to implement-
ing HD. “We wanted to ensure that our members
would walk away with better vision and money left
in their pockets,” says Art. “There hasn’t been a price
increase to go along with all of this new technol-
ogy—just a better lens, and a lens that includes anti-
reflective treatment at no additional cost.”

Eye on perfection
Although HD lens technology has been used
in Europe and Asia for the past decade, it is rela-
tively new to the States. Costco is the first retailer
in the country to offer only digital progressive
lenses. (Single-vision lenses, lined bifocals, con-
tacts and sunglasses will remain a part of Costco’s
non-digital products.)
“We are now selling a high-end, top-quality lens
that represents a 50 percent or greater savings to our
members, that is also the latest technology for pro-
gressive lens wearers,” says Cary Carlson, assistant
general merchandising manager at Costco Optical.

PLANNING A LONG car trip this summer? Go
through this checklist from www.Samarins.
com, an automotive information site, before
hitting the road.
✔ Battery. Check the terminals. If you
see cracks, corrosion or damage, the battery
may need to be replaced.
✔ Engine oil. After running the engine
to warm it up, turn it off and remove the
engine oil dipstick, wipe it clean, reinsert it
and ensure the oil is near “full.” If it is low,
top it off. Or, if your car is due for one,
schedule an oil change before leaving.
✔ Transmission fluid. With the motor
running, remove, clean and reinsert the
transmission fluid dipstick. Look for the fluid
to be red or pink. If it is brown, change it,
especially if you’re towing a trailer.
✔ Antifreeze. Check the coolant in the
overflow tank. If low, refill it with the cool-
ant/water mix described in the car’s manual.

a résumé
YOU’VE POSTED JOB openings and the
résumés are flowing in. Do you know what
to look for? Jennifer McClure, president of
Unbridled Talent, an HR and recruiting
consulting firm, offers these tips in an arti-
cle on the Intuit Small Business Blog.
• Read between the lines for accom-
plishments and results as well as potential.
Job seekers aren’t professional résumé
writers. Look past small imperfections that
aren’t relevant to future success.
• A well-written, targeted objective
can start the résumé review process off on
a strong note. A generic or poorly written
statement, such as “team player looking for
a company where I can apply my skills to
help them grow,” opens the door to the
“No” pile.
• Check the applicant’s most recent
job title and employer to see if the person
has held a similar role or is on track for the
position you’re trying to fill. If you’re look-
ing for a chief financial officer, think “pos-
sibility” if you see titles like CFO or vice
president or director of finance. Think
“probably not” if you see accounts payable
clerk or cost accounting manager—more
so if the most recent position is not even
in the field.
• Look for how a person has created
positive change in his or her previous roles.
Dollar signs, percentages and the like are
ideal, more so than phrases such as “respon-
sible for,” “participated in” or “managed.”
• Warning signs include gaps in
employment, especially long ones. Life sit-
uations and depressed economic condi-
tions may have resulted in legitimate gaps,
but the applicant should answer the obvi-
ous questions upfront and fill in the gaps.

do better?’ ” he says.

Microsoft, where he started as an entry-
level lab coordinator and ended up as a
partner. After retiring in 2012 from a
20-year career there, Santino, who was
introduced to singing as a child by his

Barbara Young started baton twirling at the age of 5.
When she reached high school she got serious about
it, performing and competing through college.
When Young was in her 60s, her doctor sug-
gested she needed more physical activity. So she
picked up her baton again. “This is good exercise. It’s
good aerobic exercise, and it’s good for balance and
stretching,” she says.
Young next put together a group of like-minded
women calling themselves A+ Twirlers (www.aplus
twirlers.com). “Most of us are over 65. The oldest
one is 72. And I am 67,” she says.
The women get together a couple of times a
week, or more, to work on their routines. “We prac-
tice for a couple of hours or until we give out,
whichever comes first,” Young says, adding that they
attend competitions and events for twirlers around
the country.
She adds that, aside from the physical
exercise, twirling adds to mental agility as
well. “To do a routine, you have to be focused
on a lot of details. Like a dancer has to think
through all the moves, so does a twirler.”
Young notes, “We’re not trying to be teenagers.
We’re trying to be ourselves. It just happens that
we’re doing an activity that many teenagers enjoy
