About: India has an urgent need to usher in a 'Second Green Revolution' with emphasis on valueaddition of agricultural commodities through food processing. The ambitious Vision 2015 plan of the Government of India envisions doubling food processing levels from its current level of 10 per cent to 20 per cent, and increasing value addition from 26 per cent to 35 per cent. It will also bid to see India's share of global trade rise from 1.5 per cent to 3 per cent over the period. This workshop will focus on the important role of advanced food processing technologies like extrusion and also simple but elegant innovations developed by Indian research institutions that would aid businesses, ranging from small and medium scale enterprises to large companies, to participate in this national effort. Speakers from Kansas State University, and Indian research institutions and processing industry will provide their perspectives. Who can Attend: The seminar will be particularly useful for scientists, teachers and professors from academia (from disciplines such as food science, nutrition, human ecology, home science and engineering), and also small and medium and large-scale businesses that have interest in production of value-added food and feed products using extrusion and other technologies. Industry participants can include food technologists, animal nutrition specialists, pet food producers, aquaculture, poultry and cattle feed producers and farmers, quality assurance managers, quality controllers, process engineers, packaging and machinery suppliers, retailers, food regulators, food distributors, food and feed ingredients manufacturer/ suppliers.

Day 1: Thursday, April 7, 2011 08:00 - 08:30 am: Registration and Breakfast 08:30 - 09:00 am: Opening Remarks Chief Guests: Dr. Manjit Singh Kang, Vice Chancellor, Punjab Agricultural University Dr. R. T. Patil, Director, Central Institute for Post Harvest Engineering & Technology 09:00 - 12:00 pm: Overview of Extrusion Technology (Dr. Sajid Alavi, K-State) - A brief overview of extrusion technology and its basic principles, its evolution over the years and its applications in food, pet food, animal and aquatic feed and non-food industrial applications. Status of Food Processing in India (Dr. R. T. Patil, CIPHET) - The Indian food processing industry can be divided into a huge unregulated unorganized sector and a nascent but fast growing organized sector. This lecture will provide an overview of the same, and opportunities and challenges related to training, research and development, quality assurance and food safety, reduction of post harvest losses, market information systems, value addition, strengthening grades and standards, facilitation of agro-business investment, low cost innovations and advanced processing technologies, byproduct utilization and bio-fuels from bio-mass. Extrusion Processing in India (Dr. Baljit Singh Jawanda, PAU) - As compared to North America and Europe, extrusion technology for food, pet food and feed products has started to gain widespread use in India only lately. This lecture will provide an overview on the present status of extrusion in India, and also latest research and development trends. 12:00 - 1:00 pm: Luncheon

01:00 - 3:00 pm: Extrusion Hardware (Dr. Sajid Alavi, K-State) - Hardware aspects of the extrusion system with special focus on latest developments in pre-conditioning, raw material delivery systems, screw design, dies and cutting systems will be discussed. The lecture will also include a discussion on various types of cooking extruders including conventional single screw and twin screw extruders and some other designs as well. Development of Extruded Health Foods from Legumes and Millets (Dr. S. Balasubramanian, CIPHET) - Ongoing research will described for development of ready-to-eat snack foods from combinations of selected cereals (rice, wheat, maize, sorghum, ragi) with different dehulled legumes (black gram, green gram, lentil and peas) using low cost collet type food extruder. Engineering and economic feasibility aspects will also be covered.

03:00 - 03:30 pm: Tea 03:00 - 5:00 pm: Rice and Dal Analogs and Other Novelty Products (Dr. Suresh Itapu, Wenger Manufacturing) Quick cooking products, such as rice and dal analogs, are made by a special low shear and high moisture extrusion forming process. These products promise to play a very important role in meeting the growing demand of food security in India, through school feeding programs and low-cost commercial applications as well. This lecture will discuss the latest development in the processing of these product, quality aspects of the finished product, and tailoring them to the Indian market. Instrumentation for Quality Control and Analysis (Mr. Naresh Kumar, Scientific and Digital Systems) - This topic will introduce some useful lab instruments that are available for testing raw ingredients as well as finished products. Main focus will be on the phase transition analyzer, which is a relatively new but highly useful instrument based on principles of polymer science and capillary rheometry. The PTA is being widely adapted by industry and research institutions to study the softening and flow behavior under pressure of various raw materials used in extrusion, analyze final product characteristics, and provide solutions to processing and product development issues. Case studies in utilization of the PTA will be presented. 05:00 -06:30 pm: Lab Demo at CIPHET (Dr. S. Balasubramanian, CIPHET) - Demonstration of phase transition analyzer (PTA) will be given. Also production of expanded snacks will be demonstrated on a collet extruder, a technology widely used in industry for making products such as CheetosTM, KurkureTM, etc. Day 2: Friday, April 8, 2011 08:00 - 08:30 am: Breakfast 08:30 - 01:00 pm: Expanded Snacks and Breakfast Cereal (Mr. Prabhdial Singh, GlaxoSmithKline) - The breakfast cereal and savory snacks industry is fast emerging in India. Many kinds of breakfast cereal and snacks are cooked, formed and expanded using extruders. This lecture will provide an understanding of how these important food products are processed by extrusion, and where the Indian market is headed. Extrusion Processing of Fruit and Vegetable Based Ingredients (Dr. Sajid Alavi, K-State) Research is ongoing in industry and academia, both in India and internationally, for incorporation of healthy ingredients in ready-to-eat snack and breakfast cereal products. Fruit and vegetable based dehydrated powders and pomaces are a group of such ingredients that have great potential and also pose unique challenges for inclusion in extruded foods. The lecture will cover ongoing research and development efforts in this area. Food Processing Research Trends in India (Dr. Kuldip Singh Minhas, PAU) - An overview of the cutting edge research in food processing being conducted by scientists in the College of Agriculture and the Department of Food Science and Technology at PAU.

12:00 - 1:00 pm: Luncheon 01:00 - 5:00 pm: Non-Food Value-Added Applications of Extrusion (Dr. Harinder Singh Oberoi, CIPHET) - The unique, thermo-mechanical processing capability of extrusion systems allows them to be used as continuous reactors for various non-food applications, including renewable fuel ethanol from cellulosic biomass. An overview of developments in this area and research trands and needs specific to India will be discussed. Partnerships Between Research Institutions and Food Processing Industry (Dr. Narpinder Singh, Guru Nanak Dev University, Amritsar) - Coordination and cooperation between the food processing industry and Indian universities for addressing R&D challenges needs to be strengthened. Some research institutions are pioneers in this area. An overview will be provided of the challenges involved in developing meaningful partnerships and how to overcome them, and noteworthy examples will be shared. International Partnerships for Addressing Food Security in India (TBA) - Indian institutions need to team up with international counterparts to address critical issues such as food security, population increase and expected food supply, and agriculture in global environment. This presentation will describe unique partnerships developed between Indian and U.S. universities and international aid and development agencies, for achieving this goal. Lab Demo at PAU Department of Food Sciences and Technology (Dr. Baljit Singh Jawanda, PAU) - Production of expanded breakfast cereal will be demonstrated on a lab-scale twin screw extruder.
