EXECUTIVE SUMMARY
Bakery Queens (malunggay product) is a start-up business retail establishment in BASC Business Center located at Pinaod, San Ildefonso, Bulacan. Bakery Queens expect to catch the interest of a regular loyal customer base with its broad variety of bread product. The Bakery Queens planned to build a strong market position in town.

RATIONALE Most people tend to eat just to relieve their hunger without giving much thought as to whether they are getting the necessary nutrients needed for good health. This is especially true for children who are not very fond of eating vegetables and other healthy foods. These problems can easily be addressed because the solution can easily be obtained. Malunggay bread is enough commodities packed with nutrients that may solve the problems in nourishment commonly experienced in most parts of the country. Moringa Oleifera, commonly referred to simply as Moringa (Tamil Murungai), (Mulakkaya in Telugu), (Malunggay in Tagalog) is the most widely cultivated variety of genus Moringa, of the family Moringaceae. It is an exceptionally nutritious vegetable tree with a variety of potential uses. The leaves are highly nutritious, being a significant source of betacarotene, Vitamin C, protein, iron, & potassium. They are cooked and used fresh like spinach. It can also be dried and crushed into a powder, and used in soups and sauces. The leaves can also be used to cleanse wounds and ulcers, help alleviate scurvy, asthma, ear ache, and headaches. Lactating mothers are advised to eat malunggay leaves to produce more milk due to its high calcium content.

The only question now is, how are we going to make people increase their intake of malunggay bread? The study primarily aimed to develop an malunggay bread with nutritional benefit further enhanced by malunggay leaves that will make their intake more appealing even to children. Considering that even children will eat bread, there will be less effort in making them eat malunggay leaves. Furthermore, this study could lead to a very good source of livelihood.

POLICIES AND PROCEDURES There are certain workplace conduct rules and regulations that should be followed no matter the political climate or the area in which the work site located. While federal laws cover many of the acceptable conduct activities allowed in the work place, most conflicts could be avoided by following basic common sense. The management believes that the success of operation will depend on the employees performance and discipline.

HOURS OF WORK All employees should work seven days a week in the work of hours would be 12 hours a day and a total of 96 hours a week. All employees are entitled to enjoy 1 hour break-time 30 minutes for lunch and 30 minutes for snack time without any deduction in payment of salary.

B. TECHNICAL ASPECT Pandesal Ingredients: 1 cup skim milk (110-115 deg. F) 5 tablespoons unsalted butter (do not use spreads) 1 egg, lightly beaten 1 teaspoon salt 1/2 cup sugar 4 cups bread flour (4 cups weigh 18 oz) 3 teaspoons bread machine yeast 1/2 cup breadcrumbs 3 tbsps. blended malunggay leaves

Pandesal Procedures: 1. Microwave milk on High for 30 seconds; Warm uncracked egg to room temperature by placing in hot water for 60 seconds, then beat lightly; Melt or soften butter to room temperature. 2. Select Dough cycle; add all ingredients, EXCEPT for breadcrumbs, in the order your machine requires. 3. First Rise: When the machine is done kneading, the dough will be sticky. Place dough in a bowl greased with Pam spray and spray top of dough with more Pam; Cover and let rise in a warm place for 45 minutes, or until doubled in volume (To test: gently poke dough with two fingers; if it leaves an impression without springing back, it is doubled). 4. Second Rise: Gently deflate dough with your fist, then use a plastic spatula to divide dough into 24 ovals and roll them in the breadcrumbs. 5. Line up ovals in a 913 ungreased cake pan with the rolls touching; that way, the pan de sal use each other for height support and not spread out like ciabatta; Let rise a second time for 30 minutes; Meanwhile, preheat oven to 375 deg. F. 6. Bake for 15 minutes, or until tops are golden brown.

Cup Cake Recipe Ingredients: 31/2 cupcake flour 1/2 tbsp. baking powder 1/2 tbsp. salt 1/2 bar butter 3 eggs

1 can condensed milk 3 tbsps. blended malunggay leaves grated cheese (optional) Procedure Sift flour and baking powder and add salt together. Set aside. Cream melted butter and sugar. After the butter and sugar are mixed together , add the eggs. Mix condensed milk and blended malunggay leaves. Add the previously sifter flour, baking powder and salt. Pour mixture into paper cups until three-fourths full. Bake for 20-30 minutes at 370 F or until golden brown. : Spanish Bread Ingredients (3-lb dough): 1 cup milk 3/4 cup water 1 egg 4 egg yolks 3 tbsps. blended malunggay leaves 1/2 cup (1 stick) butter 2 tsp salt 6-3/4 cups bread flour (plus some more; see note above) 3/4 cup sugar 2 tsp BM yeast (2-lb dough) - [This yielded 9 ensaymadas and 12 pcs spanish bread] 2/3 c milk 1/2 c water 1 egg 2 egg yolks 6 tbsp butter 1-1/2 tsp salt 4-1/2 c bread flour 1/2 c sugar 1-1/2 tsp BM yeast For the filling of butter-sugar mixture: 1 stick of softened butter (1/2 lb) + 1 cup white sugar.

Procedure: Prepare the dough. Divide into portions the size of a golf ball. Mix sugar (your choice: brown or white. I prefer white.) and softened butter/margarine (I can't specify the proportions because I approximated. I just kept adding sugar and mixing until I got a consistency that was gritty yet spreadable.) 1. Flatten each piece with a rolling pin as shown. Go ahead, don't be afraid...Start from the middle outward up and down, especially adding pressure at the ends so they stick to the table. That way, they don't roll back or spring up. 2. Spread a good layer of sugar-butter mixture. Avoid the ends so you can seal properly. 3. Roll tightly. Make sure end seals. 4. Coat with breadcrumbs and add the malunggay leaves. 5. Place on baking pans with seam side down. Cover with plastic. Let rise for 15-30 minutes (depending on what yeast you used and the humidity/temperature of environment). Bake at 350 deg F for 12-15 minutes or until golden brown. (If you have too much for one-time serving and want to reheat these in the future, bake only for about 10 minutes initially, so when you reheat they won't look burnt. I reheat 2-3 pieces for merienda in an oven toaster at 350 deg F for about 3 minutes or so.). Transfer to cooling wire rack right away.

C. MARKETING ELEMENTS/CONSUMERS/CLIENT ANALYSIS C.1 PRODUCT Our business is all about bake products, the main product is PANDESAL which is made in malunggay leaves. Our aim is to persuade client that bread made for malunggay leaves is very much nutritious. And they can buy that in very affordable price. The prospective customer can buy in our store or we can deliver it in their house. The product packaging is depends upon the size of the bread and every packaging must tie a ribbon at the end.
