POACHING RED SNIPER HERB AND GRILL KING PRAWN WITH PAN-FRIED

WESTERN TOMATOES TAGLIATELLE ACCOMPANY BUTTERED BLANCH GREEN


BEAN SERVE WITH CREAM MILD CURRY SAUCE

INGREDIENTS: POACHING RED SNIPER HERB AND GRILL KING PRAWN


POACHING RED SNIPER
220gm Red sniper
2tbsp Lemon juice (marinated)
1tbsp Butter
1lit Water
2inch Young ginger
2no Lemon grass
1no Onions
5clove Garlic
2no Celery
To tease Salt

METHOD:
1. Marinated red sniper with lemon juice. Meanwhile boil water in pot put in all the
ingredients such as young ginger, lemon grass, onions, garlic, celery, butter and salt.

GRILL KING PRAWN


2no King prawn
20gm Clarify butter
A pinch Dill
2tbsp Lemon juice (marinated)
To taste Black pepper
To taste Salt

METHOD:
1. Marinated king prawn with clarify butter, dill, lemon juice, black pepper and salt then grill
until cooked.
INGREDIENTS: PAN-FRIED WESTERN TOMATOES TAGLIATELLE
180gm Dry tomatoes tagliatelle
40gm Unsalted butter (creamed)
1 clove Garlic (chop)
A handful Fresh button mushroom (sliced)
15ml Whipping cream
1 Medium Red chilli (seeded and chopped)
5 tbsp Fresh parsley, chopped

A pinch Parmesan cheese


To taste Salt
To taste Black pepper

METHOD:
1. Firstly cook the tagliatelle and drain.
2. Heat a frying pan then add the chopped garlic and fresh button mushroom to the butter
and sauté it well.
3. After that pour in whipping cream and add in the tagliatelle pasta and sprinkle of red
chilli, fry over medium heat for about 1 minute.
4. Finally add on a pinch of parmesan cheese, salt and black pepper to tease; stir-fry gently
for about 2 minutes, then add the fresh chopped parsley and serve it
INGREDIENTS: BUTTERED BLANCH GREEN BEAN
4nos Green bean (blanching)
1lit Water
15ogm Butter (for buttered blanch)
3clove Garlic (chop)
To tease Salt (optional)

METHOD:
1. Cut green bean accordingly. Then blanch it all.
2. After that boil water add in butter and salt let it boil. Finally put in vegetables that had
been blanch for a final process
INGREDIENTS: CREAM MILD CURRY SAUCE
2tbsp Cooking oil
3nos Shallots
1nos Onion (bland)
3clove Garlic
1nos Bay leaves
4no Star anise
1no Cinnamon sticks
1tbsp Clove
3tbsp Fish curry powder
15gm Cumin seed powder
15gm Fennel seed powder
30gm Paprika
200gm Whipping cream
30ml Lemon juice
To tease Salt
To tease White pepper
To tease Sugar

METHOD:
1. Heat the cooking oil then adds in all the bland ingredients, bay leave, star anise,
cinnamon sticks and clove stir it until fragment.
2. Then add in fish curry powder, cumin seed powder and fennel seed powder, paprika and
pour in a little bit of water stir it for a couple of minutes until all are mix together.
3. Finally pour in a whipping, lemon juice, stir it for a while before putting the seasoning
such as salt, sugar and white pepper to tease, stir it well.
