Hansas restaurant was established in 1986 and I am very proud to say that it is probably the only restaurant in Leeds still in the same hands after all these years. The success in realizing my dream is mainly down to my loyal and supportive customers who have helped make Hansas a well recognised landmark of the Leeds restaurant scene. With your continued support and encouragement I was able to publish Hansas Indian Vegetarian Cookbook six years ago and encouraged by your response, I am now embarking upon my writing and publishing a second book. Not bad for a non-writer. Hansas Heritage Tours of India- Encouraged by constant requests from my customers, I am also branching out into organizing escorted tours to India, especially to my home state of Gujarat, to give you the opportunity to experience the lifestyle, the culture and the cuisine at first hand. Im truly excited about these latest ventures and ask for your support once again. Over the years I have had many accolades bestowed upon my style of cooking by media critics and the likes. The highlight being voted, Curry Chef of the Year in 2008, for the third time and being recognized for, Outstnding Contribution to the Leeds Restaurant Industry, by the Leeds Restaurants Association, no less. As time goes by I see my once youthful and enthusiastic student diners become parents in their own right and it is really pleasing to see them now continuing to visit our restaurant with their own children. A whole new generation of children are hopefully going to grow up without having any hangups about not enjoying a vegetarian meal. Vegetarianism has now become a well accepted part of the British diet. What Hindus have been practicing from time immemorial is now being recognized and accepted as virtues of good and healthy living, without having to sacrifice on taste. The dishes you are about to sample have been slightly modified to suit most palates, whilst still maintaining the distinct Gujarati taste. I sincerely hope that youll like what youll be eating and theres no better compliment then seeing you here once again.

Gujarat is on the west coast of India from where my parents originated. According to the legend, many of the great events in Lord Krishnas life took place along the south coast of Gujarat. Historically the city of Lothal, in central Gujarat, dates way back to the Harappan or Indus Valley Civilisation some 4500 years ago. In the 16th and the 17th century, it was a constant battlefield between the Marathas and the Mughal conquerors. In the 18th century, the very first British commercial outpost was set up in Surat, a major trading

centre of Gujarat, before the days of The Raj. The island ports of Daman and Diu survived as the Portuguese enclaves right until 1961. Mahatma Gandhi was born in Porbandar on the south coast of Gujarat. The capital city of Gujarat is Gandhi Nagar and Ahmedabad being the second and most populous city. The entrepreneurial Gujaratis traveled the world and were among the very first Indians to immigrate and travel in large numbers to every corner of the world, from East and South Africa, to the West Indies and the whole of the East Indies, taking with them their Hindu traditions and their vegetarian style of cooking.

About the Menu


The state of Gujarat, an area about the same size as England, is on the western coast of India. As with the rest of India, it is predominantly a Hindu state. Hindus are forbidden to kill any living creature, especially for food, so vegetarianism has been a way of life from time immemorial. Over thousands of years vegetarian cookery has been developed into a delicate and precise art. This menu represents a very small selection of a vast and rich culinary heritage. Our menu consists of Starters (Sharuaat), our own specialities, a section on vegetable curries (Lilotri) and Beans or Pulse curries (Kathor) and of course the sweets (Mistaan). It has been our experience that if you each ordered a starter or our unique specialties to begin with, followed by a main course each, then you will have enough room to left for our mouthwatering and not-to-be-missed desserts to finish off with. The emphasis at Hansas is on sharing and experimenting, so feel free to share your dishes and enjoy the meal together. There are no set rules on how to eat but I eat with my fingers.

Our best selling starter-Tropical colocasia leaves pasted with a curried batter, rolled, steamed and then stir-fried with mustard and sesame seeds.

Samosas (Ve)
Two pieces of Hansas very own mouth-watering crispy mixed vegetable samosas, served with a tomato and mint sauce and salad.

Fafda Ghathiya (Ve)


Giant savoury gram flour wafers, served with fried chillies, coriander chutney, kadhi chutney and sambharo (stir-fried salad)

Makai-no-Chevdo (Ve) Succulent sweet-corn gently stir-fried with mustard seeds garnished with chopped onions and crispy Sev.

Spice Bomb (Ve) Wickedly spicy Hansas masala mixture sandwiched between two potato pieces then deep fried in a batter, waiting to explode in your mouth. Try it if you dare!

Hansas Sizzler
Paneer and mixed vegetables cooked in aromatic spices on a sizzler, served with a salad and yoghurt chutney for two to share. Maybe ordered as a main course with batura or puris.

Pau Bhaji (Ve)


A Gujarati adaptation of a western snack. Spicy mixed vegetables served on toasted mini baps with garnishing of coriander, chopped onions and tomatoes.

Chilli Paneer
Paneer cubes ( Indian Cheese) marinated with a hot spicy chilli sauce and served on a bed of lettuce.
