Briefly describe the cookie production process.

The Baking Company uses a batch processing system to produce the dough used to make

its cookies. The text states that “batch processing is used when a moderate value of goods

or services is desired, and it can handle a moderate variety of products and services”

(Stevenson, 2009, p. 239). After receiving an order from its distributors, production is

scheduled. The first step in production is the delivery of an order list to the mixing person

for that shift. The mixing person determines which ingredients are needed to produce the

cookies ordered, enters those ingredients into the computer, which determines quantities

needed. The computer sends the results to silos containing each ingredient, and the silos

automatically release the correct amount to the mixing machines. After mixing, batter is

cut into cookie shape and then deposited on a conveyor belt that will take it through the

oven for cooking. After cooking, cookies are cooled, and then workers box each cookie

by hand, discarding any that do not meet standards. Lastly, a machine wraps, seals and

labels boxes, which are then ready to be delivered to distributors and sold in convenience

stores and supermarkets.

What are two ways that the company has increased productivity? Why did increasing

the length of the ovens result in a faster output rate?

The Baking Company has made changes that have increased productivity rates. One

change the company made came with the discovery that non-filled cookies could be cut

on a diagonal (instead of being round), and if this was done, each cookie required less

space, allowing the company to fit more cookies into one batch. On-demand production

also helps the company’s productivity rate, as cookies are only produced after an order is

placed. Batch processing contributes to productivity, as does using two ovens versus only

one. The decision to increase the length of each oven by twenty-five (25) feet allows the

company to bake more cookies at one time.

Do you think that the company is making the right decision by not automating the

packing of cookies? Explain your reasoning. What obligation does a company have to

its employees in a situation such as this? What obligation does it have to the

community? Is the size of the town a factor? Would it make a difference if the

company was located in a large city? Is the size of the company a factor? What if it was

a much larger company?

In my opinion, the company is making the right decision by not automating the packing

of cookies. By continuing to use local workers to pack the cookies by hand, the company

is showing its commitment to the community. As the daughter of a small business owner,

I have grown up with an understanding of the importance small businesses play in

today’s economy. By not automating cookie packing, The Baking Company is showing

that it values its workers and the work they do. This action most likely sits very well with

the community and will foster the company’s standing in the community, which will

more than likely create continued loyalty to the company, and which may also prove

useful in the future if the company decides it wants to expand and/or needs anything from

the people of the community. Although it is common perception that small communities

are closer than larger cities, I do not think this concept would be completely obliterated if

the company was located in a large city. If the company itself was much larger, it may

play a role in the decision not to automate cookie packing, especially if the company was

not doing well because of economic hardships.

What factors can cause the company to carry minimal amounts of certain inventories?

What benefits result from this policy?

The biggest factor that causes the company to only carry small amounts of certain

inventories is the fact that no additives or preservatives, which results in the ingredients

and the cookies having a relatively short shelf life. Because of this, product is ordered

based on current orders, i.e. if large orders are placed, more product is ordered, and vice

versa. Benefits from this policy include the fact that the company only needs small silos

for each ingredient, and the fact that there is very little waste.

As a consumer, what things do you consider in judging the quality of cookies you buy

in a supermarket?

When I am in a supermarket and deciding which cookies to buy for myself and my

family, I take many factors into consideration. Price is usually at the top of the list,

followed by the taste preferences of myself and my husband and kids, availability of the

product, and ingredients used to make the product.

What advantages and what limitations stem from the company’s not using

preservatives in cookies?

As with any production decisions, the company’s decision against using preservatives in

its cookies comes with advantages and limitations. Advantages include the end product

being soft and not too sweet, and also the fact that the cookie is seen by some consumers

as a healthier and/or more natural alternative to cookies made with a bunch of

preservatives. Of course, the decision against using preservatives does not come without

limitations, of which the biggest is the shorter shelf life of the cookies.

Briefly describe the company’s strategy.

The Baking Company has found its niche in the cookie market, as soft cookies are the

only product produced by the company. Target audience includes consumers looking for

a preservative-free, soft, great-tasting product, and the company does a great job

delivering the product as demanded. Because cookies are made to order using a batch

processing system, the company has continued to see high productivity levels while

keeping a tight control on inventory levels. Continuing to employ local workers to pack

the cookies by hand allows the company to be seen as morally concerned about the well-

being of the community and its citizens. In short, the strategy of the company is to

produce cookies as desired by consumers in a way that makes financial sense for both the

company and the consumer.
