“I had algorithms. I was writing
stuff down,” Jace said, referencing

video I liked and I memorized it.”
Jace admits he received some
sideways stares from people near
him on those planes.
Jace then introduced his new pet
project to his parents. His father,
John Christmann, picked him up at
the airport to find one Rubik’s cube
in his hand and another in his bag.
“He handed it to me and said,
‘You know how to do this?’ I can,
but it’s not my quest to see how fast
I can get it down to,” John said. “It
was purely a situation where he
was dead-set on having this down
before he got back on Monday, and
he fiddled with that Rubik’s cube
every time I saw him. He was sitting
in front of the TV, sit down at dinner,

Electric co-ops get local support for providing broadband

in favor of letting co-ops provide internet

Counties across the state are
signing resolutions in favor of
what one local supervisor calls
a “game changer” — allowing
electric cooperatives to provide
high-speed broadband internet.
Lowndes and Oktibbeha
counties approved resolutions
in support of the change, which
the Public Service Commission
is pushing. Brandon Presley,
commissioner for the PSC’s
northern district, said he hopes
the resolutions will help spur
the state Legislature to change
an old law that restricts rural
cooperatives to only providing
electricity.
“Electric cooperatives

Should the law change,
Presley said, cooperatives like

sociation could provide high-
speed broadband services to
rural areas.
Presley said the law change
would require no funding from
the state. He added that it would
allow cooperatives to decide if
they want to provide service,
rather than mandating it.
Still, Presley said he looks at
high-speed broadband internet
service as a crucial piece of life
in an increasingly connected
world.
“It’s gone from being a luxu-
ry to a necessity,” Presley said.
“There’s no way for rural people
to be able to participate in the
modern economy without be-
ing connected to the internet.
I believe every Mississippian
should have access to internet
service.”

Analysis: Pension plan outlook rosier with funding increase

pension system, projec-

lic Employees Retirement
System show its finances

— at least for now.
But that assessment
comes with a caveat. In-
vestment returns, eco-
nomic conditions or state
employee levels could
change over the next 30
years and changes in any
of those could change the
projected outcomes.
“The results, collec-
tively, are positive,” said
the system’s executive di-
rector, Ray Higgins said
last week after a presen-
tation to the board by ac-
tuaries. “PERS is stable,
but we’re not perfect.”
PERS is to improve
its current position —
where actuaries project
its $27.7 billion in assets
is 61.8 percent what’s
needed in the future to
pay off benefits employ-
ees and retirees have al-
ready earned. The board
wants to reach at least 80
percent funding by 2047.
The PERS board, with
projections showing it
wouldn’t make that goal,
voted in June to require
employers to pay 17.4
percent of a worker’s
salary to the system be-
ginning July 1, 2019, up
from 15.75 percent now.
That money will mostly
come from taxpayers,
since PERS’ beneficia-
ries are employees of
the state, public schools,
local governments, com-
munity colleges, univer-
sities and other agencies
such as hospitals. The
employees themselves
will keep contributing 9
percent of salary.
City and county gov-
ernments have already
set aside money to pay
their increases, because
their budget years run
through Sept. 30. Law-
makers need to add
about $75 million in the
coming legislative ses-
sion to cover increased
contributions for state
and education agencies.
Gov. Phil Bryant asked
for the money, and cur-
rent revenue projections
show it should be avail-
able. But top lawmakers
adopted a proposed bud-
get that basically says
they’ll decide later.

The Shanghai Composite

percent at midday. Bench-
marks in Thailand and
Taiwan also declined.
Markets in Europe,
Hong Kong, Australia and
South Korea were closed
for Christmas.
Wall Street indexes fell
more than 2 percent on
Monday after Trump said
on Twitter the Federal Re-
serve was the U.S. econ-
omy’s “only problem.”
Efforts by Treasury Sec-
retary Steven Mnuchin to
calm investor fears only
seemed to make matters
worse.
U.S. stocks are track
for their worst December
since 1931 during the
Great Depression.
Shanghai is down
almost 25 percent this
and other markets are on
track to end 2018 down

Markets have been
roiled by concerns about
a slowing global economy,
the U.S.-Chinese tariff

Trump’s Monday

by a president who wants

board members are nom-
inated by the president
but make decisions inde-
pendently of the White
House. The board’s chair-
man, Jerome Powell, was
nominated by Trump last
year.
“The only problem our
economy has is the Fed,”
the president said on
Twitter. “They don’t have
a feel for the Market, they
don’t understand neces-
sary Trade Wars or Strong
Dollars or even Democrat
Shutdowns over Borders.
The Fed is like a powerful
golfer who can’t score be-
cause he has no touch —
he can’t putt!”
The Standard & Poor’s
500 index slid 2.7 percent.
The benchmark index is
down 19.8 percent from
its peak on Sept. 20, close
to the 20 percent drop
that would officially mean
the end of the longest bull
market for stocks in mod-
ern history — a run of
nearly 10 years.
The Dow Jones Indus-
trial Average sank 2.9
percent while the Nasdaq
skidded 2.2 percent.
On Sunday, Mnuchin
made a round of calls to
the heads of the six larg-
est U.S. banks, but the
move only raised new con-
cerns about the economy.
Most economists
expect U.S. economic
growth to slow in 2019,
not slide into a full-blown
recession. But the presi-
dent has voiced his anger
over the Fed’s decision to
raise its key short-term
rate four times in 2018.
That is intended to pre-
vent the economy from
overheating.
Technology stocks,
health care companies
and banks took some of
the heaviest losses in
Monday’s sell-off. Wells
Fargo slid 3.4 percent,
Microsoft 4.2 percent and
Johnson & Johnson 4.1
percent.

harvestmoon: Try as I might, I can’t
see how a roundabout at Main and
Second Street is anything but a recipe
for disaster. You have a blind curve, a
steep hill and a busy pedestrian cross-
ing. That intersection would be better
served by a blinking yellow caution
light directed at motorists approaching
downtown from the bypass. That’s not
to say roundabouts aren’t a good idea.
Have you considered Bluecutt and Sev-
enth Street, Military Road and Bluecutt
or Military and 18th Avenue North?
Lightmyfire: Mr. Stafford’s com-
ment, “...all you have to do is make
sure no one is coming from your left” is
laughable. Online studies tell that fatal
crashes decrease with roundabouts,
but wrecks actually can increase.
There is also an increase in single-car
accidents caused by a number of
obvious reasons. Let’s consider the
planned location. Yes, there’s speed. If
you are a frequent driver on and off the
45 bypass to Downtown Columbus, you
have to admit it’s hard not to imagine
your Honda is not a Corvette. A visitor
to Columbus should pay close attention
to local drivers here. There’s quite a bit
of fast lane changes, merging, turn-
ing. Often you are driving alongside a
frantic 18-wheeler. Add to this a “small
roundabout” nestled shortly after the
tight curve entering Downtown and
hidden at the bottom of the hill leav-
ing Downtown. YEE HAW! Certainly
something can help with safety in this
area, but a roundabout at Main Street
and Second South makes no sense.

now. There’s a long, long history of
small towns and rural communities
where one of the only forms of family
entertainment was dirt track figure
eight racing, or demolition derbys.
On a Friday and Saturday night, or a
Sunday afternoon, going to the track
or the field, some places had seats
and bleachers, some all the seating
you had was what you brought with
you, folding chairs, bean bags, sitting
on the hood or roof of you car or in
the bed of your truck.
At the demos, crazy folks would
buy a stripped down car for $10 -$25
bucks, with all the glass removed and
just enough gas to get you through
the derby. Station wagons were best
with all that metal to get through be-
fore somebody could get to the back
axle to take you out. I knew demo
drivers who wouldn’t drive figure
eight. That was almost a guarantee
for getting T-boned. Between today’s
environmental lunacy and the snow-
flake culture, either one is hard to
find.
It’ll be interesting to see the city
install some T-bone theater in the
city. Maybe merchants with a street
side view of the metal mayhem could
put out chairs and tables and make
some good side money.

city council are not without blame. As
long as we choose political cronies and

the mayor and council have done a good
job appointing school board trustees.

Quake from Mount Etna volcano

Quake was part of a swarm of some 1,000 tremors

ROME — A quake triggered by
Mount Etna’s eruption jolted east-
ern Sicily before dawn Wednesday,
injuring at least 10 people, damag-
ing churches and houses on the
volcano’s slopes and prompting
panicked villagers to flee their
homes.
Italy’s Civil Protection officials
said the quake, which struck at
3:19 a.m., was part of a swarm of
some 1,000 tremors, most of them
barely perceptible, linked to Etna’s
volcanic eruption this week.
The quake struck north of Cata-
nia, the largest city in the eastern
part of the Mediterranean island,
but no damage or injuries were re-
ported there. Italy’s national seis-
mology institute said the quake
had a magnitude of 4.8 on the
open-ended Richter scale and 4.9
on the moment magnitude scale,
which is related to the amount the
ground slips.
The temblor occurred at a rel-
atively shallow depth, 1 kilometer
(0.6 mile) under the mountain’s
surface.
The most seriously injured by
the quake was a 70-year-old man
who fractured ribs and was under-
going surgery for chest injuries. A
71-year-old patient was being kept
in hospital for observation, while
others were treated and released,
the Italian news agency ANSA re-
ported. Additionally, some 18 oth-
er people went to local hospitals
suffering from panic attacks or
shock, news reports said.
Heavily monitored by geolo-
gists, Etna, the largest of Italy’s
three active volcanoes, has been
particularly active since July.
In recent days, Etna’s latest
eruption has been shooting vol-
canic ash, heavy smoke and lava
stones into the air, coating roads
and homes nearby with ash. A
new fracture has opened near Et-
na’s southeast crater and lava has
been flowing down an uninhabited
slope.
The quake Wednesday opened
up cracks in homes in several
towns, including some abandoned
structures, toppled a Madonna
statue in a church in the town of
Santa Venerina and broke up a
stretch of highway, forcing it to
close for inspection, Rai state ra-
dio said.
In the town of Piano d’Api, fire-
fighters removed cracked stucco
from the bell tower of the damaged
Santa Maria della Misericordia
church. Italy’s culture ministry
said the quake damage to church-
es was being tallied by experts.
Some stone walls along farm
fields and local roads crumbled.
One 80-year-old man was safe-
ly extracted from the rubble of
his home, the Italian news agency
ANSA said.
A woman told state radio that a
heavy armoire in her home had top-
pled over, trapping her sister, who
was then safely pulled out by her
father. The ceiling collapsed in an-
other house, and in others homes
parts of exterior walls crumbled.
“Etna remains a dangerous vol-
cano, and this country of ours is
unfortunately fragile,” government
undersecretary Vito Crimi said as
he reported 10 people injured.
The quake was also felt in the
upscale Sicilian resort town of
Taormina and in other towns in
eastern Sicily.
The Civil Protection agency
said temporary shelters were be-
ing set up in gyms or municipal
buildings for people whose hous-
es were damaged or who were
too frightened to return to their
homes.

Japan to resume
commercial whaling,
but not in Antarctic
TOKYO — Japan an-
nounced Wednesday that
it is leaving the Interna-
tional Whaling Commis-
sion to resume commer-
cial hunts for the animals
for the first time in 30
years, but said it would
no longer go to the Ant-
arctic for its much-criti-
cized annual killings.
Japan switched to what
it calls research whaling
after the IWC imposed a
moratorium on commer-
cial whaling in the 1980s,
and now says stocks have
recovered enough to re-
sume commercial hunts.

commercial whaling in
July “in line with Japan’s
basic policy of promoting

Congo delays Sunday’s
election for months in
Ebola zone
KINSHASA, Congo —

layed election set for Sun-
day will be postponed for
months in certain com-
munities where a dead-
ly Ebola virus outbreak
has infected hundreds
of people, the electoral
commission announced
Wednesday. Some in the
opposition called it a ploy
to hurt their chances at
the polls, with more than
1 million voters affected.
The election in and
around Beni and Butem-
bo in North Kivu prov-
ince, and Yumbi in Mai-
Ndombe province, will
be in March instead, the
commission’s statement
said. That’s long after
Congo’s “definitive” pres-
idential election results
are set to be announced
on Jan. 15, with the inau-
guration three days later.
Congo’s election has
been delayed for more
than two years, leading
to sometimes deadly pro-
tests. Opposition parties
have said they will not
accept further delays of
the vote to choose a suc-
cessor to longtime Pres-
ident Joseph Kabila. The
election already had been
pushed from Dec. 23 to
Sunday after a fire in the
capital, Kinshasa, de-
stroyed voting materials.
“This is completely in-
acceptable,” presidential
candidate Martin Fayulu,
the leader of an opposi-
tion coalition, told The
Associated Press after
the latest delay. “We cam-
paigned in those territo-
ries, life has not stopped.
... We cannot erase 1.2
million voters just like
that.”
Fayulu and seven oth-
er opposition candidates
on Tuesday accused the
electoral commission of
being “determined to or-
ganize chaotic elections.”
The commission’s presi-
dent, Corneille Nangaa,
on Monday said the elec-
tion would take place on
Sunday unless “there is
a war and nobody can go
out and vote.”
Parts of eastern Con-
go, where the Ebola out-
break has become the
second deadliest in histo-
ry, face the daily threat of
deadly attacks from rebel
groups. The insecurity
has hurt efforts to con-
tain the Ebola outbreak,
which since being de-
clared on Aug. 1 has seen
583 cases of the virus,
including more than 300
confirmed deaths.
The electoral commis-
sion cited insecurity for

Final goodbye: Roll call of some who died in 2018

In a year filled with heightened
political vitriol, two deaths brought
the nation together to remember
men who represented a seemingly
bygone era of U.S. politics.
George H.W. Bush was a presi-
dent, vice president, congressman,
CIA director and Navy pilot during
World War II, where he flew 58 mis-
sions and was shot down over the
Pacific. As a politician, he had his
fair share of critics and was voted
out of office after one term as pres-
ident. But the Republican reinvent-
ed himself in the years after his
time in the White House, becoming
a fundraiser for disaster relief and
forming an unlikely friendship with
the man who ousted him from of-
fice, former President Bill Clinton.
John McCain was a political gi-
ant in his own right. He served as a
senator for more than 30 years, ran
years as a prisoner of war after be-
ing shot down during the Vietnam
War. In captivity, McCain endured
torture and even turned down a
chance to be released early, deny-
ing the North Vietnamese military
a propaganda victory.
Bush died in in November at age
94, just months after the death of
his wife, former first lady Barbara
Bush, who died in April. McCain
died in August at the age of 81 after
a battle with brain cancer.
Their deaths prompted an out-
pouring of public mourning from
across the political spectrum that
was at odds with a recent political
climate that has been defined by
intense partisanship, coarse insults
and divisive rhetoric.
The year also saw the death of
one of the world’s best-known sing-
ers, Aretha Franklin. The Queen
of Soul’s death in August prompt-
ed a grand send-off during a week
of mourning in her hometown of
Detroit, including a funeral that
featured a who’s who list of en-
tertainers, former presidents and
prominent preachers.
Others from the world of enter-
tainment who died in 2018 included
the two men who created one of the
most popular and enduring super-
heroes of the modern day. Marvel
Comics icon Stan Lee, who died in
November, and artist Steve Ditko,
who died in June, gave the world the
web-swinging Spider-Man along
with a host of other super-pow-
ered heroes. Author Tom Wolfe,
playwright Neil Simon, actor Burt
Reynolds and screenwriter William
Goldman also died.
And one of the world’s most in-
fluential scientists died in 2018.
Though his body was paralyzed by
disease, theoretical physicist Ste-
phen Hawking explained the mys-
teries of space, time and black holes
to a generation of enthusiasts.

also said Jace and John
have the ability to chan-
nel hyperfocus into a
task when they so desire.
That tendency has
shown itself with pet
projects in the past, such
as when Jace determined
he wanted to learn how
to play the guitar while
on a family trip. So he
did, and then got bored
with it.
Experiences like that
one helped the Christ-
mann family discover
Jace has a broad intel-
lect. The family recently
had him do an aptitude
test to help him lock into
a career path. They dis-
covered he performs well
in rhythm-based activ-
ities such as music and
golf — which translates
well to kicking — yet
he’s chosen petroleum
engineering as a major.
Thus, it’s no surprise
a man with a wide-rang-
ing brain would want
talents to test that range.
“I think it boils down
to, ‘Give me a talent,’”
John said. “He does a
lot of things — he can

By the time Jace
returned to Starkville, he
could solve the Rubik’s
Cube in six minutes. Now
he says he’s down to two-
and-a-half. Jace Christ-
mann wanted a different
talent to flaunt, and in the
span of a week, he accom-
plished that task.
Still, the Christmann
parents are left with an
unanswered question:
Why the Rubik’s cube?
“The first thing that
popped up on Google,”
Jace said. “That was the
sole reason.”
Jace drew a blank
when he tried to tie the
skill of solving a Rubik’s
cube to that of kicking.
But he didn’t take on the
challenge as an accesso-
ry to football. He took it
on to prove he could do it.
In the MSU game

unique facts about play-
ers, it now reads, “spent

clear, AFC muddled

Barring ties in Week 17 — and there are some
wild scenarios should certain games end in draws
Sunday — the road to the playoffs is quite straight
in the NFC. The path to a first-round bye in the AFC
has a bunch of curves in it.
Already in are NFC division winners Dallas
(East), New Orleans (South), Chicago (North),
and the Los Angeles Rams (West). AFC divisions
clinched belong to New England in the East and,
well, nobody else. But there are clear leaders.
Seattle owns an NFC wild card, and the LA
Chargers have one in the AFC, though they can still
win the AFC West.
“You either believe in something or you don’t,”
says coach Pete Carroll, whose 9-6 Seahawks made
the postseason in what was considered a rebuilding
year. “I think just staying the course and knowing
we’re on to something. Believing in the history. We
know what we’re capable of doing. We’ve shown it
over a lot of years. You’re always adapting, but it’s
staying what you’re true to. I think that’s what is
happening. We look like a team that we have seen
before, and that’s powerful.”
Most powerful so far has been New Orleans,
with the league’s best record at 13-2, and a dynamic
offense led by Drew Brees. The Saints have home-
field advantage throughout the conference playoffs.
The Rams (12-3) get the other opening-round
bye if they beat San Francisco on Sunday. If they
lose and the Bears win at Minnesota, Chicago (11-
4) earns the week off and Los Angeles drops to the
third seed.
A Bears win also could keep the Vikings (8-6-1)
out of the postseason, providing defending cham-
pion Philadelphia (8-7) wins at Washington. Only
the Vikings or Eagles can get the second NFC wild
card.
In the AFC, seeding is more muddled. Any of
four teams could be the top or second seed.
The simplest route is if Kansas City (11-4) and
New England (10-5), currently the top two in the
conference, both win Sunday. But if the Chiefs
lose at home to Oakland and the Chargers (11-
4) win at Denver, Los Angeles moves into the top
spot.
Houston (10-5) also could wind up No. 1 in the
AFC with losses by the Chiefs, Patriots against the
Jets, and Chargers. New England, the only unbeat-
en team at home this year, would get the first seed
with a victory and losses by the Chiefs and Char-
gers. Houston doesn’t even own a division title. If
the Texans fall at home to Jacksonville, the winner
of the Colts at Titans game in Tennessee takes the
AFC South, and the Texans become a wild card,
joining either the Chiefs or Chargers.

himself in his durability, being available night
after night, game after grueling game.
That’s why the Lakers star is so mad he got
hurt.
The Los Angeles Lakers lost LeBron in the
third quarter to a strained left groin then went
out and beat the two-time defending champions
without him Tuesday night, getting King James’
17 points, 13 rebounds, and five assists before
the injury in a 127-101 rout of the Golden State
Warriors.
“I take a lot of pride in it,” James said of always
playing. “That’s why it (angered me) not to be
able to go back into the game. It’s more than any-
thing being available to my teammates, being
available to my coaching staff. That’s something
I take more personal than anything. Hopefully
it’s not a long thing.”
James grabbed at his left groin area with 7
minutes, 51 seconds left in the third after slip-
ping under the Warriors’ basket while trying for
a loose ball. He tried to stretch it out, awkwardly
walked toward the Lakers bench trying to loosen
up before leaving on his own though gingerly out
the tunnel for the locker room.

The holidays mark a lull

in the college basketball
schedule. Players scatter
to be with family or head
back to school, teams get
their last extended break
before the conference sea-
son starts.
The result is a light
schedule in The Associated
Press Top 25.
No ranked teams play
each other this week, but
one game stands out: No. 16
Kentucky at Louisville on
Saturday.
Both teams have had
their share of ups and
downs so far, but the Blue-
grass battle usually brings
out the best in both teams,
along with a bit of animosi-
ty.
“If I had to put it in one
word, it’s nasty,” Louisville
freshman forward Jordan
Nwora said after the Cardi-
nals beat Robert Morris on
Friday.
The Kentucky-Louisville
rivalry is one of the best
in American sports. The
schools are about an hour
apart and the game is for
a year’s worth of bragging
rights as the best team in
the Bluegrass state.
Kentucky blew out Lou-
isville last season and has
won nine of 11 in the series
since 2010.
The Wildcats were the
preseason No. 2 this season,
but got off to a rough start,
routed 118-84 by Duke.
Kentucky seemed to find
a rhythm after that, only to
suffer an 84-83 loss to Se-
ton Hall at Madison Square
Garden on Dec. 8.
Since then, the Wildcats
(9-2) got their groove back.
Kentucky rolled over
Utah by 27, then beat No. 9
North Carolina 80-72 for its
first marquee victory of the
season.
“We’re not the same
team we were two weeks
ago,” Kentucky coach John
Calipari said. “It’s not even

Columbus’ Stokes will compete in Street Stock World Championship

Stock racers from at least 10
states are preparing for the
third-annual Durrence Layne
Performance Parts Street Stock
World Championship Race this
Friday night and Saturday night
at Cochran Motor Speedway.
The $5,000-to-win event will
feature Johnny Stokes, of Co-
lumbus. Stokes, the reigning
Durrence Layne Performance
Parts Street Stock World Cham-
pion, won last year’s race.
Winning the World Cham-
pionship trophy was special
enough, but an added touch to
the victory for the driver and
co-owner/promoter of Magno-
lia Motor Speedway in Colum-
bus, who is known as “Dr. Dirt,”
is that it came on his 64th birth-
day.
“I’ve won a lot of dirt late
model races and champion-
ships in my career, but winning
this race last year was differ-
ent because I’ve never been a
World Champion,” Stokes said.
“That’s what makes this race so
special for any driver because
World Champion goes on your
résumé. It was also special to
win it on my 64th birthday, and
it would be even more special to
win it for the second time at age
65!!”
Justin McRee, of Woodstock,
Alabama, finished second in
last year’s race. Like Stokes,
J-Mac has made a name for
himself as a dirt late model rac-
er, and recently as a car builder.

ven as some of us
are still celebrating
Christmas, a new year
is fast approaching. New
Year’s Eve has always been
a high holiday in our family,
something far too momen-
tous to sleep through. It
always seemed important to
be at the house I grew up in
Columbus when midnight
struck. With Mother and
Daddy, and as many of the
rest of us as could gather,
we’d sip eggnog or spar-
kling juice from Mother’s
pretty silver punch cups,
munch on goodies and toast
each other after a robust
countdown. Yes, we’d wear
silly hats and blow annoy-
ing noisemakers, and sing
along to “Auld Lang Syne.”
Photos of the ritual
through the years show a
progression of children and
adults grinning, making
faces, each growing up —
or a little grayer — as time
passed. I’d give anything
to go back to one of those
midnights, but Mother
and Daddy are no longer
here. The celebration
has, most years, moved to
my house in the country,
where great-nieces and
great-nephews can shoot a
few fireworks and we have
two countdowns — a 10
p.m. one for the youngsters
who are still working on
late-night stamina, and
one for the night owls at
midnight, when we all get
that new chance. A chance
to “start again,” refresh,
renew, revamp. When we
wonder what’s in store for
each of us in the brand new
year. There’s something
rather glorious in it, I’ve
always felt.
Yes, we still wear silly
hats and play “Auld Lang
Syne.” And every person
there clinks glasses with,
and hugs, every other
loved one there. It seems a
good way to launch a new
chance.
Of course, food is always
part of the celebration.

aan is an Indian flatbread
with a chewy texture and
a puffed, slightly charred
crust. Brushing the baking sheet
with olive oil and then baking the
naan on the lowest rack in a 400
F oven gives it a crispy texture —
just like pizza crust. This recipe
can be doubled. Follow this recipe
with your kids.
PIZZA IN A FLASH
Servings: 1-2
Start to finish: 40 minutes (Active 10
minutes)
1 teaspoon extra-virgin olive oil
1 (8-inch) naan bread
2 tablespoons pesto
1/3 cup shredded mozzarella cheese
12 cherry tomatoes, cut in half

handful of your favorite toppings — in
whatever combination you like — over the
mozzarella. Some topping ideas: sliced
bell peppers, pepperoni, sliced scallions,
chopped olives, or dollops of goat cheese
ricotta cheese.
n Adjust oven rack to lowest position and
heat oven to 400 F. Use pastry brush to
brush oil into 9-inch circle in center of
rimmed baking sheet. Place naan on top
of oil on baking sheet.
n Use back of small spoon to spread
pesto over naan, leaving 1/2-inch border
around edge. Sprinkle cheese over pesto,
then sprinkle tomatoes over cheese.
Place baking sheet in oven and bake until
naan is golden brown around edges, 8 to
10 minutes.
n Use oven mitts to remove baking sheet
from oven. Place baking sheet on cooling
rack and let cool for 5 minutes.
n Use spatula to carefully transfer naan
to cutting board (baking sheet will be
hot). Use chef’s knife or pizza wheel to
cut naan into wedges. Serve.

immediately cover with sprinkles. Pipe
and onion is translucent, about 10 min-
utes. Season with garlic, curry powder,
turmeric. Add salt and pepper to taste.
n Preheat oven to 375 F. Grease two
12-cup muffin tins with nonstick cooking
spray.
n Line each of the muffin cups with one
wonton wrapper. Add 1 tablespoon of
meat filling to each cup. Top with a small
sprinkle of cheese.
n Repeat process by placing another
wonton wrapper atop the cheese in each
cup. Divide remaining meat mixture
among the 24 cups. Divide remaining
cheese among the cups.
n Bake 8 to 11 minutes until cheese is
melted and wonton wrappers are crisp.
Serve immediately, garnishing with
chopped cilantro and/or fruit salsa.

and even a little kick of
hot sauce. For the mixing
method, we used the food
processor to help distrib-
ute the spinach evenly
throughout the dip.
This method also
made it easy to add other
flavors to the dip for our
creative variations. The
garlic must be minced
or pressed before going
into the food processor or
the dip will contain large
chunks of garlic. Serve
with crudites.
HERBED SPINACH DIP
Servings: 4-6
Start to finish: 1 hour
10 ounces frozen chopped
spinach, thawed and squeezed
dry
1/2 red bell pepper, chopped
fine
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup fresh parsley leaves
3 scallions, sliced thin
1 tablespoon fresh dill or 1
teaspoon dried
1 garlic clove, minced
1/4 teaspoon hot sauce
