On pages later in the plans you'll see details on making boxed eaves, which are admittedly overkill if you were to also notch the siding. Both seal the roof so doing both may be redundant. As an option you could either skip the boxed eave, or skip the notched exterior sheathing shown on this page. If you were to skip these notches you could simply cut the plywood off at the top of the wall.
