RESUMO
The boundaries between the Prehistory and History are set by the
emergence of the act of writing. The Paleolithic period began with the first
creatures similar to the man who inhabited the East Africa about 3 million years
ago. Our ancestors lived as nomadic hunters and collectors of food, because
they had not know how to till the land. Over time, the nomadic life was replaced
by a sedentary life, since man discovered how to cultivate the land and
domesticate animals; then, this period was called Neolithic and was marked by
the beginning of the exploration of biological means to that meets their needs.
This period was also marked by the appearing of civilizations in the region
called “soaring fertile”, thanks to agriculture. In the field of agriculture, fruits and
grains have been taken to other regions, but would be Egypt the pioneer to
produce bread from wheat fermentation. There are many reports about the first
wine production site from the grape fermentation, but the beer was an
accidental discovery, resulting from not induced fermentation of a cereal which
was discovered shortly after the forthcoming of bread.

cresciam naturalmente. Acredita-se que foi a partir desse local que o vinho se
espalhou para o mundo (BONTEMPO, 2012; DUARTE, 2014).
No geral a uva uma vez espremida, seu sumo logo entrava em contato
com as leveduras Bortrytis cinerea que fazia o processo de fermentação,
presentes em estado selvagem na casca, gerando o álcool. Isso favoreceu
para que o homem logo descobrisse a bebida. Vinificações acidentais devem
ter sido comuns em todos os lugares onde a uva selvagem e povoamentos
humanos se encontraram (VALE; DELFINO; VALE; 2005).
Os egípcios não foram os primeiros a fazer vinho, mas certamente foram
os primeiros, a saber, como registrar os detalhes da vinificação em suas
pinturas que datam de 1.000 a 3.000 a.C. Como demonstrado na Figura 5, com
a prensa da uva, os egípcios iniciaram o comercio de vinho, mas foram os
fenícios1 de difundiram a prática por toda a região do mediterrâneo
(BONTEMPO, 2012; DUARTE, 2014).
