Alicia’s Lentil Stew

Original Recipe Serves: 150 Ingredients

2 Gallons and 1 Quart Dried brown lentils Cooking Time

1 Cups olive oil
Cooking time: about 45 minutes
1.5 Gallon and 1 cup onion, diced

3 Cups Garlic, chopped 5 minutes

1 ½ Cups Ground cumin

1 cup + ½ Tbsp Ground coriander

2 Tbsp Red pepper flakes

1 cup + ½ Tbsp Dried oregano

1 Tbsp Sea salt

2 Tbsp Fresh ground black

minutes on medium heat with a lid.
5. Add the frozen peas and corn. If necessary add a little more water depending on the desired thickness of
the stew.
6. Continue cooking until the lentils are soft and tender to taste. Lentils take about 20 minutes to cook.
When the stew has finished cooking add the salt.
7. Make sure the stew reaches temperature of 165°F before allowing it to cool.
8. Cool down the stew in shallow pans or put the pot in an ice bath so the stew can cool from 140°F to
70°F within 2 hours and from 70°F to 41°F within 4 hours.
9. Keep refrigerated until service.
10. When reheating for service, make sure the stew reaches 165°F for 15 seconds stirring frequently before
serving.
11. Stew is safe to be stored up to 5 days stored at 41°F or lower.
Serving suggestions include: ½ cup of brown rice, 1 8in whole grain tortilla, ½ cup of barely, or a small baked
potato.
Garnish suggestions: Greek style non-fat yogurt, chopped fresh cilantro, lemon or lime juice, jalapeño, avocado,
cheese.
