IMPORTANCE OF VEGETABLE
After independence one of the major tasks of Govt. of India was to
develop a viable and productive agriculture economy leading to self
sufficiency in our food requirements. The total food grain production
during 1994-95 has reached 186 million tonnes as against 50 million
tonnes (adjusted) in 1949-50 and the country is now even in a position
to export some of its agricultural surplus.
India is the second largest producer of vegetables in world next to
China and the number of vegetables grown in the country is quite
large. A minimum supply of 200gm. Vegetable of present is required.
The demand is likely go upto 83 million tonnes . Which is adequate to
supply 120gm. Vegetable per capita/day.suffer from mineral deficiency
disease and those who take them do not know use them best.
The use of vegetable like colocasia, pumpkin and beans are edible only
after being cooked others like onion turnip radish are eaten either
cooked or raw while vegetable like watermelon , muskmelon etc.a

VEGETABLE GROWING
The importance of vegetable in human nutrition is well
known. We get many specific chemical substances needed
by our body for growth reproduction and for maintenance
of health. Vegetable contribute vitally to the general well
being due to the following reasons.
Minerals atleast 10 mineral elements are required for
proper growth and development of the human body.
1. calcium- it is required for healthy bones and for
resistance to infections. In its absence children suffer from
rickets, pigeon chest and retarded growth.
2. Iron- vegetable are richer in iron than fruits.
3. Phosphorus- it is required for cell multiplication of both
bones and soft tisues.
Vitamin A It is fat soluble and essential for growth and reproduction. Its
deficiency in the diet causes.
Vitamin B It is also known as thiamine. The deficiency of vitamin B
complex causes are as follows :
a. Thiamine (B1) causes beriberi; loss of appetite.
b. Riboflavin (B2) cracks at the corners of the mouth; raw red cracked
lips, glossy tongue, ulcers in the oral cavity.
c. Nicotinic Acid sore tongue (Scarlet colored); Pellagra showing
changes in hands, feet, legs and neck mental changes in severe
conditions.
d. Pyridoxin (B6) ulceration of oral cavity; associated with anaemia
also.

5. Supply of Carbohydrates vegetable such as potatoes and sweet


potatoes, peas and dried seeds of bean are significant as energy food.
6. Vegetables to offset Protein Human body tissues are alkaline in
nature and It is essential that for good health proper alkaline reserve
is maintained in the human body.
7. Vegetables as source of roughage roughage aids in digestion
and prevent constipation.
8. Vegetable milk vegetable plants can yield milk.
Per acre yield of vegetables is very high- The use of vegetables has
received remarkable large adoption during the past few decades.

Vegetables are Important Source of farm Income Vegetables are


sold at higher rate than cereals and grains.

Aesthetic Value of Vegetables - Those who grow vegetables can very


well tell the joy and pleasure from the sowing to harvesting of vegetables.
