3-501.16 (A)(1) - POTENTIALLY HAZARDOUS FOOD, HOT HOLDING
This is a priority item
Observation: Chicken soup hot held in front soup warmer is at 125F, manager called for service, do not use until
time of repair. Spaghetti sauce and vegetable soup hot held in steam table in back are hot held at 125F, other
foods in steam table are above 135F. Keep foods at or below the level of the water for effective hot holding.
Foods were held below 135F for less than four hours, were reheated to 165F and divided to be hot held at 135F in
steam table.
Corrective Action(s): Maintain hot potentially hazardous foods at or above 135°F. Correct By: 04-May-2018 Acti
on Taken: Foods hot held between 135F and 140F.
Code citation: (A) Except during preparation, cooking, or cooling, or when time is used as the public health
control as specified under §3-501.19, and except as specified under ¶ (B) and in ¶ (C ) of this section,
POTENTIALLY HAZARDOUS FOOD (TIME/TEMPERATURE CONTROL FOR
SAFETY FOOD) shall be maintained:
      (1) At 57°C (135°F) or above, except that roasts cooked to a temperature and for a time specified in ¶
3-401.11(B) or reheated as specified in ¶ 3-403.11(E) may be held at a temperature of 54°C (130°F) or above; or
4-501.11 - GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION

Observation: Steam table in server station is not holding foods at or above 135F. Do not use until time of repair.
Corrective Action(s): Maintain equipment in good repair. Correct By: 04-May-2018 Action Taken: Steam table
is repaired, foods hot held between 135F and 140F.
Code citation: (A) EQUIPMENT shall be maintained in a state of repair and condition that meets the
requirements specified under Parts 4-1 and 4-2.
(B) EQUIPMENT components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight,
and adjusted in accordance with manufacturer's specifications.
(C) Cutting or piercing parts of can openers shall be kept sharp to minimize the creation of metal fragments that
can contaminate FOOD when the container is opened.
